Aunt Anne's Coffee Cake

WOW! I make this for work all the time and it's never failed to please. So easy and straightforward, absolutely nothing needs changed or tweaked. Thanks for the great recipe!

Apple, Carrot, Or Zucchini Cake

I really liked this cake because it was very easy to alter to suit my needs. I used half whole wheat, half regular flour, added golden raisins instead of pecans and used applesauce instead of oil, measure for measure. i also found that the sugar measurement is high when using apples, as some reviewers mentioned (i haven't tried the zucchini or carrot versions yet, though) so i cut the sugar down to 3/4 cup. Overall, I was very impressed with this recipe and it's definitely a keeper!

Lentil Soup III

YUMMY! This was so good, it's now one of my staples! I was a little scared that the cumin was gonna make it tast like chili but that was not the case at all. I added two cloves of garlic but added a little garlic salt once it was done. Definitely a keeper!

Kalua Pig in a Slow Cooker

This is my first slow cooker experience and I'm hooked! I followed the instructions to the letter (surprisingly, the Hawaiian salt was easy to find @ Fresh Market) and it turned out perfect. The meat was tender and the juice made a fantastic gravy with the addition of a little flour simmered on the stove. Leftovers were great with some barbecue sauce on rolls. I shut the cooker off after about 14 hours but an hour either way wouldn't have hurt it. I was able to take the bone out without any effort as the meat just falls away from it. The only thing I'll do different next time is put a little more liquid smoke just for my own taste. Overall, thanks for a fab recipe!

Ranch Style Oyster Crackers

I love these crackers! So easy! My variation on these (I don't always have the ranch mix on hand) is to use the same amount of oil and substitute dry Parma Rosa sauce mix from Knorr for the ranch dressing and the herbs. You can then sprinkle some italian seasoning on them. It gives the crackers a pizza flavor that is a nice change if you make these as often as i do. Brilliant stuff!
