Pumpkin Oatmeal Chocolate Chip Cookies
These are delicious and make lots for sharing! Added some extra spices as others did (nutmeg, ginger, cloves) and added 1/2 cup walnuts, otherwise, followed to a "t". I was a bit concerned after I got all the wet blended together; the mixture looked a bit curdled. I knew that all my ingredients were fresh, so I soldiered on and it all went fine. Next time I may try a combo of dried cranberries/raisins/walnuts, even though the chocolate and pumpkin flavour is pretty awesome. Thanks for the recipe!!

Creamy Brown Rice Pudding
Used brown jasmine rice - quicker cooking than regular. Added one egg, 1/2 cup brown sugar, raisins, and vanilla instead of almond extract. Results were DELISH! And it was all finished in about 75 minutes total. Thanks for a great recipe!

Lemon Gold Cake
Fabulously textured and zesty lemon flavour. I subbed the 1/8th cup of milk for freshly squeezed lemon juice as recommended by others and find it a good change. I used the cream cheese icing from the Carrot Cake III recipe on this site the 2nd time I made it. I used lemon extract instead of vanilla and added some zest and a wee bit of lemon juice. I found that it was much thicker than the frosting in this recipe. It was deliciously lemony, but a bit too runny.
