Pumpkin Cookies V

Nom nom nom. These cookies are to die for. Huge recipe, though. I cut it down by quite a bit because I didn't want that many cookies in my house, lol.

German Spaetzle Dumplings

Awesome! I doubled the recipe and these were fantastic! Make sure you really brown these in the butter, because they are so much tastier that way!

Ricotta Cookies III

Very soft and moist cookies, but they didn't have a lot of flavor. I liked them, but they could have used some more flavoring.

Butternut Squash Soup

Reviewed: Nov. 2, 2010
Yum. Good base recipe. I took the advice of others and roasted the squash in the oven with garlic cloves. I used an immersion blender to puree everything in the pan and it worked a lot better than the blender method. The soup wasn't nearly as gritty as the first time I made it.

Chicken Wild Rice Soup I

Reviewed: Nov. 2, 2010
Awesome soup recipe! My husband had been asking me to make this soup for months, and it was exactly what he had in mind! I'm pretty sure I followed the recipe as it was written, although I may have added more carrots or chicken or a certain spice. Great recipe!

Fluffy Peanut Butter Frosting

Reviewed: Oct. 24, 2010
Perfect peanut butter frosting! It came out so light and fluffy with just the right amount of sweetness. I whipped the butter and peanut butter together in my stand mixer until it was smooth as silk and completely blended. Then I added the powdered sugar and milk (I only used 1 1/2 cups sugar) and it was done! Very easy and very delicious; this will be my go-to recipe from now on.

Spicy Refrigerator Dill Pickles

Reviewed: Sep. 25, 2010
These were delicious! I was lucky enough to find pickling spices at the market one day, so I went right home and made them. 15 jars later, we are in pickle heaven! I followed the recipe pretty much until I got to the red pepper. I only used a couple of pinches of it, since I didn't want my pickles too spicy.

Best Marinara Sauce Yet

Reviewed: Jul. 27, 2010
Delicious! I love a smooth marinara sauce that is thick enough to cling to the pasta. Here is what I did: I added fresh oregano and basil to the food processor. I sauteed the onions and garlic in olive oil before adding them to the processor. I bumped up the garlic to 3 cloves and added just a shake of crushed red pepper. I made a meat sauce out of this, and it's out of this world! I will use this recipe from now on when I want a good sauce.

Good cake recipe, and listen to people who say only fill the cups 1/2 full. These things explode out of their cups when they bake!

Mom's Zucchini Bread

Reviewed: Jul. 16, 2010
I made this into muffins and they were delicious! I have a personal preference for anything with cinnamon: I always combine it with cloves and cardamom. So I used about 2 teaspoons of the cinnamon and a good size pinch of the ground cloves and cardamom and it has a nice spice to it that works really well with the walnuts and zucchini. For the muffins, I cooked at 350 for about 19 minutes.

G's Flank Steak Marinade

Delicious marinade! I use it on flank steak that I cut up and serve over a big salad with orange sesame dressing. The flavor combination of the fresh vegetables, steak, marinade and dressing are out of this world!

Slow Cooker Beef Barley Soup

Reviewed: Jul. 16, 2010
This is a great starter recipe for Beef Barley Soup. I don't bother with the slow cooker; I do it right on my stovetop. I let it simmer on low for about 2 or 3 hours, and the beef comes out unbelievably tender. I also don't use the plain water at all. I use all beef broth to cook the veggies and the meat and it works so much better than just water. I also add balsamic vinegar and a touch of tomato paste to the meat to give some tanginess.

Cream Cheese Frosting II

YUM! Like others said, if you love cream cheese, then you will adore this frosting. It is so light and creamy and bursting with flavor. I added some grated lemon zest and it was absolutely incredible on top of my chai zucchini muffins. Bravo!

Spanish Rice II

LOVE this rice! I use an entire green pepper and I also throw in a chopped jalapeno pepper and use chicken broth instead of plain water. I've already made this at least 5 times since finding the recipe. It's one of my favorites!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Aug. 31, 2009
I thought these cookies were fantastic! They came out perfectly soft and chewy. Some people might not have sifted the flour and that could be the reason for complaints about texture. You also have to make sure you really cream the butter and sugars together well. I took review advice and added another teaspoon of vanilla and some salt and it worked out great. I would suggest chilling the cookie sheets before using and if you have a dark cookie sheet, use that instead of a shiny one. The cookies I baked on my dark sheet didn't spread at all and were perfect. The ones from the shiny sheet were still great, but they spread out some and as a result, the cookies were thinner. I also halved the recipe because there was no need for me to have 6 dozen cookies in my house!

Beef Pot Pie III

Reviewed: Apr. 18, 2009
This was a fantastic dish! Of course, I didn't follow the recipe to the letter, but it was a great jumping off point for me. I tossed the beef in flour, garlic powder, onion powder, kosher salt and fresh black pepper before browning. Instead of simmering it in water, I used 2 cups beef broth. I also threw in some balsamic vinegar to give it some tang. When it was time to cook the vegetables, I added extra beef broth to the leftover broth from the meat. I also mixed the gravy with the shredded beef and vegetables instead of pouring it on top. It was fabulous, and my husband said it's going to replace beef stew in my catalog of meals. I can't wait to eat it again!
