Jill's Hash Brown Casserole

I can never follow a recipe exactly, but still give it a good rating for the "base". I changed to Cream of Potato soup and used the cheddar french fried onions for the topping. I also cook a pound of bacon, drain and saute the onion in 1 tbls of the grease, and add cajun seasoning to that, before adding to the other mixture. Sometimes I use 1/2 pepper jack and 1/2 cheddar for more zip.

Fruit Salad Dressing

This is very good. The only change I made was to leave out the sugar all together and use fresh squeezed lemon juice. Between the sweetness of the fruit, the honey, and juices, it would have been overkill with the added sugar. It's great and stays in the fridge for days.

The Original Potato Salad with Real Mayonnaise

This is always a classic, but I make some adjustments. I leave the skins on the potatoes, use fat-free mayo, use green onion instead of white or yellow, and add a chopped pickle and a tbls of mustard.

Sweet Restaurant Slaw

This was a good base. I used fat-free mayo, 1/4 c. sugar, and rice wine vinegar instead of white. I also left out the poppy seeds, added pepper, and chopped apples. With these changes, it was the best I've ever made.

Corn O'Brien

This has always been one of our favorites, especially when the corn is fresh. I use red pepper instead of green and add alittle garlic to the saute. Yummy!

Asparagus and Mozzarella Stuffed Chicken Breasts

After reading the other comments about dryness, I rolled the asparagus and cheese in the chicken. Then spread a thin layer of fat free mayo over the chicken and rolled it in panko crumbs. It stayed moist and looked beautiful.

Grilled Chicken and Pasta Salad

This is so fast and easy. I use spinach instead of lettuce, add red peppers, and use cubed pepper jack for bite. Awesome.
