Lentil Soup

I've made lentil soup many times and it has always been "good." This recipe is "amazing!" I did add spicy Italian sausage for additional protein and flavor, but this recipe would be excellent without it, too. The vinegar (I used Balsamic) at the end is the secret ingredient that makes good lentil soup into amazing lentil soup, so don't leave it out!

Pepperoncini Beef

Downeast Maine Pumpkin Bread

I did make a few substitutions after reading the other reviews: used 1/2 cup of melted butter and 1/2 cup of applesauce instead of the oil; 1 t pumpkin pie spice in addition to the cinnamon, as I was out of ginger and nutmeg; added 1-1/2 cups of chocolate chips. I was going to double the recipe, but I'm glad I didn't -- this makes a huge batch! One recipe yielded 12 muffins and two 7 x 3 loaf pans. I cooked the muffins for about 35 minutes and the loaves for 45. This recipe is awesome and I will use it in the future with possible add-ins of grated carrots, shredded coconut, pineapple or raisins. Amazing recipe!

Gooey Butter Cake III

Used a bit less powdered sugar as advised by other reviewers, but I think it would be just as good with the full amount. This is an amazing dessert and I'll definitely make it again.

Waffles I

Rating this 4 stars instead of 5 because I did follow other reviewers' advice to increase the sugar and vanilla, as well as add cinnamon. With these additions, these waffles were fabulous! The texture was perfect and the flavor was excellent. Thanks to the reviewer who suggested waiting until the steam stops trailing out of the sides of the waffle maker -- perfect waffles every time with this tip.

Mongolian Beef and Spring Onions

This was really good! I stir fried some veggies (onions, carrots, celery, mushrooms, broccoli) after I removed the meat from the pan, then poured the sauce over them and added the meat. I was restaurant good. I'm giving 4 stars because I think it needs a little less sugar, but otherwise it's right on.

Sweet Carrot Salad

Great classic (think Chik-fil-a) carrot raisin salad taste! I add a half cup of sweetened coconut and a tablespoon of champagne vinegar, but would still rate this a 5 if I made it as written. Sweet, flavorful, crunchy, healthy addition to a potluck, picnic or as a side dish for grilled meat. Drain the pineapple well, because this salad will have enough moisture without it.

Fluffy Peanut Butter Frosting

My goodness, this is so good! It tastes like the filling in a Nutter Butter cookie. I frosted a pan of peanut butter chip brownies and the results were beyond amazing. This frosting would be excellent on cupcakes, too. I did add a tsp of vanilla, but otherwise followed the recipe as-is.

Eggnog Fruit Bread

Not crazy about this. I followed the recipe exactly, but it was too dry and not sweet enough, even with the addition of a coarse sugar topping. It didn't have a strong eggnog flavor, and I would definitely increase the fruit. It did look very pretty, though. I probably won't make this again.

Janet's Rich Banana Bread

Turned out amazing -- very moist and dense with an excellent banana flavor. I will confess that I mashed my bananas instead of slicing, and I made a crumb topping with brown sugar, flour and butter for the top. I will definitely adopt this as my banana bread recipe from now on.

Honey-Glazed Chinese Chicken

This turned out okay. I tasted the sauce after the ingredients were added, and it wasn't quite sweet enough, so I added honey to taste. Also (and I didn't mark down for this), this recipe wasn't very conducive to grilling. I should have followed the instructions and baked it, because the glaze was a bit charred before the chicken was done. It still tasted good, and I'll definitely use this marinade again, with baking and then maybe broiling for the last few minutes to get a crispier skin.

Pumpkin Chocolate Chip Muffins

I rated this only 3 stars because I did not find the batter flavorful enough, so I made some adjustments. I doubled the batch and used half brown sugar; I used 2-1/2 cups flour and 1 cup of oatmeal, which created a wonderful texture and added fiber; I used generous measures of spices. It still wasn't quite right, so I added 1/4 cup of molasses to the batter and then it tasted great. I then baked at 375 for 25 minutes (probably would have been better at 22 or 23 minutes). Good recipe base, but better when altered.

Oatmeal Scotchies in a Pan

These cookies are amazing! I made the recipe exactly as written. The texture is exactly the way it should be for a bar cookie -- lightly crisp and brown on the top and bottom, but soft, dense and moist in the center. The dough is excellent -- not overly sweet, which makes the butterscotch flavor of the chips stand out nicely. I had a chocolate chip bar cookie recipe that I loved, but I think this one may displace it.

Cranberry Sauce

Absolutely amazing as written! I decrease my orange juice to 3/4 cup and then add 1/4 cup Grand Marnier close to the end, and also add the zest of one orange for a little more orange flavor.

Asparagus and Tomato Salad with Yogurt-Cheese Dressing

I made this salad as written, using Greek yogurt and Dijon mustard. It seemed like it was missing something, so I added some fresh dill that I had leftover from the night before and some more Parmesan cheese. With those additions, it turned out great -- definitely a keeper.

Garlic Dill New Potatoes

This is an excellent, easy to make side dish. I used baby Yukon Golds, steamed them until tender and then add them to the butter sauce and let them sit on low for 10 minutes or so to absorb the flavors. I also squeeze some fresh lemon juice over them to give them a little kick. They make a flavorful side dish for any fish and pair very well with shrimp scampi. Thanks for this recipe! Edited to add: I come back to this recipe over and over again -- I frequently make this recipe with any meal that would usually be served with a baked potato. Excellent side dish!
