Monterey Ranch Chicken Bake

I thought I had a packet of dry ranch dressing mix but it was dry Italian dressing mix (oops) however I did have some regular ranch dressing, and this really looked good. SO, I decided to mix the ranch dressing (I eyeballed it, probably about 3/4 a cup) and the cheese, dip the chicken in that and then dredge in the bread crumbs. I only had the Italian seasoned bread crumbs, but I didn't think it mattered too much. My son, who can be picky about meat sometimes, LOVED this! It's a winner and will make again! Thanks for a great, and easy recipe!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

10 cups of water is way too much in this, and I didn't even use that much. I had to turn my crock pot on high for over 2 hours after I got home without the lid, AND add flour to thicken it up a bit, and even that didn't help much. However, this does have potential. I used about 6 cups chicken broth, and 2 cups water as the base, I used smoked sausage b/c it's what we had on hand that I needed to use up, and I left out the jalapeno. Lastly, I used 2 bay leaves, and omitted the basil b/c it just seemed more authentic that way. I am thrilled with how it tastes, and will make it with my changes again, however with less broth/water. Maybe a total of 5-6 cups. If I made this as written, I would probably rate it less (so I guess I'm cheating) b/c I don't think the basil would be the same as the bay leaves, and I think the broth added a lot of flavor, but with the changes I made I am giving it a 4 even though I would like it less "soupy".

Japanese Style Deep Fried Shrimp

I removed the tails so these would be easier to eat, and I added Tony Cacheres to the flour mix, and a little milk to the eggs, but those weren't major changes. I have always used flour/corn meal to fry shrimp but not anymore! The panko makes such a crispy, tasty crunch on the outside. This will be my go-to for frying shrimp from now on!

Oatmeal Chip Cookies

I made these cookies last night for work, and my son and BF both snuck a few...my son is a sweet freak, and loved them, but the BF who isn't crazy about sweets even loved them! I was shocked! That is the true sign of a great cookie! Will make again for sure!

Philly Cheesesteak Casserole

I'm torn on how to rate b/c we liked this a lot, however it doesn't REALLY taste like a Philly Cheesesteak (I mean, I really didn't think it would, but if you take it by the name...) I followed the recipe exactly, except I used fresh mushrooms, and I also sauteed the mushrooms, onion (and I added garlic) with the ground beef while it cooked. This makes a HUGE batch, so it's great if you are feeding a crowd, or you want leftovers for lunches or easy, quick suppers through the week, this is great! I poured it in a 9x13 inch baking dish, and Seth and I each had a serving and the BF had 2 huge servings, and we hardly put a dent in it! Will make again for sure.

Double Layer Pumpkin Cheesecake

OH MY GOSH, this is soooo good! I added about 2/3 cup of pumpkin, and it is the perfect amount of pumpkin. Next time I might do like others suggested and make a little more cream cheese mixture to make it more of a cheesecake flavor on the bottom layer, but otherwise, this is a winner! Can't wait to make it for Thanksgiving!

Cheesy Ranch Potato Bake

Spinach Brownies

This was absolutely amazing! However I made a mistake or two! I didn't have an onion, so I used onion powder, and added bacon like a couple of the other reviewers recommended, I really didn't want to add so much butter, I added about 3/4 of a stick, and it was plenty...the error came in adding 3 lg eggs! OOPS! However, it was still DELISH! Just need to try to follow directions next time! I looked at that recipe 3 times, and saw 3 eggs every time! OH well...still a HUGE winner! Will be making again and again!

Smashed Cauliflower

Don't be fooled, this is not to be confused with mashed potatoes, even with children..but it's still a very good side. For those cutting carbs, or just looking to add a tasty veggie side, this was a good one.

Jill's Hash Brown Casserole

I made this last night as a spur of the moment side. I didn't have corn flakes or fried onions so I just added 1/2 the cheese o the mix and 1/2 on top. I also halved the butter and was glad I did, it would have been too greasy otherwise. Very good!

Grilled Chicken with Rosemary and Bacon

I made this last night w/ turkey bacon, and chopped my fresh rosemary, and sprinkled it on my chicken before wrapping in bacon. It was just too hot to grill, so I baked at 350 for an hour (they were pretty big breasts!) and they came out perfect! The BF kept raving about how moist and juicy they were. Will make again!

Zippy-Zoo Marinade

I was pretty skeptical about this one b/c it seems to have a lot going on, but I had some pork chops and wanted to do something low carb, so I decided to give this a try. I didn't have any corn syrup, so I just added a tiny bit of agave nectar, but kept the recipe the same other than that. I let marinate on my boneless chops for probably 3+ hrs, and we both loved them. Will try again on chicken.

Lentils And Spinach

I found this recipe while looking for a low carb recipe that incorporated lentils and spinach and the end result was very good. I even had my 7 yr old and BF try it and they both thought it was good, and neither of them are really very health conscious! :)

Monkey Bread

We loved this! I typically make another Monkey Bread recipe on this site, but had some apple butter, and this was recommended. I am so glad we tried it. I love the apple butter flavor in the sugar mixture. I don't have a bundt pan, so I halved the recipe and made it in a 9x9 inch glass dish. I cooked at 350 for 20-25 mins and it was perfect!

Taco Stuffed Shells

This was SOOO good! I added a can of rotel to the meat when it was done browning, and let it cook down a bit, but that was the only change I made. I could have JUST eaten the stuffing mixture, it was delish! Will make again!

Mustard Chicken

I used the blsl chicken tenders on this recipe, I had a big package (probably 15 - 18 tenders), and I just eyeballed the mustard..I also used regular yellow, honey dijon, and regular dijon, mixed all up. I let the chicken "marinate" in that for an hour or two, then crushed the onions up, I didn't have quite enough to cover them all, so I used some panko with the onions on the last few, and I think I liked them better. Baked at 375 for 20 minutes, and they were perfect. The BF even ate them leftover a couple of days later, warmed in the oven, and dipped in ranch, he said they were still good. Will make again!

Bada Bing Bada Banged Potatoes

These are SOOOO GOOD! I made them twice this weekend! The first time, some of my potatoes came out overcooked and some came out undercooked, so the ones that came out undercooked ended up not "mashing" well, and the others were just falling apart. We prefered the ones that were falling apart, they just seemed to soak up the flavors better. Then Sunday I made them again, and instead of mashing I quartered the potatoes, and I think this works a bit better. SO GOOD! Will absolutely make again and again!

Old Settlers' Baked Beans

Oh my gosh, these are SOOOO good! I made them this weekend, and EVERYONE loved them! My BF who doesn't even like baked beans even loved them! They are good hot, or cold! Just a delish recipe! You can sub out whatever beans you like, I just used some that I had on hand (pinto, black, and kidney) and really any kind of pork & bean/bbq baked beans will be fine too!

Creamy Chicken Dijon

I really hate rating this a 3, but I had higher hopes for this dish than what came out. I thought it smelled so good cooking, and I liked the flavor somewhat, but I think using 98% Fat Free Cream of Chicken soup made it way too watery (and the only reason I am rating a 3 is b/c the recipe says you can use either regular or the 98% FF), but it was not really creamy enough for what we were thinking. The BF ate it, but didn't care much for it. I think I will try again sometime, and use regular soup. I am dieting so I thought the 98% FF kind would be best to try for now, but once I make again, I will review again. I just think it's best to use the REAL soup...also I served w/ whole wheat noodles and roasted veggies, and I think next time I will try it w/ potatoes of some sort.

Christmas Breakfast Sausage Casserole

I make this all the time, yet forgot to rate it until I suggested it to someone today! We LOVE this recipe! I do usually up the eggs to 6, and use 6-7 slices of bread, and close to 2 cups of cheese...I just kind of eyeball it. But this makes breakfast super easy, and is so good! Even reheated!
