This was awesome! I don't normally like dark meat much, but had some thighs I needed to use up. I had to adjust to what I had on hand, so I used about 1/4 (or less) cup of olive oil, dried rosemary, dried thyme, 2 cloves of garlic, pressed, salt and pepper. I rubbed under the skin, and then some on the skin, and baked as directed. I did pour off the oil the last 10 minutes, and these turned out WONDERFUL! I can wait to make it again w/ fresh herbs! The BF and I had just come back from Sams, and he smelled something there he wanted, but we needed to use up the chicken, and he was SO GLAD he didn't insist on buying whatever it was he smelled! He said this was the best smelling food he can remember! YUM! Can't wait to make it again! **EDIT** The first time I made this I didn't have any potatoes on hand, so I just did the chicken, however I made again last night following the directions exactly, and I was a little disappointed in the potatoes. They seemed to come out really mushy. I will continue to make the chicken as directed, but will probably not make w/ the potatoes. The flavor was good, but just too mushy and greasy. Chicken was awesome though!
