Bacon-Wrapped Asparagus

If I could rate this higher I would, for the sole reason that I got my BF to actually EAT asparagus! I made these last night, and I had 5 pieces of bacon, so I just wraped a whole piece of bacon around about 8 pieces of asparagus, and seasoned w/ a little Cavendars seasoning, and it was perfect! My son, BF and I all three loved it! Will make again for sure!

Lemon Garlic Tilapia

I made this last night and was very surprised at how good it was. I usually use bread crumbs on my tilapia, but this is a great alternative. I did mix the lemon juice, butter, garlic, and parsley in a small skillet over low heat and drizzled over the tilapia, then sprinkled just a little bit of parmesan cheese on top. My 7 yr old son LOVED it!

Garlicky Baked Butternut Squash

I am rating this 5 stars b/c of the taste, however, the recipe doesn't state WHEN to add the parmesan cheese, and so I added it w/ the rest of the ingredients at the beginning...this caused the cheese to get "sticky" (that is the best I can describe it) but I think the parm cheese should have been added maybe the last 15 minutes or so. It was still very good, just a little messy. Next time I make this, I will add the cheese towards the end. **EDIT** I made these again WITHOUT the parm cheese, and I actually think they were better that way! I couldn't get enough of them! YUMMO!

Chewy Coconut Cookies

I LOVE coconut, so I wanted to try these cookies, and I am SO GLAD I did! I think it could have even used a little more coconut, but they were so good! The hit of my cookie tray this Christmas!! Thanks for a great recipe!

Make-Ahead Mashed Potatoes

I made these Christmas Eve, with a few minor changes. I cooked the potatoes in chicken broth, I was also GOING to add some garlic cloves, but forgot. When I was mashing them I added about 5 ozs cream cheese, 8 oz sour cream, 1/2 cup heavy cream (b/c I wanted to use it up), and garlic powder, salt and pepper. Put them in the crock pot w/ a few pats of butter, and popped in the fridge overnight. Christmas morning I took them out and let them thaw a bit on the counter, then cooked on the low setting of the crock pot for about 4 hrs. They were perfect! Nobody could believe they were made the day before, and everyone absolutely loved them! Will make many more times!!

Shrimp Appetizer

I made this for Christmas Day, and we really enjoyed it! I just did the cream cheese mix, cocktail sauce, and frozen, small shrimp and left off the green onions, tomato, and shredded cheese, and I am glad I did, b/c I liked how it came out just fine. I think if I had added those other things, you wouldn't be able to get the shrimp flavor as much. Will make again!

Chinese Chicken Fried Rice II

Well I made a few changes to this, and I am sure some won't like that I rated it 5, but changed it up..OH WELL! I made brown rice and let it cool in the fridge all day, then I made the Key West Chicken from this site, and set it aside. I did the egg as directed, but used two, then sauteed onion, red bell pepper, carrots, and zucchini until tender, then added green onions and garlic. When that was all soft, I added in the rice, cooked chicken, some bacon and the eggs, and probably 2 Tbsp of terriyaki sauce. It was DELISH!!!

Chocolate Eclair Cake

I made this a couple of months ago, but only now realized I didn't rate it (busy weekend, and then forgot), but I just posted it on a recipe request, and it reminded me....ANYWAY, this was very good, and SUPER easy! I made this when some friends came down for my 30th bday. I wanted something sweet, but not too rich. I used the sugar free pudding, and low fat cool whip, and this was delish! Makes a great, cool, light dessert! YUM!

Honey Roasted Red Potatoes

Oh my gosh! These are so good! I used garlic instead of onion, and they were to die for! My son loved them, and the BF (who doesn't like potatoes...I know he's odd!) even liked them! **Edit: I have made these a couple of times, always using fresh garlic, and just adding onion powder. I use just a little dijon mustard instead of mustard poweder, and sometimes I add parsley. This really is a nice change from mashed/scalloped or even regular herb and cheese roasted potatoes that I seem to always do.

Key West Chicken

We really liked this. It was very simple to throw together, and there was nothing overwhelming about the marinade. I thought the soy sauce would be overpowering, but it really wasn't at all. The chicken came out very moist, and was even good the next day leftover! The ONLY thing I changed was using olive oil instead of vegetable oil.

Best Tuna Casserole

My BF (who loves tuna helper) really likes this recipe. My son gobbled it up too. I left out the peas, added a little milk, and used crushed ritz on top like others suggested. It's a winner.

Flourless Chocolate Cake I

My sister made this for my grandma for our 4th of July cookout (can I review it??), I gave her the recipe, but I was making about 4 other dishes and asked her to make this one, she isn't on allrecipes, so I am reviewing it anyway! My grandma LOVED it! My grandma requested semi-sweet chocolate instead of bittersweet, and I am glad we used that, but that's just a preference thing. I would describe the consistency as more along the lines of a dense cheesecake than a cake. It's VERY rich, and I would like to try to make into a smaller version (like mini muffin size) but that might be difficult. This is still a great dessert for those on a gluten free diet!

Donut Muffins

We loved these! I am not a huge fan of nutmeg, so I did reduce that down to about 1/4 (didn't measure, just eyeballed it) and added a little cinnamon to the mix, and it turned out great. I didn't add the butter and cinnamon/sugar to the tops this time (trying to shed a few pounds) but they were great without it, I just know how good they would have been WITH it! YUMMY! Will make many more times!!!!!

Quick and Easy Alfredo Sauce

This is 5 stars! I made this a while back to make a potato pizza w/ alfredo sauce and LOVED it, but forgot to rate it then. My BF mentioned he wanted some alfredo this week and I remembered this sauce recipe and whipped it up (we had everything for it already) and he was amazed! You cannot tell it has cream cheese in it at all! It's as good as any I've had and beats ANY jar sauce BY FAR! So easy! I can't say enough about this one! Thanks for a great recipe!

Rosemary Ranch Chicken Kabobs

I have already reviewed this recipe as written and we LOVE it, but last night I wanted a little bit of a kick, so I added about a tablespoon of the liquid from a jar of jalapenos (and omitted the vinegar since the liquid is mostly vinegar) and it was SOOO GOOD! Nice if you want a little bit of heat to it.

Slow Cooked Corned Beef for Sandwiches

We loved this! Made it just as directed (except halved) and added sauerkraut on rye. I wasn't a huge fan of the rye (but I'm typically not) so I'll try it on something else next time, but the meat was perfect!

Breakfast Cookies

We really liked these. I hate raisins, so I subbed choco chips instead, and reduced the sugar down to 1/2 cup (brown sugar) and I still thought they were really sweet. I will reduce the choco chips to 1/3 cup and see how that helps, but they were still really good, and very filling. Made 18 good size cookies!

Better Than Sex Cake I

I've been making this cake for about 10 yrs but feel the need to review it based on the fact that it's absolutely DELICIOUS! Every single time I make this cake, it's devoured! I am asked to make it for family and work birthdays all the time, in fact I am making it this weekend for my best friend, which prompted me to finally review it! I always make it exactly as is, b/c that's how I like it, but you can modify as you like, using condensed milk and fudge/caramel then cool whip, and whatever topping you like (heath bar, or butterfinger, or even drizzling more fudge and caramel) and it always looks really good! Great recipe, especially for the chocolate lover!
