Aussie Chicken

This was a big hit for us. I made as directed with the one exception of the corn syrup. I didn't have any, and after reading the reviews, it seemed like it would be plenty sweet without it, and it was. The homemade honey mustard was DELICIOUS! Don't cut corners by using premade...it's very quick and easy to make, and was awesome! Will make again for sure!

Refried Beans Without the Refry

I stuck to the recipe except for using chicken broth instead of water, and omitting the salt (until serving), and reducing the liquid by 1 cup. I just thought it seemed like a lot. I cooked on low for about 14 hrs, and then mashed. I added a bit too much of he liquid back in, and they were a bit soupy for me, but that was my own error. The next day they were better. My BF who doesn't even care much for beans even liked these a lot. My son couldn't believe these were homemade. haha Will make again for sure.

Smoky Mountain Chicken

Made this last night, however I didn't have ham or the tomato to garnish. Still turned out great. Was a big hit for both my son and my BF. Will make again for sure!

Creamy Chipotle Chicken

This was good, but not as great as I thought it would be by the smell of the sauce. I only used 2 peppers, and I am glad I didn't add the third...WOW! It was spicy! I will try this again, but maybe in the oven or on the stove. And maybe with just one pepper!

Fish Tacos

These were exactly what I was looking for! Loved everything about them! I did serve mine with flour tortillas though. Also, the lovely mass chain grocery store in our area doesn't have fresh fish, and they also didn't have cod, so I just used tilapia. Came out fine. My 8 yr old son even loved these! Served w/ avocado and pico on the side.

Shrimp Scampi Bake

I made this New Years Eve, but the oven was in use, so we tossed it on the grill with the steaks. We all thought it turned out great! I did add some white wine, cayenne pepper, and Tony Cacheres to it to give it a little pop! I just served plain as a side to the steaks, but I plan to make again and serve over noodles. Very good and easy! *Edit* I made this (with the modifications above) and baked as directed instead of grilling, last night, and tossed with pasta and a little parmesan cheese. This was a crowd (crowd of 3!) pleaser! It is easy to make, and really comes out like something you would get at a restaurant or even better!

Bacon Appetizer Crescents

This is so easy and makes a great snack/appy. I made it for gameday food while watching football, and we loved it. I used the chive and onion cream cheese, and omitted the onions, and it was great!

Mini Tacos

These are so fun! I browned my meat, then added the taco seasoning, rotel, and black beans. I baked the wontons in the oven (at 375...425 was too hot, at least in my oven), for about 5 mins before filling, then I spooned in the meat, topped with cheese, and popped them back in for about 5-8 more mins. Once they were melty, and the wontons golden brown, I topped with a little sour cream, avocado, and jalapeno. I made these while we watched football last night, and sadly I think the dog got most of the second batch! :(

Dijon Chicken

I used boneless skinless chicken breasts, and we loved this. I reduced the salt (I just sprinkled a little in the sauce, not directly on the chicken), and increased the sauce a little (not quite double though b/c I didn't have enough Dijon), what I had leftover after dipping the chicken into I added a little more butter and white wine to, let simmer a few minutes and drizzled over the chicken. It was delish. I also sprinkled a little bit of Parmesan cheese in with the bread crumbs. This was a nice change. Will make again!

Candy Bar Cookie Squares

I am not a huge sweet fan, but this was a really good, fun and easy recipe! My son and I made this together and both really liked it. Super easy! I cooked 25 mins, and it was perfect for us. Soft, but still kept it's shape when cut. We used leftover Halloween candy. 3 Reeses cups, 3 fun size snickers and 3 fun size M & M's! YUM!

Vegetarian Chickpea Sandwich Filling

I changed this up a bit based on what I had on hand. I was stuck home today with a sick child and didn't want to get him out, and I have been wanting to try this, but I didn't have the celery. I ended up taking my can of chick peas, and warming over med/hi heat in a small sauce pan until warm. I then drained and mashed with my hand masher. I then sauteed half a chopped onion, 2 minced garlic cloves, about 1/8 cup of sun dried tomatoes (maybe a little more), and some fresh parsley in a little olive oil (I didn't measure it), and added this to the chick peas, then added a tsp of dijon mustard and a Tbsp of mayo. OH MY GOSH! This was SOOOO GOOD! I had it on toasted bread, and I could have eaten it all, but I had to stop myself! I will make this again and again!

Slow Cooker Baked Potatoes

I am known as the queen of crockpot cooking in my family, if it can be done in a crockpot, I will do it. I have 5 crockpots, and use them all, all the time! However, I have never tried this recipe, until this past weekend. And now I am a believer! I HATE baking potatoes. They just never come out perfect, so I always end up buying the ones you do in the microwave that are wrapped in plastic. Not anymore...I loved these! I scrubbed, let dry, and then rubbed w/ olive oil and kosher salt. I did not wrap in foil, but they turned out fine. Cooked on High for 4 1/2 hours then removed the lid and let them cool for a bit, and they were perfect. Mine weren't "soggy" like some reviewers mentioned, but it might have been b/c I didn't wrap in foil. Not sure, but I will make my potatoes like this many more times! Thanks!!!

Creamy Chicken and Wild Rice Soup

I sauteed an onion, some baby bella mushrooms and 3 cloves of garlic and added in and also a couple of splashes of white wine. WOW! This is sooooo good! A keeper for sure!

All Day Apple Butter

I am rating this 5 stars b/c I thought it was delish, but I changed it up a bit. I used 5 lbs (that was the only size bag I could find and just went with it) of Granny Smith apples. I cored, peeled, and ran them through the food processor, then threw them in the crock pot w/ 1 cup white sugar, and 1 cup brown sugar. 1 1/2 tsp cinnamon and about a half tsp pumpkin pie spice. I omitted the cloves b/c I hate them, and just eyeballed the salt. I cooked on high for 1 hr, and then low for probably 6 hrs, stirring occasionally, put in the fridge overnight, then cooked on low all day the next day, again stirring occasionally. I put in the fridge w/ the thought that I might finish off on the stove today but when I took it out the consistency was how I wanted it. This made enough for five 8 oz jars, and then enough for a couple of biscuits today! YUM!

Onion & Garlic Biscuit Flat Bread

I didn't have green onions but used chives instead and we loved this! Will make again and again and again and again! YUM! Will also mix up the cheeses! Thanks bellepepper, for a great recipe!

Jalapeno Rosemary Alfredo

I attempted to double this b/c I had a large jalapeno and I didn't want the sauce to be too spicy for my son, and we like leftovers just fine...however when I tasted it, it wasn't spicy at all and needed a little kick. I think it was the jalapeno I got, it didn't seem hot when I was chopping it, which has been a problem I have noticed in the past...anyway I added some cayenne a little garlic salt, and black pepper, and we all loved it. Will make again for sure!

Slow Cooker Chicken Cacciatore

I just wasn't crazy about this. It was ok. I might make it again, if I have all ingredients on hand and need an easy crock pot, weeknight meal, but I think it just lacked something. I sauteed my veggies b/c I prefer them that way in most crock pot dishes...esp the onions. Other than that, I made it just as directed, and it just needed a kick. I added some salt/pepper, and cayenne....but it still just needed a bit of something else. Not bad, just felt like it was missing something.

Monterey Ranch Chicken Bake

I thought I had a packet of dry ranch dressing mix but it was dry Italian dressing mix (oops) however I did have some regular ranch dressing, and this really looked good. SO, I decided to mix the ranch dressing (I eyeballed it, probably about 3/4 a cup) and the cheese, dip the chicken in that and then dredge in the bread crumbs. I only had the Italian seasoned bread crumbs, but I didn't think it mattered too much. My son, who can be picky about meat sometimes, LOVED this! It's a winner and will make again! Thanks for a great, and easy recipe!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

10 cups of water is way too much in this, and I didn't even use that much. I had to turn my crock pot on high for over 2 hours after I got home without the lid, AND add flour to thicken it up a bit, and even that didn't help much. However, this does have potential. I used about 6 cups chicken broth, and 2 cups water as the base, I used smoked sausage b/c it's what we had on hand that I needed to use up, and I left out the jalapeno. Lastly, I used 2 bay leaves, and omitted the basil b/c it just seemed more authentic that way. I am thrilled with how it tastes, and will make it with my changes again, however with less broth/water. Maybe a total of 5-6 cups. If I made this as written, I would probably rate it less (so I guess I'm cheating) b/c I don't think the basil would be the same as the bay leaves, and I think the broth added a lot of flavor, but with the changes I made I am giving it a 4 even though I would like it less "soupy".
