Pear Butter

I'm not a huge nutmeg fan so tweaked to my taste , used 1/4 tsp cinnamon instead and only 1/8 nutmeg.mine only took 10 min more than directions to cook down / some folks said it took a lot more.... But then I was using very ripe pears. I did not bother to peel the pears, used and apple corer to whip through em and put in the blender before sieve,

Chef John's White Gazpacho

The flavor was great. I used Greek yougurt lacking the creme. I'm not sure what purpose the bread serves only to get strained out... Will make again and try without the bread next time.

Asian Noodle Bowl

I did make a couple subsitutions based on what I had in the fridge,but that is the beauty of stir fry sort of stuff. I used chicken instead of beef, sugar snap peas for the broccoli and added mushrooms because I had some in the fridge that needed to be used up. The only flavor changer was to also add 1 tb of dark sesame oil. I just love the taste of seasame in Asian food. I did use 2 tb siracha sauce since I like spicy stuff.

Pumpernickel Rye Bread

My only tweak was instead of using water plus instant coffee I just used brewed coffee in place of the water. A couple other pumpernickel recipes I tried were too heavy on the molasses.

Pork Apple Burgers

I used half the onion/found it to be a bit much. In spite of that with the shredded apple/onion/egg they were a wet mix. Too wet to grill and not fall through the grate. I ended up adding some bread crumbs to hold it together. Still a bit wet/did not want to add more bread so I partially pan fried them and finished them on the grill so they would "set up".

Vegetable Tom Yum Soup

I liked it but needed to tweak it a tad to get it to my taste....was a bit too much chili and lime for me....lime was a tad too sour and I know it is Thai and usually spicy....but I did like mine toned down a tad...ended up likeing it to my taste using 2 TB chili paste and 6 TB lime...so 2/3 the amount called for.

Creamy Rice Pudding

very good with minor changes. I added a pinch of cinnamon and made sure the egg was beatin in with the last 1/2 c of milk at the end so it didn't cook into eggy lumps when it hit the heat. I left out the rasins for personal reasons....my daughter and I like them but my husband just dislikes rasins. I used Jasmine rice for a delicate flavor

Restaurant Style Beef and Broccoli

Only change i made was to add a little fresh ginger and for the meat i used the tenderloin tips i already had in the freezer. Oh i did add some extra veggies...carrots peppers and green onion....but that wont change the flavor much. For the poster that complained the meat came out tough.....you probably started with a tough piece of meat.

Traditional Style Vegan Shepherd's Pie

This came out really well...it gets 4stars because of minor changes. In my regular beef shephards pie the recipe calls for 1/2 c of beef gravy on the meat mix. Since this is the veggie version i thickened 1/2 c of veggie broth with flour for veggie gravy. The potato mix on top...seemed awfully high in fat content so i cut in half the mayo milk and oil. It came out just fine. My daughter has been bugging me lately that we need to eat healthier. So....i made this version and she was horrfied that i messed with the traditional shep pie that she likes. She was prepared to hate it.....and went back for seconds.

Corn Tortillas

super easy.Only change was to add 1/2 tsp of salt. I used my Fry Daddy/came out fine. I just cut each tortilla in 1/8s to fry up chip sized pieces. I went looking for a homemade corn recipe as I had everything to make nachos and found out my chips were stale. I probably won't be allowed to go back to using bagged chips for nachos around here anymore....not having a tortilla press I just used 2 sheets of waxed paper and a rolling pin.

Corn Dog Casserole

I have been slowly trying to get rid of a bunch of hotdogs we got for a cookout that got rained out. I am not a huge hotdog fan to start with...so this is probably the best that can be hoped for given I am not a hd lover to start with. It was pretty good. Hubby liked it. Probably wouldn't make it again on purpose....but it was a not bad way to move along those leftover hotdogs. kids would probably really like it. The flavor was good though it seemed it could use a bit more moisture/was a tad dry. I think I really would make this again with real beef or chicken in it instead though.

Caramelized French Toast

My problem was with the carmel. When i melted the sugar then added the water it turned into a hard ball. It did dissolve again but by then the sugar was burned. I tried again tried again on the sauce but this time I dissolved the sugar in the water first and then put it in the pan....that worked much better...
