Artichoke and Tomato Chicken

Five stars for a slightly altered, more healthful version. I did not have any red peppers. Instead I sauteed onions and garlic in 2 Tbs of oil (instead of 1/4 cup-- that's too much). I also halved the cheese to make it less fattening. It turned out superb!

Enchiladas Verdes

Excellent, even better the next day! I did add cilantro to the sauce which gave it added flavor. This was so easy to make and my husband ate every bite and scraped the bowl clean. Thank you!

Lime Fish Tacos

A really good start but for a more authentic recipe, I changed it to the following: 1. Add some cumin when cooking the fish. And you can decrease the butter to 2-3 tbs. 2. In the sauce add cumin as well as some dried onion and salt. 3. Chopped cilantro is a vital condiment which is an important companion for full flavor. 4. Replace lettuce with shredded cabbage I think these added ingredients give it a full flavor blast. My husband scarfed down four tacos. I also think this recipe is better suited to corn tortillas although if using lettuce, probably better with the flour tortillas.

Cod Curry

Fantastic! though I did tweak it a bit. I did not have any ginger paste or garlic paste so I just added a few dashes of ground ginger and minced garlic along with an extra bit of olive oil. Also instead of jalapenos, I used some hot chili sauce which I think better compliments the spices. This turned out perfectly. I love that it is low fat and full of flavor!

Avocado-Lime Shrimp Salad (Ensalada de Camarones con Aguacate y Limon)

I have some suggestions to make this a five star recipe. The suggested "kick" needed is not the perfect dressing, but is, instead, the perfect blend of spices-- garlic and a little cayenne pepper or diced jalapeno. For those who wish to marinate more then 15 minutes, wait to add the avocado until just before serving, otherwise it gets soggy. And if you want to marinate overnight, there is no need to cook the shrimp at all, as the lime juice will do so. I sauteed the shrimp lightly with olive oil and a bit of Cajun spices, then added all the ingredients plus garlic, cayenne pepper and a bit of red onion. Then I marinated it for an hour. My husband and I spent a year in Baja MX and Central America and we ate all versions of this dish, so we have tasted it all! He had two helpings and finished his plate. This version is a keeper!

Deep Chocolate Raspberry Cake

Superb! This "cake" is very rich and a sliver will satisfy. The consistency is that of a torte, not a cake. I served this to a group of people and received raves. One should note that it must be refrigerated. It was totally gourmet; thanks!!

Bacon Wrapped Barbeque Shrimp

I pre-cooked the bacon a bit and this turned out perfectly. I also used cajun seasoning instead o BBQ seasoning. My dinner guest wanted more. Great and super fast!!

Cajun Bread Pudding

I was looking for a Bread Pudding Recipe that did not have liquor in the sauce and this it! The praline sauce is perfect. I did find that it could use a touch of nutmeg, and I also used half in half in place of 1/2 of the milk, to make it richer; but I gave it five stars anyway because it is super easy to prepare, fast and is totally delicious. Great job! I am going to make this at my Cajun luncheon I am having in CA.
