Vanilla Ice Cream

Nice starter recipe! I used whole milk (1 cup) instead of half and half, and used about 4 tablespoons of brown sugar in place of the white refined sugar (healthier), and I tossed in a couple of fresh chopped up mangos!

Spicy Potato Wedges

I couldn't resist the temptation to throw them in my broiler oven for a couple of minutes to crispy them up!!! I also used garlic flavored olive oil in place of the vegetable oil, but, I think 3 tablespoons of any oil would be an overkill! Especially if you are going to use a microwave.

My Grandmother's French Dressing

I scaled it down for a smaller batch. Used olive oil in place of the vegetable oil and a little honey in place of the sugar. Saved the blue cheese for folks to add to their own salads and I have a blue cheese hater. Still tasted great after a week in the fridge. I'm sure it would last longer, especially without the blue cheese.

Bill's Seasoned Ketchup

Try to find a ketchup without the high fructose corn syrup. Hunt's has one. I don't think Heinz has caught up with reality yet. If you use the green Tabasco sauce, it comes pretty close to the Heinz Hot and Spicy.

This is a wonderful replacement for the bottled stuff! I used olive oil instead of vegetable oil. I prefer to taste before adding sugar, and once I tasted it, opted to withhold the sugar entirely. I used a ketchup without the high fructose corn syrup!!

I used olive oil instead of vegetable, and tossed in some colored bell peppers that I had roasted and placed in olive oil and Italian seasonings as well ( a recipe from this site).

Original Green Salsa

I used fresh garlic, roasted tomatillos, chiles (along with the garlic) and sub'd fresh lime juice in place of the vinegar. I think 1/2 cup olive oil would be an overkill for this salsa. I just used spray garlic olive oil ontop of everything before roasting. Roast until just slightly charred, then toss everything into the blender with the fresh cilantro. If you like a chunkier salsa, just use the pulse setting instead of pureeing. I also added a splash of honey to take away some of the bitterness of the tomatillos.

Lite Italian Salad Dressing

I left out the corn oil and sugar. I always refrigerate it. Just take it out about 1/2 hr. before serving and it'll pour again.

Oven Fried Potatoes II

I would definitely recommend using olive oil rather than vegetable oil since in my opinion would be the only thing that would make one want to bake them rather than fry them, to safe the fat content. I also sub'ed the salt and pepper for a no salt seasoning from Costco that has many other herbs and spices in it. The citrus gives it a nice variation.

Grilled Gulf Shark

For those questioning the use of milk, I didn't use it, I just washed the steaks under cool running water for a few minutes, and then squeezed lime juice over them. And if you don't get a good cut of Shark, forget it. It will be horrible. Look for Thresher shark. Sometimes the butcher doesn't even know what he has. *EDIT******I'm going to update my review and mention ammonia smelling fish. If your fish smells like ammonia.....it's time to buy your fish in a different place. FRESH fish of any kind should NOT have a horrible smell of ammonia. Marinated Mushrooms

Love mushrooms! Used a red onion. Didn't use salt, didn't see any reason to. Added a couple sprinkles of fresh dried dill ontop and used garlic flavored olive oil and I couldn't resist putting a couple of splashes of white wine. Also if you get the chance, look for a vinegar mix called salsa bruja in place of the red pepper flakes and vinegar. Makes a wonderful flavor. Easy to find in Mexico, not so sure about the rest of the world.

Baked Orange Roughy with Veggies

With the lemon pepper seasoning, I left out the salt. I had colored bell peppers, so I used those. Topped with some pepperjack cheese instead of Parmesan. Also, I would recommend olive oil instead of the butter.
