Pumpkin Oatmeal Chocolate Chip Cookies

These are delicious and make lots for sharing! Added some extra spices as others did (nutmeg, ginger, cloves) and added 1/2 cup walnuts, otherwise, followed to a "t". I was a bit concerned after I got all the wet blended together; the mixture looked a bit curdled. I knew that all my ingredients were fresh, so I soldiered on and it all went fine. Next time I may try a combo of dried cranberries/raisins/walnuts, even though the chocolate and pumpkin flavour is pretty awesome. Thanks for the recipe!!

Creamy Brown Rice Pudding

Used brown jasmine rice - quicker cooking than regular. Added one egg, 1/2 cup brown sugar, raisins, and vanilla instead of almond extract. Results were DELISH! And it was all finished in about 75 minutes total. Thanks for a great recipe!

Blueberry Muffins

Made these a bit more healthy by using WW flour, applesauce instead of oil and brown sugar instead of white. They were delicious w/ these changes which is a rarity. Even my husband, who normally isn't a big fan of my "healthy" muffins, loves these! Thanks so much.

Lemon Gold Cake

Fabulously textured and zesty lemon flavour. I subbed the 1/8th cup of milk for freshly squeezed lemon juice as recommended by others and find it a good change. I used the cream cheese icing from the Carrot Cake III recipe on this site the 2nd time I made it. I used lemon extract instead of vanilla and added some zest and a wee bit of lemon juice. I found that it was much thicker than the frosting in this recipe. It was deliciously lemony, but a bit too runny.

Middle Eastern Rice with Black Beans and Chickpeas

LOVED this dish. skipped the meat - didn't think it was necessary with two kinds of beans. sauteed the onion and garlic together with the spices to start with. added a couple of sliced carrots at this stage too. threw in the beans along with some frozen peas and corn to bump up the veg factor. also toasted the pine nuts to bring out the flavour. love this dish - made lots for leftovers too.

Middle Eastern White Beans

made this in my creuset saute pan. sauteed the onion and garlic with the spices to start, then added the tomato paste, and then the rest. i didn't have pimento sauce, so i whirred up some jarred roasted red peppers to substitute. we also like things a bit spicy so i doubled the cumin and added some cayenne. served with brown rice pasta and a side of steamed broccoli - DELICIOUS!!!!!!!!!!! this is going in the rotation for sure! thanks for a great recipe!

Can't Tell They're Low-fat Brownies

I replaced the sugar with Splenda, the prunes with apple sauce and used whole wheat flour. They were awful ... don't even resemble brownies. Given all of the replacements I made the rating should be taken with a grain of salt, but I am thinking I will be sticking with my good ol' fashioned full fat recipe in the future. Thanks for inspiring me to try, though ... I think I am just a sucker for fat and real sugar when it comes to brownies!
