Colcannon

Reviewed: Mar. 19, 2009
Made it as a side for St. Patrick's Day dinner. The potatoes, cabbage and leeks blended together wonderfully. An easy and very forgiving recipe. Will definitley make again!

Hot Buttered Rum Batter

Reviewed: Oct. 11, 2009
I LOVE this batter. I make sure to have it in the freezer during the fall and winter months. We use it with rum, apple cider, butterscotch schnapps (my personal favorite) and coffee. DELICIOUS!

Cheddar Biscuits

Reviewed: Oct. 8, 2009
These were delicious and so easy! The next time I make them I think I will try using sharp cheddar as the medium cheddar flavor got kind of lost in the biscuit.

Crispy Rosemary Chicken and Fries

Reviewed: Nov. 4, 2009
This was so delicious, no one had any idea it was so quick and easy. I plussed up the herbs a bit and added about half of the rosemary, oregano and garlic powder to the bowl while I was tossing the chicken and potatoes with the EVOO and then sprinkled the rest on top. The fresh herbs were great but I will try it with dried herbs too as I don't always have fresh herbs on hand. Watch the cooking time; mine was done in about 40 minutes.

Grilled Marinated Shrimp

Reviewed: Aug. 24, 2009
What a great recipe! The marinade was easy to throw together (with ingredients I almost always have on hand -- a definite plus!) and the flavor was excellent. I will definitely be making this again!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Reviewed: Apr. 24, 2009
Yum! This was delicious! I love how easily adaptable it is. You can use more or less of the mushrooms and aspargus to fit your taste and use whatever flavor of Boursin cheese that strikes you. I also think it would make a great sauce for steak and/or chicken -- eliminate the aspargus and pasta and reduce the chicken stock (to 1/2 cup maybe?) and you have an awesome (and easy) portobello mushroom sauce. Great recipe!

Slow Cooker Beef Stroganoff I

Reviewed: Feb. 18, 2010
We really enjoyed this version of beef stroganoff. Next time I will use sour cream rather than cream cheese as I prefer the sour cream flavor. Adding the mushrooms at the end was a great idea; they really cook down though so err on the side of adding more rather than less.

Chicken Stew with Dumplings

Reviewed: Mar. 9, 2011
This is a wonderful recipe! In my opinion it tasted better than most of the shortcut recipes (canned soup, refrigerated biscuits, etc.) with very little additional effort. I used poultry seasoning rather than the basil and thyme because it was what I had on hand. Other than that, I followed the recipe exactly and it was delicious!

Monkey Bread I

Reviewed: Apr. 13, 2009
One of my new favorite breakfast treats! A bundt pan works great. Like others mentioned, the bisquits do puff up quite a bit during cooking so be sure to take that into account to avoid possible overflow.

Beef Taco Skillet

Reviewed: Mar. 19, 2009
One of my favorite casserole dinners. I prefer corn tortillas over flour and add more cheese than the recipe calls for. It is easy to tweak to your preferred taste.

Our go to cornbread recipe. We use jalepenos instead of chiles. The longer it cooks, the better.

Wisconsin Native's Beer Cheese Soup

Reviewed: Nov. 3, 2009
This soup was delicious! My one complaint is that even after 30+ minutes of simmering the veggies, they still maintained a bit of a bite. Next time I will cook the veggies until tender then continue with the recipe as written. I'm sure I will be making it again soon as my husband has requested that we have it on a weekly basis.

Mrs. Sigg's Snickerdoodles

Reviewed: Mar. 19, 2009
Snickerdoodles are my husband's favorite cookie and this recipe never disappoints! Be careful of the cooking time. I've found that they turn out perfectly if I pull them out of the oven before they seem quite done. I also add cinnamon chips or toffee pieces on occasion for something a little different.

Sweet and Sour Meatballs II

Reviewed: Mar. 25, 2009
I had no idea what to expect with this dish considering the variety of reviews it received, but I was pleasantly suprised. I followed the recipe exactly but substituted regular vinegar for the cider vinegar. I also added some chopped up onion and green bell peppers toward the end of the cooking because to me a sweet and sour dish isn't complete without them. The sauce turned out great and would be wonderful with other foods as well (chicken wings, egg rolls, etc.).

Pineapple Crisp

Reviewed: Aug. 30, 2011
My new "go to" dessert! I even made it in individual ramekins for a dinner party. One note is the original recipe says to combine the topping until smooth. With one egg and all of the dry ingredients, I don't know if you'll ever get something smooth. Mine turns into a crumbly mixture so I use all of the butter or else I don't think it would cook properly.

Spicy Garlic Lime Chicken

Reviewed: Mar. 19, 2009
One of our favorite chicken recipes! I use thighs instead of breasts and put the spice mixture both on the outside of the chicken and under the skin. Because of this I usually quadruple the spices and find I have just enough spice to generously coat six thighs. I also wait and add the butter at the end so the chicken doesn't get overly brown during cooking.

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 19, 2009
Delicious corned beef! I halved the recipe but wish I had made more so we would have had some leftover. I put everything in the crock pot, cooked it for 10 hours on low heat and it was great!
