Wake-Up Casserole

I took the advice of others here and allowed the hash browns to thaw overnight in the fridge, then i baked them for 10 minutes before topping with the other ingredients. I added a little bit of chopped red onion and I had to use spicy mustard in place of the ground mustard. Delicious!

Nanaimo Bars I

I used almonds instead of walnuts and instant vanilla pudding instead of the custard. Very yummy and easy to make. My secretary's brother is going to bring some instant custard from Canada next month, so I'll be trying this again with that ingredient.

The Best Chicken Fried Steak

We didn't much care for this recipe. Maybe it's because I didn't use a cast iron skillet that the crust didn't want to stick. Or maybe it's because I omitted the Tabasco. Either way, my husband asked that I not try this one again.

Stuffed Green Peppers I

Ray's Chicken

Wow. It was very tasty. I cut the recipe in half and marinated the chicken for only 2 hours. I was a little leery of including the rosemary (since it's not a preferred herb of mine) but it ended up being very mild, combining well with the other flavors and complimenting the otherwise teriyaki taste. I'm only rating it a four because it didn't knock my socks off, but it was really good and I plan on making it again.

Conchi's Sangria

Tasty! I prepared 24 servings, but still added an entire 2-liters of lemon-lime soda. I once tried a seasonal fruit sangria that a national restaurant chain was promoting, and this is just as tasty as that sangria, if not more so. But way cheaper! Now I can buy a pair of shoes AND enjoy my sangria!

Fresh Strawberry Upside Down Cake

This was fun to make with my hubby and step-daughter. It tastes better after its refrigerated. If I make it again, I'll add a little sugar to the strawberries if they're tart. This will be a good holiday treat because of it's color, but it's not going to enter my normal dessert rotation. I'm just too much of a chocolate gal!

Grilled Potatoes and Onion

I've made this twice this week - once with just regular potatoes and white onion and once adding fresh baby green beans to the mix. I tossed the veggies with the olive oil and salt/pepper before placing it on the greased foil. It has turned out perfectly both times, and considering my grilling talents, it must be universally fool proof.

Best Steak Marinade in Existence

My husband said that if a steakhouse had served him that steak and charged him $20, he'd be happy to pay it. Our two steaks cost about $12 and I had all the remaining ingredients in my pantry, so I figured I earned myself a new pair of shoes! (I didn't have garlic powder, so I used fresh pressed garlic.)

Dijon Grilled Pork Chops

I have used my kid's apple juice box (like Juicy Juice) and have marinated for as little as half an hour. We've used bone-in chops and boneless chops. We keep a reserve of marinade for a dipping sauce. It has become a summer grilling favorite.

Cake Balls

I made these for Educators' Week at my children's school, and I have been bombarded with requests for the recipe. I use Duncan Hines Butter Chocolate Cake Mix and Duncan Hines Dark Chocolate Fudge Icing. I pop them into the freezer for a few minutes, then drizzle them with white chocolate coating. I get rave reviews every time! NOTE: These do not hold up well at picnics. They're better for gatherings inside with air-conditioning.
