Grilled Halibut I

I didn't have any grapefruits (or juice) so I had to sub lime juice instead, also subbed dill for the marjoram as I don't care for that flavor. Very easy. I used an air cooker, and my only warning would be to watch cod very closely, it can go from 'perfectly' cooked to overcooked in a matter of a minute. Also pay attention to the marinading time, as the recipe submitter mentioned, too long can change the texture, simply because the citrus actually 'cooks' the fish after an extended time. Think ceviche.

Mamacita's Mexican Rice

I threw everything into my rice cooker, and let it do its thing. Love my rice cooker!!!! Didn't need the vegetable oil, and I never add extra salt to anything.

Hasselback Potatoes

Super good and super easy. I didn't have any seasoned bread crumbs, so I sub'd Costco's no-salt seasonings ( a nice blend of herbs and seasonings) -- turned out great!

Slow Cooker Pinto Beans

I used my own chicken broth, made with a bone in, skin on chicken, so, I didn't add the lard. Subb'd the green bell pepper for poblano. Very tasty!

French Dressing II

A nice flavored dressing. I skipped the sugar as my ketchup tasted sweet enough, olive oil instead of vegetable oil and rice vinegar as that is what I had on hand.

French Salad Dressing

I won't give this a lower rating as I changed some ingredients, however, that being said, it's a great starter recipe for those wanting to experiment for the "perfect" French Dressing that doesn't come in a bottle (with all the they put in the bottle as well). I used extra virgin olive oil, Hunt's no fructose ketchup, left out the salt, just don't see any reason for additional salt, and the sugar is totally off the chart. I can't even imagine using that much suger. I cut the recipe in half, and it still called for 1/4 c and 2 TB!!!! With the ketchup being as sweet as it is in the first place, leave it out as well.I also used minced dehydrated onion as I was in a hurry.

Basil Vinaigrette Dressing

This is so good. I had to used dried basil as I had no fresh on hand, and after tasting it, it was a bit too sweet for my liking. I added about 1/2 teaspoon of dijon mustard, and that appeared to have done the trick!

Shredded Beef

I added some red and green peppers that I had sauteed the night before for fajitas. And then melted cheese on top prior to serving. Also, I didn't add the steak seasoning, since most often, that just adds extra sodium that is not necessary.

Broiled Sesame Cod

I melted the butter, and added the rest of the sauce ingredients, and allowed it to sit for an hour or so, pan sauteed the cod a couple of minutes on each side, drizzling with the butter mixture, then placing a lid on top to let it finish cooking with the built up steam. Turned out wonderful, great flavor, very moist. I'm guessing the broiler would work too, although I would be paying close attention to the heat. Nothing worse than overcooked fish.

Simple and Easy Stuffed Peppers

I used a combo of red, yellow and orange bell peppers. And pepper jack cheese in place of cheddar, although I think cheddar would be good as well. I think in the case of the blandness, the pepper jack cheese compensated for it. And I opted for a baking dish rather than muffin tins, I can't imagine that could work out well without being prepared for spill over in the bottom of the oven.

Vanilla Ice Cream

Nice starter recipe! I used whole milk (1 cup) instead of half and half, and used about 4 tablespoons of brown sugar in place of the white refined sugar (healthier), and I tossed in a couple of fresh chopped up mangos!

Spicy Potato Wedges

I couldn't resist the temptation to throw them in my broiler oven for a couple of minutes to crispy them up!!! I also used garlic flavored olive oil in place of the vegetable oil, but, I think 3 tablespoons of any oil would be an overkill! Especially if you are going to use a microwave.

My Grandmother's French Dressing

I scaled it down for a smaller batch. Used olive oil in place of the vegetable oil and a little honey in place of the sugar. Saved the blue cheese for folks to add to their own salads and I have a blue cheese hater. Still tasted great after a week in the fridge. I'm sure it would last longer, especially without the blue cheese.

Bill's Seasoned Ketchup

Try to find a ketchup without the high fructose corn syrup. Hunt's has one. I don't think Heinz has caught up with reality yet. If you use the green Tabasco sauce, it comes pretty close to the Heinz Hot and Spicy.

Aunt Betty's French Dressing

This is a wonderful replacement for the bottled stuff! I used olive oil instead of vegetable oil. I prefer to taste before adding sugar, and once I tasted it, opted to withhold the sugar entirely. I used a ketchup without the high fructose corn syrup!!
