I've been married for 13 years and am a stay-at-home mother of 4 great kids: 9, 7, 4 and 1 year old.
My favorite things to cook
One dish/ one pot meals that are economical, and things that I can put together a little at a time throughout the day and require little supervision (like slow cooker meals and soups).

West Coast Trail Cookies
Really good, especially to send to school, as they're nut-free. I used some of the cook's notes (left out the white sugar and used quick oats). They turned out great and I will make again - love that this recipe makes a big batch - no need for me to double, and that there are so many substitutions you can make based on what's in your pantry.

Zucchini Yogurt Multigrain Muffins
Glad I read the review mentioning to cut the amount of sugar in half, as well as that its OK to use oats put through the blender in place of oat flour. Made for school lunches, so omitted nuts, and changed raisins for chocolate chips. Very moist and healthy - I will make again!

Cheddar-Bacon Mac and Cheese
Fast, easy, and simple flavors for kids. I'm glad I undercooked the pasta by a couple of minutes - it was a bit overdone after baking with all that sauce. I also seasoned with S & P as per other reviews.
