Colleen's Slow Cooker Jambalaya

Reviewed: Aug. 9, 2015
Yum! I made this exactly as outlined - except it was done after 5 hours on low in my crockpot. Outstanding! Made it on a Sunday. Cooled down, popped it into a pot and put in fridge. Came home from work Monday, cooked up some rice - voila! Dinner was ready! I'll be making this - a lot! Thanks for posting!

Baked Denver Omelet

Reviewed: Apr. 12, 2015
Yum! Just made this forSunday breakfast. Used red bell pepper instead of green (it's what I had on hand), and used turkey ham. Very easy and quite tasty! I would think the possibilities are endless..... you could use tomatoes, mushrooms, and I'm thinking asparagus! Could easily be served to guests for brunch. Thanks for posting this great recipe!

Turkey and Quinoa Meatloaf

Reviewed: Mar. 21, 2015
I've made turkey meat loaves before, and quite honestly, they were very bland. Had some ground turkey on hand - thought I'd give this one a try. Followed recipe exactly-- turned out great! Very flavorful! I will search no more for a great turkey meatloaf recipe - I found it here!

Delicious Egg Salad for Sandwiches

Reviewed: Mar. 21, 2015
Yum! Had some hard-boiled eggs to use up, and this fit the bill. Husband requested egg salad sandwiches for dinner on a Friday during Lent - nice change from the usual fish dinner. I, too, added a dash of paprika, and some chopped celery for some crunch. Husband loved it! Thanks for posting! I'll be making this one again!

Apple Crisp II

Reviewed: Jan. 10, 2015
Thank you, Diane, for such a great recipe! I had a bowl of a Granny Smiths that were becoming a bit too ripe - had all the ingredients for this on hand, and vanilla ice cream in the freezer, to boot! YUM! Do not change a thing! Perfect, as is! Hardest part was peeling all of the apples. Well worth it! I will be making this one often!

Cabbage Fat-Burning Soup

Reviewed: Jan. 1, 2015
Yum! Had to use up some veggies in the fridge, so opted to make this soup. Followed directions, except used Dry Beefy Onion soup mix (all I had), used more beef broth in lieu of water, and used Spicy V-8 tomato juice, as we like a lot of spice. This soup is great! Bonus that it is healthy, too! Thanks, Nell! I'll be making this frequently!

Chili Seasoning Mix II

Reviewed: Mar. 9, 2014
I'm a convert! Will never buy packaged seasoning again! This was fantastic. I used 2 Tbs. of the spice blend per 1.5 lbs. of ground turkey. It was perfect. Also - as others suggested - I did not include flour; it's not needed. Thanks so much for posting. This is my new "go-to" chili spice blend!

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 1, 2014
Fantastic! You can't go wrong with this one. I had some chicken tenderloins that I had cooked, sprinkling them with oregano while they were cooking. I keep them in the fridge to toss into salads. Since it's a very cold day, I wanted soup and this recipe fit the bill. I used the tenderloins, didn't add the oregano since the tenderloins included it. I added several sliced mushrooms, and some leftover canned Italian green beens? I also used some chopped fresh basil. Honestly, this tasted like it cooked all day to perfection! I think you can add whatever veggies you like and it will turn out just fine. Thanks for sharing, MARYVM! I will be making this one often!

Cranberry Sauce

Reviewed: Nov. 30, 2013
Don't laugh. I was the gal who always bought the canned jellied cranberry sauce. This is the first time I ever made it myself, and I must say, I am now a convert! It was sweet, with just the right amount of zing! This will now be my go-to cranberry sauce recipe. Simple to make. Thanks for the recipe!

Simple Baked Beans

Reviewed: Nov. 3, 2013
Not sure what happened here. I am a reasonably good cook and followed the recipe to a "T". When I took the covered casserole out of the oven after 3 hours, all liquid was absorbed, and the beans were burnt. Lots of burnt black in my casserole. The problem is not my oven - I've never had a problem before and recipes typically turn out the way they were intended. Sorry! Won't be making this one again.

Blueberry Gelatin Salad

Reviewed: Jun. 7, 2008
Terrific! I was looking for something easy and coo to "throw together"; this fit the bill. I used 1 1/2 cups fresh blueberries and 1/2 cup water instead of the canned blueberries. I also sprinkled 1/2 cup finely chopped walnuts on top, to add crunch. Wiull definitely make again!

Microwave Peanut Brittle

Reviewed: Dec. 15, 2007
Can't get any easier than this! I have never made peanut brittle; this was my first attempt. Took me a whopping 10 minutes, and the results were fantastic!!! I used 2 Tbs. butter as other suggested. Easily peeled off the baking sheet. Much better than any brittle I've tried in the past. Thanks so much for the recipe!!

Tommy's Ham Casserole

Reviewed: Nov. 24, 2007
Well, I made this with my leftover ham. Made some adjustments as others suggested: included 1 cup ea. sauteed onion and celery; used 2 cans cream of mushroom soup mixed with 1/2 soup can of milk (plus a few extra TBS of milk); pinch of garlic powder; dash of pepper; small squeeze of spicy brown mustard. For the cheese - I used 1 cup shredded cheddar, and 1 cup shredded pepper jack. I also used crushed Ritz crackers on top of the casserole. When it was done, I tasted it before taking out of my roaster oven. Fantastic! BUT.... when I removed it from the roaster, my casserole dish slipped from my hands, and down went the casserole all over my kitchen floor! What a mess, coupled with breaking my favorite dish!! Glad I was able to taste it before it ended up all over the floor!! I think the pepper jack cheese gave it the extra "zing" that some reviewers said it needs. I will be making this again tomorrow.

Slow Cooker Chicken and Dumplings

Reviewed: Jul. 28, 2007
If I could give this 6 stars, I would. So easy, even a caveman can do it! I placed 4 frozen chicken breasts in the crock. I then added 2 cans of fat-free cream of chicken soup. I covered it with 1 can of chicken broth, as others suggested. I cooked it on low a total of 10 hours. After 7 hours, I added 1 can of mixed peas and carrots, and topped it with regrigerated crescent roll dough, torn into small pieces. It cooked the remaining 3 hours, and all I can say is - fantastic! I will definitely be making this often. My husband LOVED it, and he is very picky! Thank you, Janiece!

Pizzelles II

I received a pizzelle iron as a gift. A friend gave me her recipe for pizelles, and hers always get rave reviews. But her recipe requires the batter to chill overnight. I saw this recipe and thought I'd give it a try. A+++++! It was so easy, and my pizzelles turned out perfect! Thanks, Betty!

This was my first attempt at a pot pie -- I couldn't have been more pleased. Turned out fantastic! I added a dash of poultry seasoning, as well as some chicken bouillon granules. Used a store pot frozen pie shell. Yum! I will make this often!
