Mom's Favorite Baked Mac and Cheese

OMG!!! This is the BEST mac and cheese I've ever made. I only veered slightly from the original recipe. I used 12 slices of white processed american cheese (singles), I left out the onions due to my son's aversion to them, added about a 1/2 tsp. of sea salt and a couple shakes of garlic powder. I also used melted butter/bread crumbs on top. It's nice and creamy with good flavor. The true test though will be if it reheats well. I'll update when I reheat.

Dutch Apple Cake

I think I'm in love! This is the moistest cake I've ever had. It has the consistency of a coffee cake, and would be great for breakfast, but I have a feeling it won't last till morning! I made a few changes, but nothing major. I added about 1 cup of grated apple(1 large macintosh apple) and about 2 tsp. of cinnamon to the batter and used brown sugar instead of white sugar for the for the topping. The piece I sampled was still warm when I tried it, can't wait to see how it is once it's cooled completely. I would guess that it will just as wonderful as it was warm. I would give it more stars if possible.

Garlic Cheddar Chicken

Excellent! I made this for my sister and her family who needed a good dinner after driving 5 hours to get here. It was a big hit. Everybody liked it. The only substitution I made was using grated parmesan instead of fresh shredded parmesan, and it was still wonderful! The chicken breast was tender and moist and had great flavor. If you're looking for a new spin on the same ol' chicken breast this is quick and delicious! I'll definately be making this again!

Stuffed Peppers

Very good, quick and easy recipe. My peppers were still pretty firm after baking for an hour (I didn't cover them) so I kicked the oven temp. up to 400 and gave them another 15 minutes. Very tasty...in fact, I had one for dinner last night, 1 for lunch today and again for dinner this evening...maybe I should freeze the rest!

Zesty Porcupine Meatballs

Excellente! I made them *almost* exactly as the recipe showed. But I didn't have onion salt, only onion powder, so I added some onion powder and about 1/2 tsp. garlic salt. I also used dried parsley. I'll definitely make again! Will probably bake them next time, then transfer to a pan to simmer. I made a double batch and it was quite tricky turning them to brown on all sides...but the end result was wonderful. I served over white rice. The sauce, as simple as it was, was a nice tangy zip.

I love these. Very moist and flavorful. I only got 10 medium-sized muffins from this recipe. I'll probably double it next time and make 12 large muffins.

Polly Welby's Excellent Chocolate Mousse

Excellent is an understatement. Soooo easy and delicious! I used 8 ounces Baker's brand semisweet chocolate and it was just perfect! Deep chocolate flavor and not too sweet. I put the mousse in single size pre-made graham cracker crusts, chilled and topped with whipped cream and a drizzle of chocolate sauce. This was a huge hit with the kids and the hubby. This is so easy, I'll be making it quite often!

Easy Pumpkin Muffins

I made this with a yellow "butter recipe" cake mix and a 15 oz. can of Libby's pumpkin and they came out absolutely delicious! I followed the recipe exactly with the exception of leaving out the ground cloves. They weren't dense as others have said. I made 1 dozen, so they were good sized muffins and baked them 25 minutes and they were perfect. I'll try this with the spice cake mix next...and who knows where it will go from there. Great easy recipe!

White Cake Frosting II

A very good basic frosting recipe. I doubled this recipe for a 2 layer cake. I used half butter flavored shortening and half regular and it was still white, despite the yellow coloring of the butter flavored shortening. I colored some with food dye for decorating the cake. Since I'm not a cake decorator, I just did the basic piping and wording. I had plenty of frosting left over. To me, this tastes just like the frosting you would get in a grocery store bakery cake. Very good for my purposes. Can't wait to try to make chocolate frosting and more from this recipe. I don't think I'm ever going to buy canned frosting again!

Best Chocolate Chip Cookies

This is my new favorite chocolate chip cookie recipe. The made the dough exactly as the recipe stated. When I took the first batch out, I noticed that they didn't sink and pretty much looked they did going in the oven...so the next 3 batches I pressed them down after dropping the dough on the cookie sheet. These are perfectly crispy on the outside and chewy on the inside, not too thick and not too thin! I got 4 dozen good sized cookies out of this recipe. The recipe states it yields 2 dozen, those must have been huge cookies!

Lasagna Toss

This is a great recipe, easy to prepare and delicious. I used Ragu Tomato, Onion and Garlic sauce. The only change I made was adding about 1/4 cup of shredded parmesan cheese to each layer of cheese. I cooked it 25 minutes covered and another 15 uncovered until the cheese was melted and browned on the edges. I will definately make this again. The only change I may make next time is using more cottage cheese.

Tartar Sauce III

I made this tartar sauce last night, and I loved it! I used a little less than 1/4 cup of onion though, and didn't add salt or pepper...but it was still great..so quick and easy!

'Got Some Crust' Macaroni and Cheese

THE best Mac and Cheese I've EVER had! I didn't have white pepper so I used black pepper, or tobasco, I used Red Hot buffalo sauce...it was delish! I can see me making this often. Can't wait to see how the leftovers reheat. Mmmmm...thanks!

Three Ingredient Peanut Butter Cookies

I made these cookies almost exactly as the recipe states..except I got a little anxious about the reviews that were saying the peanut butter flavor was overwhelming. So after I used a fork to press the cookies, I sprinkles them lightly with sugar before putting them in the oven. I baked for 10 minutes (at 8 minutes they hadn't spread at all) and took them out. These are the best peanut butter cookies I've ever had! Yummy!

Tomato 'n' Shrimp Pasta

I made this recipe *almost* exactly as written. The fresh herbs I bought were basil and oregano (pasta blend) so I used fresh oregano instead of dried and I used Fettucini instead of spaghetti. The only other change was I added a touch of garlic powder to the sauce at the very end, I like garlic and if it weren't so close to being done at that point I would have added fresh garlic. This was amazing! I'll definitely be making this again. Thanks for a great easy recipe!!

Three Cheese Manicotti II

Excellent!! This was my first attempt at manicotti and it was a complete success. I only modified slightly by adding 1 cup of frozen spinach that I chopped, and about 2 Tbsp of dried chopped onions to the cheese stuffing. I took another reviewer's advice and removed the water from the burner after it boiled and added the manicotti shells and let them sit in the water for 5 minutes then stuffed. I also used the ziploc bag trick to stuff them more easily. I baked them for 20 minutes with just the sauce on them (Because they were still very firm) then followed the rest of the recipe by baking 15 mins with the mozzarella and 10 after adding the parmesan. They came out absolutely perfect! I made 10 manicotti and have enough stuffing left to make 10 more when the mood strikes. I froze the leftover stuffing...hope it comes out just as well when I pull that out of the freezer. Great easy recipe!

Pumpernickel Spinach Dip I

This is excellent and sooo easy! I made a double batch. Bringing it to an office luncheon tomorrow. TIP: I found the dill mix in the salad dressing aisle. Much better than my usual spinach dip recipe.

Snowballs II

This is an a very nice easy recipe. I searched specifically for a cookie without eggs (I didn't have any!) and this was among the results. I didn't have pecans on hand so I used almonds and it was just as well. I halved this recipe thinking I would get 2 1/2 dozen. As it turns out, I only got 20 cookies out of it. I'll make the full recipe next time and count on 40 cookies. I baked them for 15 minutes and they were perfect, crisp yet light. Thanks for the easy recipe. I think it's going to be my go to cookie when I'm looking for a cookie that's not too sweet!
