Green Hot Sauce (Salsa Verde)

Great salsa! For a different spin on it, try oven broiling the tomatillos, peppers, onion and garlic until slightly charred. Then puree. I usually add some chopped fresh cilantro and a couple squeezes of lime juice too!

Green Chili and Cheese Chicken

I tried this again, using a cheddar / pepperjack leftover mix (mostly cheddar) and used home made green chile salsa. Minus the packaged seasoning. A very versatile dish. I sauteed the chicken breast in a little garlic and olive oil, poured the salsa ontop until cooked, then topped it with cheese at the end to allow enough time for it to melt.

Lite Italian Salad Dressing

I left out the corn oil and sugar. I always refrigerate it. Just take it out about 1/2 hr. before serving and it'll pour again.

Grilled Halibut

I used an air cooker instead of grilling --- always too afraid they will fall apart. In lieu of the individual spices, I used Costco's salt free blend of spices.

Bill's Seasoned Ketchup

Try to find a ketchup without the high fructose corn syrup. Hunt's has one. I don't think Heinz has caught up with reality yet. If you use the green Tabasco sauce, it comes pretty close to the Heinz Hot and Spicy.

Slow-Cooker Cacciatore-Style Pork

I used chicken instead of pork, served over vegetable spaghetti. I think the Classico Tomato and Basil is the healthiest of the Classico line. Many of them have vegetable oil instead of olive oil.

Grilled Gulf Shark

For those questioning the use of milk, I didn't use it, I just washed the steaks under cool running water for a few minutes, and then squeezed lime juice over them. And if you don't get a good cut of Shark, forget it. It will be horrible. Look for Thresher shark. Sometimes the butcher doesn't even know what he has. *EDIT******I'm going to update my review and mention ammonia smelling fish. If your fish smells like ammonia.....it's time to buy your fish in a different place. FRESH fish of any kind should NOT have a horrible smell of ammonia. Green Chili Roast

I used a 2 pound roast, left it in the crockpot all day on low (about 10 hours). I substituted chicken broth that I had leftover from boiling some chicken breasts instead of the water. Anytime I have leftover homemade broth, I ALWAYS sub that for water or canned broth. Turned out great, and plenty of leftovers to use for BBQ beef sandwiches, or chimichangas, or whatever else!

Slow Cooker Southern Lima Beans and Ham

I added a bit of cumin - I soaked beans overnight (I used baby lima beans), as I usually do and then cooked all day on low in the crockpot. To poster John who added the tomatoes, the acid will affect most types of beans --- add tomatoes once the beans are already soft for better results.

Roasted Spicy Salsa Verde

Fabulous. I added fresh squeezed lime juice. To linda2d, not sure what you added to your recipe photo that is red???? Also, it is hard to comprehend that 1 1/2 inch slice of an onion would end up overpowering.......Maybe you used more? Just a thought...... May 3, 2010 ---- Made this again last night, this time using anaheim and jalapeno chiles, no tomatoes. Added some lemon juice and jalapeno juice from a jar of jalapenos. Went well over baked chicken breast.

Original Green Salsa

I used fresh garlic, roasted tomatillos, chiles (along with the garlic) and sub'd fresh lime juice in place of the vinegar. I think 1/2 cup olive oil would be an overkill for this salsa. I just used spray garlic olive oil ontop of everything before roasting. Roast until just slightly charred, then toss everything into the blender with the fresh cilantro. If you like a chunkier salsa, just use the pulse setting instead of pureeing. I also added a splash of honey to take away some of the bitterness of the tomatillos.

Chicken and Fresh Tomato Slow Cooker Stew

Used a bone-in skinless breast and cooked on low for 5 hours. Tossed in a yellow bell pepper that I needed to use. Also subbed onion for approx. 4 green onions. Chicken was very soft and very moist.
