Three Packet Slow Cooker Roast

Reviewed: Sep. 14, 2010
Well....I reviewed this before it was published, but they didn't move my review! SO, here you go again! WONDERFUL! This recipe is the BEST Roast I have ever had! I have made it several times, and it's always perfect! I have used the packets on chicken also, and it turned out really good, and used just the italian dressing/water on a pork tenderloin for pulled pork and it was great, but I will NEVER cook a roast any other way! Thanks Kerstin!

Slow Cooker Chicken and Dumplings

Reviewed: Sep. 13, 2010
Made this last night and we LOVED IT! I know people are torn on how to rate a recipe when they change it up a bit, but I didn't change much, so I am still giving it 5 stars! I used onion powder instead of a real onion b/c I've never seen my grandma use an onion in her chicken and dumplings, but I did want to season my chicken up. I used 4 frozen blsl breasts, and seasoned w/ onion powder, garlic powder, paprika, and dried parsley flakes. Mixed the 2 cream of chicken soups w/ one can of chicken broth, and poured over the chicken, and added water until covered. Cooked an high one hour, and then turned on low for another four hours. Checked after that, and the chicken was done, so I removed and shredded, tossed back in, and added a little flour (maybe 1 Tbsp) to thicken a bit, and 1 (16 oz) can of biscuits, torn into pieces, cooked another 3 hours, stirring occasionally, added pepper and served. Next time, I might roll biscuits out a bit, and try cutting them w/ a pizza cutter, b/c they disintegrated bit, but the taste was perfect! This will be a regular in our house! Thanks for a great recipe!

Corn Dog Muffins

Reviewed: Sep. 10, 2010
I made these tonight and my son LOVED them! I thought they were really good, but the true test his my little corn dog lover! I wanted to give them a test run before making them for his lunch box, and they were a hit! I used Jiffy corn muffin mix, so I only used one Tbsp of brown sugar since it is already sweet, that is the only alteration I made. I also only had 6 hot dogs, so I cut them in 8ths and used about 4 per muffin. I think that works better for him anyway, so he can get a bite of hot dog in every bite. Served w/ honey mustard. He was a happy camper!

Donut Muffins

Reviewed: Sep. 4, 2010
We loved these! I am not a huge fan of nutmeg, so I did reduce that down to about 1/4 (didn't measure, just eyeballed it) and added a little cinnamon to the mix, and it turned out great. I didn't add the butter and cinnamon/sugar to the tops this time (trying to shed a few pounds) but they were great without it, I just know how good they would have been WITH it! YUMMY! Will make many more times!!!!!

Mimi's Smoked Salmon Chowder

Reviewed: Aug. 23, 2010
I could have sworn I rated this already! Anyway, we had some leftover smoked salmon a couple of weeks ago, and I didn't want it to go to waste, so I decided to make this. It was quite the ordeal, I don't know if the flour/butter/veggie ratio is off or what, but I couldn't get my roux to turn out right. It may have been my pot b/c I had problems w/ it later (will explain in a minute), but the roux just wouldn't set up right, and I've made roux many times, and never had a problem. Anyway, then it took over an hour to get it to simmer, this is why I think I had a problem w/ the pot, maybe it was too big or something, (just a regular stock pot), but the chowder was very thin and runny, never did thicken up, and I cooked it for HOURS! It could have been user error, but I was just frustrated by the end of the process. However it did have a good flavor and my son gobbled it up, so all in all I would call it a success. Will try again, in a few months!! lol

Slow-Cooked Oriental Chicken

Reviewed: Aug. 23, 2010
I am rating at 4, because I think it needs a little something more. The flavor is good, but it just needs something extra. I made it as is the first time, and it was ok, but I have to tinker w/ every recipe, so the next time I used 3 boneless, skinless breasts b/c it's what I prefer. I cut it into chunks, and browned it as directed, like a lot of others, I made more sauce (tripled it), and added a red and green bell pepper, and a dash of cayenne. I cooked it in my slow cooker for 2 hours on high, and another hour on low, then looked at it, the sauce was thin, so I took a spoon full of flour, and added a small can of pineapple juice, and mixed that in to thicken it, and added it to the slow cooker, as well as a bag of frozen broccoli. Cooked another hour, and checked it and the sauce and broccoli were good. Served over rice, and this was a hit. I guess I made several changes, but nothing that was too difficult or time consuming. Will make this again w/ my modifications. Thanks for a good base recipe!

Mock Lobster

Reviewed: Aug. 14, 2010
I am rating this based on the taste and texture of the chicken, not on it tasting like lobster. I didn't think it tasted similar, however I also didn't dip it in butter b/c I was just wanting a good grilled chicken. This is an awesome marinade and we loved it! The BF thought it was great! He commented more than once on how tender and juicy the chicken was! Full of flavor after marinating just 2 1/2 hours. This will absolutely be added into our rotation!

Smoked Salmon Spread

Reviewed: Aug. 2, 2010
We smoked some salmon, and had quite a bit left over, so I decided to give this a try. I only had 8 oz of cream cheese on hand, so I halved the recipe, but after mixing & tasting, I decided to add the full amt of all the other ingredients. I like a more salmon taste. I think using real smoked salmon (not the canned stuff) is key for this recipe. This was perfect w/ Town House crackers! Will make again when we have company! Perfect appetizer!

Flourless Chocolate Cake I

Reviewed: Jul. 3, 2010
My sister made this for my grandma for our 4th of July cookout (can I review it??), I gave her the recipe, but I was making about 4 other dishes and asked her to make this one, she isn't on allrecipes, so I am reviewing it anyway! My grandma LOVED it! My grandma requested semi-sweet chocolate instead of bittersweet, and I am glad we used that, but that's just a preference thing. I would describe the consistency as more along the lines of a dense cheesecake than a cake. It's VERY rich, and I would like to try to make into a smaller version (like mini muffin size) but that might be difficult. This is still a great dessert for those on a gluten free diet!

Slow Cooked Corned Beef for Sandwiches

Reviewed: Jun. 27, 2010
We loved this! Made it just as directed (except halved) and added sauerkraut on rye. I wasn't a huge fan of the rye (but I'm typically not) so I'll try it on something else next time, but the meat was perfect!

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 17, 2010
I have already reviewed this recipe as written and we LOVE it, but last night I wanted a little bit of a kick, so I added about a tablespoon of the liquid from a jar of jalapenos (and omitted the vinegar since the liquid is mostly vinegar) and it was SOOO GOOD! Nice if you want a little bit of heat to it.

Rachael's Superheated Cajun Boiled Peanuts

Reviewed: Jun. 6, 2010
I LOVE boiled peanuts, but have never tried making them myself! These were so easy and wonderful! The package of peanuts I bought were 1.5 lbs, but I kept the measurements the same as the recipe called for since I didn't know how spicy it would be and I knew my 6 yr old would want some too. They still came out amazing! Next time I will cut back a little on the salt, but other than that, I won't change a thing! I cooked them on low for 21 hrs, and then turned it up to high for 2 more hours, and they were good after a total of 23 hours. Some might have given it another hour, but I don't like them too soft. Perfect! Thanks for a great recipe! I will be making these often!!

Quick and Easy Alfredo Sauce

Reviewed: Jun. 4, 2010
This is 5 stars! I made this a while back to make a potato pizza w/ alfredo sauce and LOVED it, but forgot to rate it then. My BF mentioned he wanted some alfredo this week and I remembered this sauce recipe and whipped it up (we had everything for it already) and he was amazed! You cannot tell it has cream cheese in it at all! It's as good as any I've had and beats ANY jar sauce BY FAR! So easy! I can't say enough about this one! Thanks for a great recipe!

Bacon Tater Bake

Reviewed: May 24, 2010
I made this last night as a last minute side for a spur of the moment cookout we had with the neighbors, and it was a big hit! I did add cheese on top, and used hash browns instead of tator tots, b/c it was all I had, but it was a big hit, even for my B/F who isn't the biggest potato fan. He asked why I haven't made it before! Thanks for a great, and easy recipe!

Chicken Fajita Melts

Reviewed: May 5, 2010
We made these a couple of weeks ago, and when I accidently recommended them to laughingmagpie on the RE, it reminded me to review them! They are awesome! We had made fajitas the night before and used the leftover meat and veggies for this, so we halved the recipe, and thought this was a winner! We loves the sauce, and and thought the french bread was a nice change from tortillas. We will absolutely be adding this into the monthly rotation! The BF told me to pick the stuff up for it again this week! Thanks laughingmagpie!

Italian Love Cake

Reviewed: Apr. 29, 2010
In the words of my son "OHHHHH-EMMMMMM-GEEEEE!" This cake is my far my favorite...ever! I don't even want to look at the Nutrition Facts! Anyway....I made this with a marble cake because I am not a HUGE chocolate fan, other than that, I followed the directions exactly, and this cake is to die for! I have had it before, but it's been a while, and I had lost the recipe! So glad I found it here! Thanks!

Mom's Mexican Cornbread

Reviewed: Apr. 29, 2010
This recipe is similar to one my Mom has been making for years and it is one of my favorites! The only thing I do differently is I add a can on rotel to the ground beef after it's browned, and let the liquid cook out. I also use dried minced onion instead of fresh, chopped, but this recipe is a winner, and freezes well!

Slow Cooker Chicken Continental

Reviewed: Apr. 29, 2010
I have been making a receipe similar to this for years. I absolutely LOVE IT! I only use one jar of dried beef, and sometimes I wrap the chicken w/ one piece of bacon and omit the dried beef, and sometimes I use both, but no matter how I do this recipe it's 5 stars. My son and BF both love it. Sometimes I double the "sauce" so we have some extra to go over rice or mashed potatoes, but this is always a winner in our house!

Omelet Biscuit Cups

Reviewed: Apr. 29, 2010
I made these recently, and we loved them! I like that how versatile they are, I added salsa, and used bacon instead of ham (it's what I had on hand), and we had several left over for breakfast that week. Thanks!
