Green Bell Peppers stuffed with Tomato Lentil Couscous

The filling was okay. A little bland. I was hoping the bell pepper cups would soften a little more, but they were still really crunchy. Ultimately, I probably won't make this again.

Chicken Enchiladas I

1) I don't use flour tortillas. The texture is too soft as soon as they're out of the oven and the leftovers are so mushy they're almost inedible. Use yellow corn tortillas. 2) I think there's no need for the water. It weakens the flavor and there is plenty of liquid in this recipe without it. Just leave it out. 3) Your hands should be messy by the time you're done making this. Dip the corn tortilla in the slightly soupy mixture, lay it in the baking dish, spoon in some filling, roll and repeat. This helps to moisten the corn tortilla a bit and makes the flavor seep into every bite. The flavor was pretty good. I'm sure this was nothing like "authentic" enchiladas, but it was tasty enough that my picky husband requested I make it again with corn tortillas.

Oven-Roasted Asparagus

Very easy, very tasty, very quick. I'll only give it four stars because it wasn't mind meltingly amazing or anything, but it's a great dish to add into the dinner rotation and uses ingredients I ALWAYS have on hand.

Baked Salmon Fillets Dijon

Super fast and super easy!! I had all the ingredients on hand and made it just like the recipe with a side of steamed broccoli and cheesy garlic bread. Even my picky eater husband loved it!

Easy Garlic Chicken

This recipe made my husband realize that he LOVES garlic and I always recommend it to anyone who's whining about what they're going to make for dinner. It's my go to suggestion for "super easy dinner". Usually, I only make two chicken breasts and they're cooked through perfectly in about 30-35 minutes.

Honey Mustard Grilled Chicken

This was awesome! My husband (who has the taste buds of a five year old and isn't a very adventurous eater) loved this chicken and has already requested to have it again soon. I don't have an outdoor grill, so I marinated the chicken in the mix for about 30 minutes and grilled it on my George Foreman grill. SO moist and flavorful! I'm looking forward to coooking this again and slicing the chicken to put on a spinach salad.

Marinated Baked Pork Chops

Mmmmmmmm!! My first time cooking pork chops and it was definitely a hit. I think next time I will either half or completely omit the oil as it didn't really seem necessary. I'll also marinate the pork chops, just so I can get even more of the flavors enhanced. Will definitely be making again.

Kristen's Parmesan Roasted Potatoes

This was perfect and exactly what I was looking for. My husband is an extremely picky eater and loved these, asking if we could add them into the dinner rotation on a regular basis. I did add just a bit of rosemary, but I'm sure they would have been amazing without. Thanks for a great recipe, Kristen!

Sweet, Sticky and Spicy Chicken

Liked the flavor overall, but made a few tweaks the second time I made it. Used just a pinch more fresh ginger and garlic. Also, floured the chicken breasts to help the sauce thicken. Without that flour, it was too saucy and not sticky enough. I didn't notice an overwhelming soy sauce flavor, but I did alter the recipe slightly so that may have done it.

Buttermilk Biscuits

I liked the overall flavor, but even following the advice of others and adding 1/4 tsp. of baking soda, they didn't seem to rise very well. My husband and I made them into breakfast biscuits with sausage patties between them. It was good, but I'm not sure I would have liked them on their own.

Meatloaf Muffins

I love this recipe! It's so easy to make and while the meatloaf is cooking, you can work on mashed potatoes or whatever side you prefer. It's perfectly moist and is great with the ketchup glazed on. It makes enough that there are leftovers for my husband and me for a few days and it reheats great!
