Ground Beef Stroganoff

Reviewed: Feb. 21, 2011
We really like this recipe. I have made it several times, and it's always a hit. I use about a Tsp (or more) of Dijon mustard instead of the mustard powder, and I also use beefy mushroom soup instead of the beef broth. This is an easy recipe to play around with and alter based on what you have on hand, or personal preference. I have used onion powder or dried minced onion in the place of the chopped onion and minced garlic in the place of the garlic powder...it always comes out good. Not fancy, but a good, quick weeknight meal.

Salsa Chicken

Reviewed: Feb. 21, 2011
I made this last night and we really liked it. Very easy, and even my son (who isn't a big meat fan) liked it. The only thing I did different was drizzle about a Tablespoon of olive oil on the chichen and then sprinkle w/ the taco seasoning. Will make again!

Mexican Sour Cream Rice

Reviewed: Feb. 20, 2011
This makes a GREAT side to your Mexican meal! I left out the cilantro b/c I don't like it, and left out the corn. It was still wonderful! The second time I mad it I didn't have green chiles, so I used 1/2 cup of salsa. It was still great!

Garlicky Baked Butternut Squash

Reviewed: Feb. 18, 2011
I am rating this 5 stars b/c of the taste, however, the recipe doesn't state WHEN to add the parmesan cheese, and so I added it w/ the rest of the ingredients at the beginning...this caused the cheese to get "sticky" (that is the best I can describe it) but I think the parm cheese should have been added maybe the last 15 minutes or so. It was still very good, just a little messy. Next time I make this, I will add the cheese towards the end. **EDIT** I made these again WITHOUT the parm cheese, and I actually think they were better that way! I couldn't get enough of them! YUMMO!

Lemon Garlic Tilapia

Reviewed: Feb. 18, 2011
I made this last night and was very surprised at how good it was. I usually use bread crumbs on my tilapia, but this is a great alternative. I did mix the lemon juice, butter, garlic, and parsley in a small skillet over low heat and drizzled over the tilapia, then sprinkled just a little bit of parmesan cheese on top. My 7 yr old son LOVED it!

Bacon-Wrapped Asparagus

Reviewed: Feb. 18, 2011
If I could rate this higher I would, for the sole reason that I got my BF to actually EAT asparagus! I made these last night, and I had 5 pieces of bacon, so I just wraped a whole piece of bacon around about 8 pieces of asparagus, and seasoned w/ a little Cavendars seasoning, and it was perfect! My son, BF and I all three loved it! Will make again for sure!

Italian Chicken and Chickpeas

Reviewed: Jan. 20, 2011
LOVED THIS! Made this last night w/ 4 smallish blsl chicken breasts, and they were GREAT! I didn't have red pepper flakes, so I left that out, that was the only change I made, and we thought it was delish! My son liked the "chicken peas" lol

Slow Cooker Taco Soup

Reviewed: Jan. 18, 2011
I don't know why people keep saying this recipe is a lot like chili...maybe I make my chili more meaty than most, but I thought this was exactly as described, TACO SOUP! I typically don't like corn (except creamed corn) in anything but thought I would give this a try, and decided that I still don't like corn in stuff! LOL I will omit it if I make this again. I also took the advice of several other reviewers and browned my meat w/ the taco seasoning, and then added a bit more to the crock pot. I also added a packet of dry spicy ranch dressing mix, and a can of black beans b/c I love them! I used beer instead of water. I thought this was good. I served w/ shredded cheese, sour cream, and crushed chips. This made a HUGE crock pot full! My son had a bowl, the BF had 2, and I had a bowl and a half, and there was still more than 1/2 the crock pot left! Great if you are feeding a crowd or need something to eat on for a few days!

Bacon Wrapped Shrimp

Reviewed: Jan. 4, 2011
I made some of these the other day, and thought they were ok, but needed a little something more, so I took some small jalapeno slices, and put those in the middle of the shrimp, THEN wrapped the bacon, and sprinkled w/ Cavendar's seasoning. I also did mine in the oven b/c we were out of propane, and we thought they were much better w/ the alterations.

Shrimp Appetizer

Reviewed: Dec. 27, 2010
I made this for Christmas Day, and we really enjoyed it! I just did the cream cheese mix, cocktail sauce, and frozen, small shrimp and left off the green onions, tomato, and shredded cheese, and I am glad I did, b/c I liked how it came out just fine. I think if I had added those other things, you wouldn't be able to get the shrimp flavor as much. Will make again!

Make-Ahead Mashed Potatoes

Reviewed: Dec. 26, 2010
I made these Christmas Eve, with a few minor changes. I cooked the potatoes in chicken broth, I was also GOING to add some garlic cloves, but forgot. When I was mashing them I added about 5 ozs cream cheese, 8 oz sour cream, 1/2 cup heavy cream (b/c I wanted to use it up), and garlic powder, salt and pepper. Put them in the crock pot w/ a few pats of butter, and popped in the fridge overnight. Christmas morning I took them out and let them thaw a bit on the counter, then cooked on the low setting of the crock pot for about 4 hrs. They were perfect! Nobody could believe they were made the day before, and everyone absolutely loved them! Will make many more times!!

Crispy Rosemary Chicken and Fries

Reviewed: Dec. 21, 2010
This was awesome! I don't normally like dark meat much, but had some thighs I needed to use up. I had to adjust to what I had on hand, so I used about 1/4 (or less) cup of olive oil, dried rosemary, dried thyme, 2 cloves of garlic, pressed, salt and pepper. I rubbed under the skin, and then some on the skin, and baked as directed. I did pour off the oil the last 10 minutes, and these turned out WONDERFUL! I can wait to make it again w/ fresh herbs! The BF and I had just come back from Sams, and he smelled something there he wanted, but we needed to use up the chicken, and he was SO GLAD he didn't insist on buying whatever it was he smelled! He said this was the best smelling food he can remember! YUM! Can't wait to make it again! **EDIT** The first time I made this I didn't have any potatoes on hand, so I just did the chicken, however I made again last night following the directions exactly, and I was a little disappointed in the potatoes. They seemed to come out really mushy. I will continue to make the chicken as directed, but will probably not make w/ the potatoes. The flavor was good, but just too mushy and greasy. Chicken was awesome though!

Slow Cooker Beef Stroganoff II

Reviewed: Dec. 20, 2010
I LOVED the flavor of this recipe, but there is too much liquid, and it was very thin. I added some flour to it, and that helped a little, but the BF joked that it was more of a soup. We loved the flavor though, and I will probably make again with less liquid.

Chewy Coconut Cookies

I LOVE coconut, so I wanted to try these cookies, and I am SO GLAD I did! I think it could have even used a little more coconut, but they were so good! The hit of my cookie tray this Christmas!! Thanks for a great recipe!

Crescent Bacon Cheese Tartlet

Reviewed: Dec. 20, 2010
I thought these were very bland as written. They are very eggy, so I might use less egg next time, and maybe season w/ some salt/pepper, and add more cheese. As written there just isn't much flavor, but there is potential, I will probably try again, making some changes.

Slow-Cooked Steak Fajitas

Reviewed: Nov. 22, 2010
I had some sub-par steaks in the freezer and decided to try some for this recipe. I grabbed what I think was a bone-in ribeye. Trimmed the fat, and sliced in about 1/2 inch strips. I didn't have all the seasonings the recipe called for, so I just used fajita seasoning (maybe 1/2 a packet), I left out the jalapeno, and added a can of rotel, and a dash of worsterschire (sp?), and it turned out wonderful! I was very surprised! I know I made a several changes to the recipe, but I don't think anything was major, and it turned out really good!

Slow Cooker Chicken Stroganoff

Reviewed: Nov. 12, 2010
I made this last night and we loved it. I had 4 large frozen blsl chicken breasts, and I knew I would be gone all day, so I put them in the crock pot w/ 2 cans of cream of chicken soup, about 1/2 a cup of italian dressing (I didn't have any dry packet mixes on hand), garlic powder, onion powder, parsley, italian seasonings, (didn't measure any), and butter (I don't usually have margarine), cooked on low 9 hours (b/c that is how long I am away from the house, and I don't have a timer...darn it!), I removed the chicken so I wouldn't overcook it and added the low fat cream cheese, and turned the heat up to high and let it melt for about an hour. Added the chicken back in (which we kept whole) and turned to keep warm just long enough to warm the chicken back up. Served with rice, green beans and garlic and herb biscuits! YUMMY! Will make this again for sure!

Better Than Sex Cake I

Reviewed: Nov. 10, 2010
I've been making this cake for about 10 yrs but feel the need to review it based on the fact that it's absolutely DELICIOUS! Every single time I make this cake, it's devoured! I am asked to make it for family and work birthdays all the time, in fact I am making it this weekend for my best friend, which prompted me to finally review it! I always make it exactly as is, b/c that's how I like it, but you can modify as you like, using condensed milk and fudge/caramel then cool whip, and whatever topping you like (heath bar, or butterfinger, or even drizzling more fudge and caramel) and it always looks really good! Great recipe, especially for the chocolate lover!

Breakfast Cookies

Reviewed: Oct. 3, 2010
We really liked these. I hate raisins, so I subbed choco chips instead, and reduced the sugar down to 1/2 cup (brown sugar) and I still thought they were really sweet. I will reduce the choco chips to 1/3 cup and see how that helps, but they were still really good, and very filling. Made 18 good size cookies!

Jalapeno Popper Spread

Reviewed: Sep. 26, 2010
I read the reviews, and didn't know how this would possibly taste like poppers, but it does! It is awesome! I served w/ Triscuit and Wheat Thin crackers. This will be in our football watch party rotation from now on! Awesome!
