Butternut Squash with Onions and Pecans

Yum, definitely needs some brown sugar. Also, should be mashed and then add the toasted pecans. The textures are a lot better that way.

Seafood Stuffed Avocados

Just like I've had in Mexico. Delicious! Definitely don't waste the avocado. I stuffed the avocados with the rest of the avocado and didn't have any crab so just used shrimp, but it would probably be even better with crab.

Microwave Frittata

I have definitely had better frittatas but I'm also rating for how simple and easy it is. You can add anything to make it better, but it's pretty good!!

Rosemary Chicken Couscous Salad

Really delicious. I only used about 3/4 of the salad dressing and there could be less olive oil, and I didn't use white balsamic. I added dried cranberries as well as the sun dried tomatoes because it definitely needed some colour, however next time I make it I will use the cranberries and omit the sun dried. I will also like to add some artichokes next time. Yummy!

Spanish Rice Bake

This was really good. I had left over rice so I just omitted the water and added the rice and simmered for around 15-20 instead of the 30. I forgot to add the chilli sauce and it was still very good, just added hot chilli flakes after, and topped with sour cream. Really good.

Pork Chops with Blue Cheese Gravy

Gorgonzola-Pepper Pasta Salad

This was pretty bland. Lacking something. There was too much pasta for the amount of veggies, and I doubled the amount of peppers. And it was a boring dish. But if you put some blue cheese dressing in it, it gives it that extra something and it tastes so much better. With the blue cheese dressing I would change my vote from a two to a four.

Garlic Cheddar Chicken

I made this last night and it was amazing! I put bread crumbs on the bottom of the pan, and the chicken came out very crispy, not soggy at all as some breaded dishes do. I used fresh oregano and parsley and the flavors came out very well, I dont think the dried would've given it such nice flavor as the fresh. It was cooked perfectly after the 30 minutes

Grilled Blue Cheese Pears

These were so good. Not too overpowered from the cheese and they had that extra bite from the hot sauce. I just cooked mine slowly on the BBQ with the lid down and they were cooked perfectly after 15 minutes.

Honey Mustard Grilled Chicken

The marinate was unbelievable! My bf cooked them perfectly on the grill so that helped too, but it was such a nice honey mustard flavor. On the side I made extra marinate and added a dash of red wine vinegar and a dash of olive oil to make a salad dressing. Than put it on top a spinach, red pepper, soya bean and roasted chick pea salad. And I don't know what I loved more, the chicken or the salad. The salad dressing was out of this world good.

Simple Roasted Chickpea Snack

These were really good. I found that they only needed 30 minutes in the oven and they were crispy. Instead of having them as a snack I let them cool and put them in a salad with spinach, red pepper, soya beans. These were so good with the marinate from "Honey Mustard Grilled Chicken" on this site turned into a salad dressing. Just make the marinate, and put in some red wine vinegar and some olive oil. Perfect!!

Penne with Red Pepper Sauce and Broccoli

This was good. Different, but still good. My bf liked it, I thought it was alright and my dad didn't care for it at all. I liked that it was something different, I am not a fan of red sauces, but the vinegar and the red pepper almost made it taste too sweet. Very odd texture too. I wouldn't make again. I have made other red pepper sauces and they have been alot better. The only good part of this recipe is if you use fresh basil, that saves the dish.
