Thanksgiving Leftover Wontons with Cranberry Salsa

the turkey part is not bad....the sauce is the key. It sounds odd and comes out awesome. I made a couple minor changes...I wanted more filling and less fried stuff so I made mine as eggrolls instead of wontons. In the salsa I tossed the whole (de ribbed/de seeded) jalepeno in and I did not drain the lemon juice off of the cranberries...I heated em up and they absorbed all of it as my quick plumper upper method.Added: these were such a hit the family wanted them again....but I was out of cranberries and only had dried cherries on hand/tried using them. Dried cherries worked well too!

Asparagus Parmesan

simple but delicious though I did make one change to make them healthier: I steamed my veggies first the just tossed them with 1 TB of butter and olive oil. Tastes just as good/much less fat. PS: I also did this with green beans when I did not have asparagus and it works well with GBs too

Cream of Asparagus and Mushroom Soup

I used 2 potatoes since I only had 2 left in the fridge though that won't change the flavor much. I did find it a tad bland for me and ended up adding 2 cloves of crushed garlic and an extra 1/4 tsp of black pepper. I started out with 1/4 tsp of salt and pepper (didn't need more salt between the chicken broth and bacon already having plenty).

Corned Beef Hash Cakes

the common complaint with them holding together was true: these were too soft to turn. when I make regular potato pancakes from mashed taters I make mine with an egg and 2 TB of flour mixed into the taters to get them to hold together....so treated this the same way....add a little flour and 1 beaten egg to the mix. Personally I also added 1/8 tsp garlic for added flavor...so I liked the basic idea of the hasbbrown CAKE and then doctored it up a little more.

Green Bean and Mushroom Medley

Very good flavor but way too much salt....three forms of it. I eliminated the plain salt and it was plenty salty.a 5 without the third salt. On the butter front: although it tasted good as is...there is a lot of butter on the veggies. I think next time I make it I will cut down on the butter or make it with half olive oil to make them a bit more healthy.

Bacon and Roquefort Stuffed Burgers

very good though I mix the blue cheese and bacon throughout the buger and not stuff it.... I have had bad luck in the past with stuffed burgers: biting into a burger with melted cheese in the middle (WHEN I was able to seal it properly and not have the cheese leak out in the first place...though blue cheese not being firmer would have less of that problem) I got a burned mouth or tongue hitting a center of hot melted cheese. I have had blue cheese and bacon burgers before but the thyme was a different twist on it. aHubby liked the burgers. My daughter did not care for the thyme as much (gave it "eh OK") rating. What she objected to was the crunchy bacon bits in her burger....just didn't like the crunchy bits with the soft burger. I have another bacon blue cheese burger recipe that they both loved....so I will keep the other one since it has appeal for all here.

Strawberry Tiramisu for Two

we love tiramisu here and had great expectations for it. As noted, the amount of strawberries on the ing list don't mesh with amound used in the body of the instructions...but that is a minor thing. In the end...I just didn't like the strawberries with the coffee flavor together.

Watercress, Melon and Almond Salad

I like lime vinegarette, but I didn't like this one....tried to figure out why. It is too tart for the fruit. I want enough lime to make it "bright" but not actually "tart" and this one was "tart". I looked at my other lime vinegarette dressing recipe to see what was different. My other one has 1 TB of honey in it..so I added 1 TB on honey and tasted it. Much better. I will just keep my previous lime dressing though.

Cheesesteak Egg Rolls

I did not fry them and used chicken cheesesteaks.....just plunked the mix on a toasted roll....the family scarfed em down and was looking for seconds. Chicken cheesesteak is kinda bland....cooking the onion up with it is just what it needed. Instead of dipping in the ketchup I just put the ketchup on the sandwich. Big hit here.

Spaghetti Carbonara II

changes to suit my taste: I used half the onion and twice the bacon.I had the dryness issue that the other posters had, but having read the other reveiws...adding a little pasta water helped. And like the other posters I also found that this amount of sauce was right for half the amount of spaghetti. When all said and done it was "pretty good" but still missing a little something to put it over the top. I tried adding a little oregano. THEN it was perfect! Also like the other posters....I found I liked the sauce better when the egg was mixed with the cheese first. I also added a coupl TB for cream to it. That way the sauce comes out creamy instead of like scrambled eggs. My family still ate the first scrambled egg version happily....but I like the texture of the sauce better the second way.

Roasted Garlic Tzatziki

very good. I liked the mint in it...you don;t taste it much after it has been sitting for a day or so and the flavors meld/just has a slightly fresh edge to the bite from the yogurt. Only comment was that I think it does need a little more roasted garlic. I could barely taste it....but that is a better problem to have/can always add more. The last tzatki recipe I tried was overpowering on the (fresh) garlic.

Ultimate Irish Cream Chocolate Mousse

5 with changes. I gave it a 4 because the changes were noticeable. Increased Irish cream from 1tb to 4. Added 2 Tb of sugar to the whipped cream. Without changes is a bit to bitter and cant taste the Irish cream much. I incorporated all the whipped cream into the mouses instead of half of it. I incorporated it all with a whisk beater on my kitchenaid mixer...had no problem with incorporating the eggs etc and it did not come out eggy. I am not sure if I will makeit again though just due to the salmonella risk using uncooked eggs. OTOH the family loooved it....I served it topped with fresh strawberries. This says it makes 4 servings. It is so rich though that I really got 8 out of it. 4 is a large serving.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

pretty much the same as previous comments: having done quite a few bacon wrapped chicken things in the past....if you use raw bacon around the chicken it takes so long for the bacon to crisp up that the chicken is then overdone. Partially cook the bacon first. And I also do better with just putting the chicken in the pan and laying the bacon on top...that way you don't have crispy bacon on top and soggy bacon on the bottom. And like the other posters....I liked it better sweating the garlic and shallot in a little olive oil first for a less sharp flavor. If you look at the photo of the dish....the bacon definitely does not look cooked through. The cheese: i used the gorgonzola for hubby and I as we like it and used goat cheese for my daughter as she likes that but not blue cheese.*a note about leftovers: the chicken breasts I used were big and we had leftovers. I chopped it up (bacon bits and all) tossed with a little mayo and made chicken salad out of em. This makes REALLY GOOD chicken salad....it is even better than the hot version......
