Mexican Corn

Really good! Used homegrown corn, Fat Free cream cheese, no butter, one clove of minced garlic and a small handful of dehydrated jalapenos = awesome!Easy to make ahead and reheat.

Shredded Tri-Tip for Tacos in the Slow Cooker

Seriously awesome! I didn't have any white wine, so I substituted the same amount of Sake. Home canned tomatoes instead of store bought. Didn't have any ancho chili powder so I used a Chipotle flavor mix and threw about 3 T. of dehydrated jalapenos. Simply wonderful AND super easy!

Avocado Feta Salsa

I omitted the oil - it turned out fantastic. It was the first thing that was gone at the bonfire. Will definately be making it again.

Colleen's Slow Cooker Jambalaya

I made mine on the stove quick-style, then added about 3 cups of cooked rice toward the end of simmering. Total simmer time was about 30 minutes (until peppers/onions were soft). Had switched out the chicken breasts for thighs, used bulk Andouille Sausage and a little more cayenne that it called for. Phenomenal!! Even the picky eater had two bowls.

Butternut Squash Ravioli with Sage-Brown Butter Sauce

The sauce was particularly funky, even though I completely followed the directions/tips the wontons got slimy then really sticky. Won't be making this again. Too bad...I really like good squash ravioli. The quest continues....
