Slow Cooker Baked Potatoes

I am known as the queen of crockpot cooking in my family, if it can be done in a crockpot, I will do it. I have 5 crockpots, and use them all, all the time! However, I have never tried this recipe, until this past weekend. And now I am a believer! I HATE baking potatoes. They just never come out perfect, so I always end up buying the ones you do in the microwave that are wrapped in plastic. Not anymore...I loved these! I scrubbed, let dry, and then rubbed w/ olive oil and kosher salt. I did not wrap in foil, but they turned out fine. Cooked on High for 4 1/2 hours then removed the lid and let them cool for a bit, and they were perfect. Mine weren't "soggy" like some reviewers mentioned, but it might have been b/c I didn't wrap in foil. Not sure, but I will make my potatoes like this many more times! Thanks!!!

Monterey Ranch Chicken Bake

I thought I had a packet of dry ranch dressing mix but it was dry Italian dressing mix (oops) however I did have some regular ranch dressing, and this really looked good. SO, I decided to mix the ranch dressing (I eyeballed it, probably about 3/4 a cup) and the cheese, dip the chicken in that and then dredge in the bread crumbs. I only had the Italian seasoned bread crumbs, but I didn't think it mattered too much. My son, who can be picky about meat sometimes, LOVED this! It's a winner and will make again! Thanks for a great, and easy recipe!

Three Packet Slow Cooker Roast

Well....I reviewed this before it was published, but they didn't move my review! SO, here you go again! WONDERFUL! This recipe is the BEST Roast I have ever had! I have made it several times, and it's always perfect! I have used the packets on chicken also, and it turned out really good, and used just the italian dressing/water on a pork tenderloin for pulled pork and it was great, but I will NEVER cook a roast any other way! Italian Chicken and Chickpeas

LOVED THIS! Made this last night w/ 4 smallish blsl chicken breasts, and they were GREAT! I didn't have red pepper flakes, so I left that out, that was the only change I made, and we thought it was delish! My son liked the "chicken peas" lol

Cola Cake

I made this with yellow cake mix and coke zero cherry and made cupcakes. I really like it. Light and airy but a good sweet fix! It made 24 cupcakes (on the small side) and they were 2 weight watcher points on the new points plus system. I loved them! Can't wait to try w/ other flavor cake mixes/diet sodas!

Crock Pot Cheesy Mushroom Chicken

I thought this was really good, although I have made a variation of this recipe in the oven for years, and use mozzarella for it, and decided to use it instead of parm in this recipe. Just put the mozzarella cheese in about 30 mins before serving, and just a touch of parm (after it's plated), and it is great. Just a suggestion for all of you who aren't fans of the sherry & parm together.

Honey Cashew Green Beans

We had some people over last night, and I made this on a whim, and it was really good! I usually make my green beans with bacon, but wanted something different. I was afraid the honey would overpower the beans, but it was a very nice light sweetness that went really well with the cashews. I also added a little fresh garlic (1 lg clove, pressed) and LOVED the outcome! I was afraid it wouldn't turn out quite right b/c all I had was canned beans, but it still turned out really good. Guests seemed to like it, and my picky BF (who doesn't eat many veggies) liked it also! Will make again!

Crispy Rosemary Chicken and Fries

This was awesome! I don't normally like dark meat much, but had some thighs I needed to use up. I had to adjust to what I had on hand, so I used about 1/4 (or less) cup of olive oil, dried rosemary, dried thyme, 2 cloves of garlic, pressed, salt and pepper. I rubbed under the skin, and then some on the skin, and baked as directed. I did pour off the oil the last 10 minutes, and these turned out WONDERFUL! I can wait to make it again w/ fresh herbs! The BF and I had just come back from Sams, and he smelled something there he wanted, but we needed to use up the chicken, and he was SO GLAD he didn't insist on buying whatever it was he smelled! He said this was the best smelling food he can remember! YUM! Can't wait to make it again! **EDIT** The first time I made this I didn't have any potatoes on hand, so I just did the chicken, however I made again last night following the directions exactly, and I was a little disappointed in the potatoes. They seemed to come out really mushy. I will continue to make the chicken as directed, but will probably not make w/ the potatoes. The flavor was good, but just too mushy and greasy. Chicken was awesome though!

Make-Ahead Mashed Potatoes

I made these Christmas Eve, with a few minor changes. I cooked the potatoes in chicken broth, I was also GOING to add some garlic cloves, but forgot. When I was mashing them I added about 5 ozs cream cheese, 8 oz sour cream, 1/2 cup heavy cream (b/c I wanted to use it up), and garlic powder, salt and pepper. Put them in the crock pot w/ a few pats of butter, and popped in the fridge overnight. Christmas morning I took them out and let them thaw a bit on the counter, then cooked on the low setting of the crock pot for about 4 hrs. They were perfect! Nobody could believe they were made the day before, and everyone absolutely loved them! Will make many more times!!

Shrimp Appetizer

I made this for Christmas Day, and we really enjoyed it! I just did the cream cheese mix, cocktail sauce, and frozen, small shrimp and left off the green onions, tomato, and shredded cheese, and I am glad I did, b/c I liked how it came out just fine. I think if I had added those other things, you wouldn't be able to get the shrimp flavor as much. Will make again!

Grilled Chicken with Rosemary and Bacon

I made this last night w/ turkey bacon, and chopped my fresh rosemary, and sprinkled it on my chicken before wrapping in bacon. It was just too hot to grill, so I baked at 350 for an hour (they were pretty big breasts!) and they came out perfect! The BF kept raving about how moist and juicy they were. Will make again!

Bacon Tater Bake

I made this last night as a last minute side for a spur of the moment cookout we had with the neighbors, and it was a big hit! I did add cheese on top, and used hash browns instead of tator tots, b/c it was all I had, but it was a big hit, even for my B/F who isn't the biggest potato fan. He asked why I haven't made it before! Thanks for a great, and easy recipe!

Bacon Crackers

I posted these on a recipe request for someone yesterday, and having not made them before, and knowing I had all ingredients at home, I decided to give them a shot. I used Town House crackers, and topped w/ about 1/8th piece of bacon, then sprinkled VERY little sugar on each piece (maybe 1/2 tsp), and topped w/ a small dash of cayenne pepper. I baked them on a cooling rack, on top of a pan, so they wouldn't be overly greasy. They were great right out of the oven! They got a little "soggy" by this morning, when my son insisted he have one for breakfast, but they are a perfect little appy or snack, and so easy!

Best Chicken Ever

I have been making a variation of this recipe for years now. The BF is picky about chicken, and he loves it! I simply add garlic powder, Tony Cachere's, salt, pepper, and cayenne to the sour cream, and sometimes a handfull of shredded cheese, coat the chicken in sour cream mix, and then roll in corn flakes. Drizzle w/ 3-4 Tbsp butter, and bake at 350 for about 45mins. YUM!

Ground Beef Stroganoff

We really like this recipe. I have made it several times, and it's always a hit. I use about a Tsp (or more) of Dijon mustard instead of the mustard powder, and I also use beefy mushroom soup instead of the beef broth. This is an easy recipe to play around with and alter based on what you have on hand, or personal preference. I have used onion powder or dried minced onion in the place of the chopped onion and minced garlic in the place of the garlic always comes out good. Not fancy, but a good, quick weeknight meal.

Bacon Wrapped Shrimp

I made some of these the other day, and thought they were ok, but needed a little something more, so I took some small jalapeno slices, and put those in the middle of the shrimp, THEN wrapped the bacon, and sprinkled w/ Cavendar's seasoning. I also did mine in the oven b/c we were out of propane, and we thought they were much better w/ the alterations.

Smoked Salmon Spread

We smoked some salmon, and had quite a bit left over, so I decided to give this a try. I only had 8 oz of cream cheese on hand, so I halved the recipe, but after mixing & tasting, I decided to add the full amt of all the other ingredients. I like a more salmon taste. I think using real smoked salmon (not the canned stuff) is key for this recipe. This was perfect w/ Town House crackers! Will make again when we have company! Perfect appetizer!

Mini Tacos

These are so fun! I browned my meat, then added the taco seasoning, rotel, and black beans. I baked the wontons in the oven (at 375...425 was too hot, at least in my oven), for about 5 mins before filling, then I spooned in the meat, topped with cheese, and popped them back in for about 5-8 more mins. Once they were melty, and the wontons golden brown, I topped with a little sour cream, avocado, and jalapeno. I made these while we watched football last night, and sadly I think the dog got most of the second batch! :(

Taco Pie

I made this tonight b/c I was wanting something different from my usual Mexican casserole (which uses tortillas) and I was not disappointed! I added a can of rotel and black beans to the meat, and mixed the sour cream in, and we really liked it. Next time I might try a layer of crescent rolls on the top too, instead of chips. Thanks for a great recipe!

Slow Cooker Beef Stroganoff II

I LOVED the flavor of this recipe, but there is too much liquid, and it was very thin. I added some flour to it, and that helped a little, but the BF joked that it was more of a soup. We loved the flavor though, and I will probably make again with less liquid.
