I love the flavor & texture of this soup! I did not use celery & I baked the potatoes & squash before adding them, but this is quite delicious & very low-fat & healthful. Upon, making this a 2nd time & reading more reviews, I believe the flavor (or lack thereof) is a result of the chicken broth. The 1st time I used a combination of homemade broth I had frozen & a can of Swanson's broth to make 4 cups. This time I had no homemade or Swanson's & made some from a concentrated base...& it was not as tasty! So find a good chicken broth that you like. Also, I used acorn squash both times which I like & found no need to blend the soup if squash & potatoes are already baked. I did use an egg beater to hand-mix it, but I like it with some chunks & not completely pureed.
