Green Chili and Cheese Chicken

I tried this again, using a cheddar / pepperjack leftover mix (mostly cheddar) and used home made green chile salsa. Minus the packaged seasoning. A very versatile dish. I sauteed the chicken breast in a little garlic and olive oil, poured the salsa ontop until cooked, then topped it with cheese at the end to allow enough time for it to melt.

Yummy Veggie Omelet

Nice and easy to prepare. I had some leftover orange bell pepper that I needed to use, so I chopped that up and threw it in as well. I used Pepper Jack cheese as that is my favorite, but, any cheese will do for sure! I used a non-stick skillet to cook the veggies and omelet, so no need for those extra calorie laden tablespoons of butter!

Pico de Gallo Chicken Quesadillas

I used smaller tortillas, easier to flip! --- also had some leftover orange bell pepper so added that to the mix. Used shredded chicken (leftover as well) and pepper jack cheese. I also cheated and bought some store pre-made (fresh) pico de gallo salsa. THAT could have used a little less jalapeno!

Orange Nut Bread

Italian Cheese Stuffed Pork Chops

I started with a center cut that was about 2 inches thick, and after making the slit in it, it opened like a book, so, I thought that would be a good idea to keep the stuffing in. So I stuffed it from the top down, then baked it (skipping the pan frying). Throw some veggies into the same baking tray, and one dish clean up on the cooking side! Oh, and I added a handful of dried cranberries to the stuffing!

Easy to assemble, easy clean up, nice flavor. I didn't have any coriander on hand, so had to skip that, and used Sargento Monterey Jack cheese slices that needed to be used, other than that, followed the recipe, almost a first!

Banana Loaf

I used 1/2 c. brown sugar, less butter, maybe 1/4 cup (I never measure exactly) and wheat flour. Also added some raisins. Didn't have a loaf pan, so I used a round flan pan instead, end result Banana cake look!

Mmmm Mango Salsa

Very yummy! And a nice mix of flavors. I gently sauteed everything to use as a warm sauce to serve over Mahi Mahi. You could use cod, tilapia, salmon, or even chicken!

Buffalo Jack Chicken

I didn't have any yellow bell peppers, so I sub'd a couple of sliced jalapeno chiles instead (take the seeds out unless you like it spicy!) I also pounded down the breasts and rolled some roasted red bell peppers inside.

Very good. I made "muffins" out of them. Used less sugar (approx. 2/3 cup) and all wheat flour. Couldn't find any applesauce at the store, so I used 1/2 cup unsweetened apple juice instead.

Miguelina's Poblanos and Cheese

I also broil the peppers using a small toaster oven. Try Pepper Jack cheese, makes for a nice flavor! I also choose to bake rather than fry. Also try sauteing some onions, fresh tomatoes (chile serranos if you like HOT) with a little water and chicken caldo (broth). Pour this ontop of the poblanos while they are baking in the oven, or add the poblanos to the mixture in the pan, cover and allow the cheese to begin to melt! Add freshly chopped cilantro right before serving! YUMMY!
