About this Cook
I am Stacy and my son is Huxley. That's how I came up with HUXTACY (Hux + Stacy). Nightly family dinners were very important for my family growing up. I wanted to continue the habit with my son. This site has been SO HELPFUL! It has made what could have felt like a chore sometimes much more enjoyable for me.
My favorite things to cook
It seems that the longer it takes to simmer....the more I enjoy the end reward. That is one of the few times that Montana winters can come in useful. Soups and chili are a great meal. Otherwise I would love to eat mexican food everyday.
My favorite family cooking traditions
Anchovies....Love them! We always got them on special occasions. Not until I was an adult did I realize that was not what they were serving "uptown". But I still love them.

Blender Hollandaise Sauce
Tasted so perfect on first try that I decided to add a dash more mustard....Woops...don't change what already works! Follow exactly and it will be exactly as intended. Lesson learned!

Heavenly Halibut
Excellent! Followed Recipe EXACTLY. Note the "Broiled Grouper Parmesan" recipe is much the same, but the Green Onions added some great texture. I also added a few bread crumbs and garnished with fresh parsley...it was beautiful on the table. Used the "Blue Hake" fish from the Schwan Man... It was a perfect dinner!

Grandma Ople's Apple Pie
Helped me make sure my pie wasn't under cooked like last time by cooking ingredients on the stove top first!
