French Silk Frosting

Wonderful! Smooth and very tasty!! Recipe made plenty of frosting for a 2 layer round cake. I think I had about a cup left over. This is now my go to recipe for chocolate frosting!

#1 Pumpkin Spice Cookies

TASTEY!! It's the end of August and I pulled out a pkg of pumpkin puree (AR's Pumpkin Puree) I had in the freezer... and then goodness happened:) As I was adding the spices I got an excited flutter in my stomach reminding me of Fall and all things autumn. Thanks for an excellent recipe. I changed a couple things out of necessity(didn't have on hand or allergy) but I'm sure it didn't change the main objective or flavor/texture, it came out as described. Changes: whole wheat instead of all purpose flour, allspice instead of pumpkin pie spice, applesauce instead of apple butter and chocolate chips instead of walnuts(allergy). Very good recipe!!!

Quick and Easy Alfredo Sauce

Delicious! Perfect Quick recipe for Alfredo Sauce! No, it's not restaurant quality but when you're searching for Quick and Easy This one is it! Thus 5 stars! Very tasty and smooth!!! I served with penne and tomatoes(seeds removed) and added Italian seasoning. I also used Garlic Salt since I didn't have powder on hand turned out great!! Next tiem i serve with Grilled Shrimp! Did I mention this was fast. From the time I looked it up and served it on the table 30 minutes max including time for noodles to cook.

Pumpkin Black Bean Soup

Wonderful!! Just right on a cool Fall evening:) I made this last night before we went to a Halloween party and my husband just loved it! He said this is so good with almost every bite:) This morning I overheard him talking with his mom on the phone and he told her he was eating a black bean soup "my wife made" and how much he liked it. sure enough there were no left overs for lunch. :) This will be a keeper in my family. I added just a slosh of regular cream to my own bowl, loved it. Hubby likes it as is:)

Cherry Cobbler II

Delicious! I used 100% whole wheat flour instead of all purpose but it was still a big hit! My kids wanted seconds. I only suggest to make sure to spread the fruit around a little or it stays in the middle and the "cake" rises up around it. :)

Cheesy Cornbread Casserole

My husband, daughter and I really liked it... my son not so much. My husband said "This goes on the list of things to keep making," I did double the Muffin mix we all agreed that while it tasted good (to three of us) it was too much and left me wishing I had doubled the meat mix as well. That was my son's problem he didn't like the top so there wasn't enough meat. Next time if I double the topping I'll double the bottom or keep portions as suggested and use a slightly smaller pan.

Easy Mango Salsa

This was great!! My dinner guest oo'd and aah'd they loved it, my family did too. I served it over broiled chicken some just ate it as a mango salad. I prepped early in the day so plenty of time to marinade. I think next time I'll add extra lime and cilantro, to taste;)

Decorator Frosting I

Loved this recipe. Super simple! I really appreciated the advice to "separate decorating part then thin the overall cover" advice. will use from now on... I just used a cup of butter instead of shortening, I think it tastes better than with shortening.

Caramel Popcorn Balls

Perfect!!! since this makes a lot I mixed it in a 13 gallon trash bag. I lined a 5 gallon bucket (just for support) then put the popcorn then let the carmel mixture stop bubbling before I poured it right in the middle of the popcorn. then I pulled the bag out of the bucket tied of the top then I just tumbled it around to mix it all over. really fast and I din't have to worry about the bowl. then I just buttered my hands and formed the balls and threw the bag out when they were done. I made about 30 balls and out them in little sandwich baggies. too many for my family so we had fun going aroung our neighborhood giving them to everyone we knew.Very Fun!!

Lentil Soup

Really tastey!! A great vegetarian dish. i could only give 4 stars because I did make changes; I doubled the spices(oregano, basil, bay leaf and garlic and added a dash of Cumin). like everyone suggested. used just water it was still good. I did soak my lentils for about an hour before putting them in the soup not sure if it was necessary but I had to seperate preparation into 5 minutes snippits so I just left it in water after I rinsed it because I had to leave. All in all a tastey healthy dish.

Very good recipe! Simple not too sweet. Don't worry about the cooking part it takes like 2-3 min. awesome! Don't use Imitation vanilla! P.S. I hate shortening just used 1 cup real butter.

Simple Scratch Cake

This was good! Just what we were looking for. I was worried about the time but it took exaclty 26 minutes. I was also scared of overflow from other reviews but that didn't happen. I used 1 bunt and two bread pans, perfect! I loved the chewy crust we ate it hot from the oven. maybe be a bit chewier once it cools but we like it warm with a bit of butter, almost like a sweet bread. mmm

Spaghetti Squash Medley

enh! nothing to rave about. guess I don't like spaghetti squash much. I added 2-3 tbs Garlic salt and used 2 gloves. that was tastey but the texture of the squash didn 't do it for me... won't try again. I did like all the veggies and such together. I added cilantro and soy beans those were my favorite part of the dish.

Chocolate Coconut Cream Pie

Just finished making this so far so good I used half and half instead of milk, then I changed the vanilla to 1 tsp vanilla and 1 tsp coconut flavoring. For the Meringue I used a recipe from my gourmet desserts book 3/4 C sugar and 3 egg whites. Beat whites until soft peaks form then gradually add sugar 2 Tbsp at a time, beat well until sugar is dissolved. Test by rubbing mixture between fingers: it should not be grainy. This can take about 15-20 minutes until all sugar is dissolved and glossy peaks form. I lowered the temperature and baked it at 300 for 30 minutes until golden brown. then let it cool and chilled it in the fridge. Ready time should really say 3.5-4 hours to include cooling time.
