Candy Coated Pecans

I use two egg whites beat until just frothy, half brown and half white sugar. Add cinnamon. Bake 1 hr @250, stirring every 10-15 minutes. YUM!

Broccoli Chicken Casserole II

Pretty good basic recipe. It does need some tweaking. We added a lot more curry, and made some other adjustments, but it is a good starting place for chicken and Broccoli.

Really good recipe! I made adjustments as others suggested (1 tsp cinnamon, 1 tsp nutmeg, 1 tsp vanilla, an extra banana) turned out nice. I think I would prefer them as pancakes, not fried, but they were yummy!

Cranberry-Pumpkin Cookies

I made this once as the recipe recommends and it was good. I made it again with my own adjustments and it was 100x better. first I used 1 1/2 cups of flour and 1 cup of old fashioned oats. I more than doubled the cranberries and it could still have more to make it better. I also tripled the orange rind. I took 1 1/2 cups of pecans and crushed them into different sized chunks to add more texture and omitted the walnuts. I increased the pumpkin to 1 1/2 cups and added a few dashes of pumpkin pie spice and a bit more cinnamon than called for. finally, I added a generous handful of coconut. Next time I will try substituting applesauce for the butter and possibly honey for the sugar to make these into a yummy on the go fall breakfast rather than a cookie. Our whole family LOVED these with these adaptations.

Chocolate Chip Orange Zucchini Bread

MMMM yummy! I have made this as a 'thank you' gift a couple of times now. I doubled the orange zest, used milk chocolate chips which I cut back to 1/2 cup, put an orange glaze on the top while still hot and substituted applesauce for the oil. First time I made it I used the oil, second time 1/2 and 1/2 and third time 100% apple sauce. We liked it best with the applesauce, and as a bonus, it is healthier too! YUMMY!

Deb's Scallops Florentine

This was really good! I did make my own adjustments though. I took the advice of others and did not poach the scallops, just put them in the sauce and cooked for 25minutes. I also combined half shrimp and half scallops. I used Asiago cheese as that is our preference rather than the Parmesan cheese. I left out the mozerella this time but I think I will try it next time around. I also used fresh spinach since I never buy frozen. I added some chopped brown mushrooms and artichoke hearts. I omitted the old bay and instead used some garlic, onion, pepper and salt as well as a tiny dash of paprika and the dish came out beautifully! even my daughter who says she hates mushrooms AND cooked spinach all the time said she loved it. I will be making this again this Sunday with the mozerella cheese added and see which we prefer. I served this over a bed of penne pasta.Thanks for a great recipe!

Sea Bass Cuban Style

This was a great recipe! I held to the recipe except that I baked the fish (broiling for the last few minutes for a crispy golden exterior) added black beans, used extra red pepper flakes and cilantro and served over a bed of jasmine rice. It was great! We served it to company and they asked for the recipe. I will definitely make this recipe again!
