Crock Pot Cheesy Mushroom Chicken

I thought this was really good, although I have made a variation of this recipe in the oven for years, and use mozzarella for it, and decided to use it instead of parm in this recipe. Just put the mozzarella cheese in about 30 mins before serving, and just a touch of parm (after it's plated), and it is great. Just a suggestion for all of you who aren't fans of the sherry & parm together.

Addictive Sweet Potato Burritos

I made a few changes based on other reviews, my own tastes, and to make it slightly healthier (the calorie count on this is a bit high)...I used evoo to sautee a small onion and 4 cloves of pressed garlic. Then I added 4 cans of black beans, and about 1 cup water (I just added a little at the time until I got the consistancy I wanted), then I added the other ingredients. I had baked 4 sweet potatoes (not sure how many cups this was, but it's what I used), and went ahead and mixed the potatoes in with the bean mixture. Then I spread onto whole wheat tortillas. I omitted the cheese, and baked as directed. These were wonderful! My 7 yr old son loved it, and so did I. Very filling. I wrapped the extras in a paper towel, and popped in zip lock bags and put in the freezer for lunches!

Chocolate Eclair Cake

I made this a couple of months ago, but only now realized I didn't rate it (busy weekend, and then forgot), but I just posted it on a recipe request, and it reminded me....ANYWAY, this was very good, and SUPER easy! I made this when some friends came down for my 30th bday. I wanted something sweet, but not too rich. I used the sugar free pudding, and low fat cool whip, and this was delish! Makes a great, cool, light dessert! YUM!

Chinese Chicken Fried Rice II

Well I made a few changes to this, and I am sure some won't like that I rated it 5, but changed it up..OH WELL! I made brown rice and let it cool in the fridge all day, then I made the Key West Chicken from this site, and set it aside. I did the egg as directed, but used two, then sauteed onion, red bell pepper, carrots, and zucchini until tender, then added green onions and garlic. When that was all soft, I added in the rice, cooked chicken, some bacon and the eggs, and probably 2 Tbsp of terriyaki sauce. It was DELISH!!!

Best Tuna Casserole

My BF (who loves tuna helper) really likes this recipe. My son gobbled it up too. I left out the peas, added a little milk, and used crushed ritz on top like others suggested. It's a winner.

Key West Chicken

We really liked this. It was very simple to throw together, and there was nothing overwhelming about the marinade. I thought the soy sauce would be overpowering, but it really wasn't at all. The chicken came out very moist, and was even good the next day leftover! The ONLY thing I changed was using olive oil instead of vegetable oil.

Honey Roasted Red Potatoes

Oh my gosh! These are so good! I used garlic instead of onion, and they were to die for! My son loved them, and the BF (who doesn't like potatoes...I know he's odd!) even liked them! **Edit: I have made these a couple of times, always using fresh garlic, and just adding onion powder. I use just a little dijon mustard instead of mustard poweder, and sometimes I add parsley. This really is a nice change from mashed/scalloped or even regular herb and cheese roasted potatoes that I seem to always do.

Garlicky Baked Butternut Squash

I am rating this 5 stars b/c of the taste, however, the recipe doesn't state WHEN to add the parmesan cheese, and so I added it w/ the rest of the ingredients at the beginning...this caused the cheese to get "sticky" (that is the best I can describe it) but I think the parm cheese should have been added maybe the last 15 minutes or so. It was still very good, just a little messy. Next time I make this, I will add the cheese towards the end. **EDIT** I made these again WITHOUT the parm cheese, and I actually think they were better that way! I couldn't get enough of them! YUMMO!

Lemon Garlic Tilapia

I made this last night and was very surprised at how good it was. I usually use bread crumbs on my tilapia, but this is a great alternative. I did mix the lemon juice, butter, garlic, and parsley in a small skillet over low heat and drizzled over the tilapia, then sprinkled just a little bit of parmesan cheese on top. My 7 yr old son LOVED it!

Bacon-Wrapped Asparagus

If I could rate this higher I would, for the sole reason that I got my BF to actually EAT asparagus! I made these last night, and I had 5 pieces of bacon, so I just wraped a whole piece of bacon around about 8 pieces of asparagus, and seasoned w/ a little Cavendars seasoning, and it was perfect! My son, BF and I all three loved it! Will make again for sure!

Crispy Rosemary Chicken and Fries

This was awesome! I don't normally like dark meat much, but had some thighs I needed to use up. I had to adjust to what I had on hand, so I used about 1/4 (or less) cup of olive oil, dried rosemary, dried thyme, 2 cloves of garlic, pressed, salt and pepper. I rubbed under the skin, and then some on the skin, and baked as directed. I did pour off the oil the last 10 minutes, and these turned out WONDERFUL! I can wait to make it again w/ fresh herbs! The BF and I had just come back from Sams, and he smelled something there he wanted, but we needed to use up the chicken, and he was SO GLAD he didn't insist on buying whatever it was he smelled! He said this was the best smelling food he can remember! YUM! Can't wait to make it again! **EDIT** The first time I made this I didn't have any potatoes on hand, so I just did the chicken, however I made again last night following the directions exactly, and I was a little disappointed in the potatoes. They seemed to come out really mushy. I will continue to make the chicken as directed, but will probably not make w/ the potatoes. The flavor was good, but just too mushy and greasy. Chicken was awesome though!

Chewy Coconut Cookies

I LOVE coconut, so I wanted to try these cookies, and I am SO GLAD I did! I think it could have even used a little more coconut, but they were so good! The hit of my cookie tray this Christmas!! Thanks for a great recipe!

Slow-Cooked Steak Fajitas

I had some sub-par steaks in the freezer and decided to try some for this recipe. I grabbed what I think was a bone-in ribeye. Trimmed the fat, and sliced in about 1/2 inch strips. I didn't have all the seasonings the recipe called for, so I just used fajita seasoning (maybe 1/2 a packet), I left out the jalapeno, and added a can of rotel, and a dash of worsterschire (sp?), and it turned out wonderful! I was very surprised! I know I made a several changes to the recipe, but I don't think anything was major, and it turned out really good!

Slow Cooker Chicken Stroganoff

I made this last night and we loved it. I had 4 large frozen blsl chicken breasts, and I knew I would be gone all day, so I put them in the crock pot w/ 2 cans of cream of chicken soup, about 1/2 a cup of italian dressing (I didn't have any dry packet mixes on hand), garlic powder, onion powder, parsley, italian seasonings, (didn't measure any), and butter (I don't usually have margarine), cooked on low 9 hours (b/c that is how long I am away from the house, and I don't have a timer...darn it!), I removed the chicken so I wouldn't overcook it and added the low fat cream cheese, and turned the heat up to high and let it melt for about an hour. Added the chicken back in (which we kept whole) and turned to keep warm just long enough to warm the chicken back up. Served with rice, green beans and garlic and herb biscuits! YUMMY! Will make this again for sure!

Refried Beans Without the Refry

I stuck to the recipe except for using chicken broth instead of water, and omitting the salt (until serving), and reducing the liquid by 1 cup. I just thought it seemed like a lot. I cooked on low for about 14 hrs, and then mashed. I added a bit too much of he liquid back in, and they were a bit soupy for me, but that was my own error. The next day they were better. My BF who doesn't even care much for beans even liked these a lot. My son couldn't believe these were homemade. haha Will make again for sure.

Breakfast Cookies

We really liked these. I hate raisins, so I subbed choco chips instead, and reduced the sugar down to 1/2 cup (brown sugar) and I still thought they were really sweet. I will reduce the choco chips to 1/3 cup and see how that helps, but they were still really good, and very filling. Made 18 good size cookies!

Slow Cooker Chicken and Dumplings

Made this last night and we LOVED IT! I know people are torn on how to rate a recipe when they change it up a bit, but I didn't change much, so I am still giving it 5 stars! I used onion powder instead of a real onion b/c I've never seen my grandma use an onion in her chicken and dumplings, but I did want to season my chicken up. I used 4 frozen blsl breasts, and seasoned w/ onion powder, garlic powder, paprika, and dried parsley flakes. Mixed the 2 cream of chicken soups w/ one can of chicken broth, and poured over the chicken, and added water until covered. Cooked an high one hour, and then turned on low for another four hours. Checked after that, and the chicken was done, so I removed and shredded, tossed back in, and added a little flour (maybe 1 Tbsp) to thicken a bit, and 1 (16 oz) can of biscuits, torn into pieces, cooked another 3 hours, stirring occasionally, added pepper and served. Next time, I might roll biscuits out a bit, and try cutting them w/ a pizza cutter, b/c they disintegrated bit, but the taste was perfect! This will be a regular in our house! Thanks for a great recipe!

Corn Dog Muffins

I made these tonight and my son LOVED them! I thought they were really good, but the true test his my little corn dog lover! I wanted to give them a test run before making them for his lunch box, and they were a hit! I used Jiffy corn muffin mix, so I only used one Tbsp of brown sugar since it is already sweet, that is the only alteration I made. I also only had 6 hot dogs, so I cut them in 8ths and used about 4 per muffin. I think that works better for him anyway, so he can get a bite of hot dog in every bite. Served w/ honey mustard. He was a happy camper!
