Homemade Black Bean Veggie Burgers

Reviewed: Jun. 2, 2012
These are pretty good burgers. I have never made a veggie burger before so I have nothing to compare it to however I will make these again. My family wanted the recipe and I know it's tons better for us than a big chunk of red meat. This is going to fit nicely into my new healty lifestyle. I did follow others suggestions and drained everything as much as possible before adding it all together, I also tried to freeze them before grilling them but didn't have enough time to make much of a difference. It was tough to grill on foil, I may try to bake them next time. Another thing that differs from red meat is that these dont shrink when cooked. I made them rather large thinking they would get smaller. They were better than I expected. Thanks for the recipe!

So good! I used one can of cream of mushroom and one cream of chicken. I sauteed onion, garlic and mushrooms before adding to the soup. This was a huge hit! Thanks for the keeper.

Stuffed Shells III

Reviewed: Jan. 3, 2012
Best stuffed shell recipe ever! I also browned some ground beef, onion, and garlic to add to the canned sauce. I only had American Swiss cheese but it turned out great. I always use cottage cheese instead of the expensive stuff. I followed the suggestion of piping the cottage cheese mixture into the shells from a zip lock bag, very quick and not at all messy. My Husband says "Finally, my kind of dinner!" We had the leftovers for lunch and dinner again tonight. This will not last in the fridge. Thanks for the great recipe!

Mushrooms with a Soy Sauce Glaze

Reviewed: Dec. 28, 2011
So Simple and delicious! I will be making this again and again. I didn't really taste the soy sauce like I thought I would. Make sure not to crowd your mushrooms when you cook them. I like to slice the smaller white mushrooms in half and brown each flat side. Thanks for the keeper!

Caramelized Red Bell Peppers and Onions

Reviewed: Nov. 24, 2011
I usually don't care for bell peppers, never buy them. Mother sent me home with some after a day of canning, so I had to use them. I used this recipe as a guide for a great suprise! First I roasted the peppers on a foil covered cookie sheet at 450 for 30 min until the skins were blackened. I peeled and sliced them into long strips 1/2 inch thick. Using only Olive Oil I sauted my white onion untill slmost see through, then added the peppers, seasonings and some garlic powder. I decided to toss in a few diced mushrooms, and a roma sliced lengthwise as well. I sauted for about 10 min and it was perfect! I was going to take this with me to Thanksgiving, however I worry there wont be enough for everyone, as good as it is I had better leave it here for myself :) later I will slice and saute some steak strips and make a fajita! I have never thought peppers could taste so good. I never stick to the recipe and this time I am glad jumped! Thanks for sharing!

Country Apple Dumplings

Reviewed: Oct. 24, 2011
My son says "Extremely, Amazing!" My whole family enjoyed these! This is going to be on the Thanksgiving table with my cola ham! These end up being the perfect size serving, it's about as much as half a piece of pie. It's soft on the bottom and flaky on the top, the apple inside turns into this wonderful pure apple pie filling that you can cut through with a spoon. I used only half the butter, it was perfect! My son and I had so much fun making these, I can't wait to share the recipe.

My Crab Cakes

Reviewed: Jun. 6, 2011
This was my first time making crab cakes and it was a hit. I did follow another reviewers advice and baked them at 350 for 20 min rather than frying. I used one sleeve of Rits crackers and sauteed some white onion with the green. I didn't have Ol'Bay seasoning so I used my favorite season all, Head Country. I plan to experiment with this one a bit. Thanks for the recipe.

Sloppy Joe Sandwiches

Reviewed: Jun. 5, 2011
Wow! This is the best! I rarely review, however I wanted to be sure and help the next person making a decision on Sloppy Joe night. This is the recipe to try! The only small change I made was adding 1/4 C my fav steak sauce, (Country Bobs) and 1/4 C of my fav BBQ Sauce, (Sweet Baby Rays) and only 1/2 C katsup instead of a full cup of katsup, along with a dash of hot sauce. This had everyone saying mmm mmm mmm! I had everything on hand and it was a hit! Thanks

Baked Potato Soup I

Reviewed: Mar. 13, 2011
This was awesome! We followed some advice from the reviews and used the bacon grease to saute the white onions (which we used instead of green), and a teaspoon of minced garlic. We added some broccoli with the rest of the goodies and 2 cups of chicken broth when we added the milk. This was a keeper, super delicious!
