Chile Rellenos

This was alright. I enjoyed the basic taste but I found the batter to be bland and I recommend battering them twice before frying. Sauce is a must with this recipe. Enchilada sauce worked just fine. All in all I prefer to get these at a restaurant because they didn't wow me enough for the amount of work.

Vegetarian Chili

Excellent blend of flavors! I added carrots and substituted fresh garlic for the powder then sauteed all that with the onions prior to adding the rest of the ingredients. I also added a little bit of wild rice to round out the protein and about half a tablespoon crushed red pepper flakes. I used seitan instead of crumbles and added that half way through. It came out as if it had slow roasted beef tips in it.

Lower Fat Fudge Brownies

Excellent brownies! I used the suggestions Jen gave and 3/4 cup sugar instead of 1 cup. I think the balsamic really helped.

Easy Morning Glory Muffins

Delicious! I substituted all applesauce for the oil, used only whole grain flour and didn't add any coconut. They came out great. Perfect when paired with a small home-made smoothy for breakfast. I will be making these again :)

Asparagus Lasagna

I chose to blanch fresh asparagus, add Vidalia onions to the garlic saute, use half Better Than Bouillon stock in place of half the milk and use Silk original for the other half. I also used fresh herbs in the white sauce and for flour 1 Tbsp whole grain, 1 Tbsp chick pea flour. Lastly I added some cheese into the sauce at the very end then ground some fresh pepper into it. When layering I put all the asparagus in the middle and under the top layer of cheese I sprinkled green onions and tomato. I omitted the ham to make this vegetarian and mixed cheddar cheese in with the mozzarella.

Aunt Norma's Rhubarb Muffins

Delicious and fluffy! I used one cup rhubarb and one cup strawberries and added one tablespoon flax seed. I also made my buttermilk out of silk and vinegar and used apple sauce in place of oil. For the topping I lightly sprinkled cinnamon and sugar but no butter.

Vegetarian Cottage Cheese Patties

This tasted and felt surprisingly like a hamburger. I used the breading before frying which I believe helped with texture. The basic recipe is mild enough that you could easily add other seasonings to customize or put it on a bun and dress it like a burger. I felt full and healthy after munching on these!

Curried Mustard Greens with Kidney Beans

Excellent taste. I followed some suggestions using olive oil instead of ghee, soy milk instead of half and half and garlic and onions instead of shallots. I also added a pinch of garam masala and used 6oz tomato paste mixed with water to make "tomato sauce." Delicious and healthy.

Perfect Pie Crust I

This crust was easy to make, to create a lattice with and to cut once it was baked. I used powdered sugar instead of regular sugar and it worked well. The taste was slightly sweet, with a thick, almost flaky or fluffy texture. Delicious.
