Baked Chicken Broccoli and Rice

I've made this recipe twice now...the first time I pretty much followed the recipe except adding broccoli to the rice mixture and adding breadcrumbs to the chicken breasts. This time, I took some advice from several other reviewers. I doubled the amount of rice and used 1 can of cream of mushroom and 1 can of cream of chicken soup. I also dissolved 2 chicken boullion cubes in the 2 cups of water before I mixed it with the soup and rice. I cooked 3/4 of a bag of frozen broccoli spears in the microwave and added it to the rice misture. I sprinkled a little garlic salt on the chicken, and covered it in a thin layer of bread crumbs. I like it before...but I really like it now. The cream of mushroom soup gave it a little more flavor and the chicken breast is sooo moist. I can never get chicken to turn out this moust. Love it!

Three Ingredient Peanut Butter Cookies

I made these cookies almost exactly as the recipe states..except I got a little anxious about the reviews that were saying the peanut butter flavor was overwhelming. So after I used a fork to press the cookies, I sprinkles them lightly with sugar before putting them in the oven. I baked for 10 minutes (at 8 minutes they hadn't spread at all) and took them out. These are the best peanut butter cookies I've ever had! Yummy!

Chicken with Stuffing

I made this chicken and stuffing in the crockpot today. It was very easy to prepare. I had to increase the size of the dish and had to improvise to use what I had on hand. I had one pkg. of cornbread and 1 pkg of turkey stuffing mix, so I mixed them together and doubled the water. I also wanted more sauce so I mixed a can of cream of mushroom soup and a can of cream of chicken together and poured that over the chicken. Halfway through cooking I stuck a butter knife down the side of the crockpot in a few places to make a little pathway to help the soup make its way up to the stuffing, so the stuffing didn't dry out too much. It came out well despite my changes. The chicken was easily pulled apart with a fork. I'll definately make this again.

Tartar Sauce III

I made this tartar sauce last night, and I loved it! I used a little less than 1/4 cup of onion though, and didn't add salt or pepper...but it was still great..so quick and easy!

Lasagna Toss

This is a great recipe, easy to prepare and delicious. I used Ragu Tomato, Onion and Garlic sauce. The only change I made was adding about 1/4 cup of shredded parmesan cheese to each layer of cheese. I cooked it 25 minutes covered and another 15 uncovered until the cheese was melted and browned on the edges. I will definately make this again. The only change I may make next time is using more cottage cheese.

Raspberry Mallow Pie

I made this exactly as the recipe dictates. I refrigerated it for 3 hours and pulled it out after dinner for dessert. I noticed that it wasn't firm, so I stuck it in the freezer for an additional 45 minutes. It still was not firm. Although it tastes like a nice summer dessert, sweet and tart, it's not very pretty once it's cut into. I could not get it out of the tin in one piece, and it collapsed on the plate. I think I will attempt this again, perhaps with some gelatin to firm it up. If anybody could help with the correct measurement of gelatin for a 9 inch pie, I'd appreciate it. I gave this an extra star because it was easy, and despite the mess on the plate, it was quite tasty!

Greek Lazy Lasagna

I made this tonight, and was kind of confused as to how long to bake it. The prep time says one hour, the recipe itself says 1/2 hour. I split the difference and baked it about 45 minutes. I really like the taste of this...I will definately make it again. I tweaked it a little, since I'm a novice, and basically a convenience cook. I used a 10 oz pkg. of frozen chopped spinach (thawed), I used 1.5 tsp of chopped garlic, and my lemon juice came from a bottle :-). It didn't matter, it still tastes great. My fear is that I don't think it will reheat well. I think it will be dry. So I need to figure out what I can add to this to make it a little more moist. All in all, a great, lighter pasta dish. If you don't like a heavy sauce with your pasta, this one's for you!

Best Chocolate Chip Cookies

This is my new favorite chocolate chip cookie recipe. The made the dough exactly as the recipe stated. When I took the first batch out, I noticed that they didn't sink and pretty much looked they did going in the oven...so the next 3 batches I pressed them down after dropping the dough on the cookie sheet. These are perfectly crispy on the outside and chewy on the inside, not too thick and not too thin! I got 4 dozen good sized cookies out of this recipe. The recipe states it yields 2 dozen, those must have been huge cookies!

Polly Welby's Excellent Chocolate Mousse

Excellent is an understatement. Soooo easy and delicious! I used 8 ounces Baker's brand semisweet chocolate and it was just perfect! Deep chocolate flavor and not too sweet. I put the mousse in single size pre-made graham cracker crusts, chilled and topped with whipped cream and a drizzle of chocolate sauce. This was a huge hit with the kids and the hubby. This is so easy, I'll be making it quite often!

Three Cheese Manicotti II

Excellent!! This was my first attempt at manicotti and it was a complete success. I only modified slightly by adding 1 cup of frozen spinach that I chopped, and about 2 Tbsp of dried chopped onions to the cheese stuffing. I took another reviewer's advice and removed the water from the burner after it boiled and added the manicotti shells and let them sit in the water for 5 minutes then stuffed. I also used the ziploc bag trick to stuff them more easily. I baked them for 20 minutes with just the sauce on them (Because they were still very firm) then followed the rest of the recipe by baking 15 mins with the mozzarella and 10 after adding the parmesan. They came out absolutely perfect! I made 10 manicotti and have enough stuffing left to make 10 more when the mood strikes. I froze the leftover stuffing...hope it comes out just as well when I pull that out of the freezer. Great easy recipe!

Blueberry Crumb Bars

I think these are perfect, hubby doesn't think they're sweet enough. I made them exactly as the recipe is written. I used blueberries that I picked fresh today. I will definitely be making these again, but will probably add some brown sugar, cinnamon and butter to the half of the crust that is sprinkled on top next time...just to sweeten it up a little for hubby's taste.

Raspberry Squares I

These would be good if the base crust had some flavor to it. It was quite salty, and I'm positive I followed the recipe exactly. The filling and topping were wonderful, my kids and hubby picked the crust off it. It is now 2 days later, and most of them have gone uneaten...that's not normal in this house...nothing I bake lasts 2 days here!

Hidden Treasure Cake

I adapted this to blueberries...I used Berry Blue Jell-o and fresh picked blueberries. It was just OK...this wouldn't be something I would bring regularly to a pot luck or cook out. It tasted good, but it didn't wow me. Maybe it's better with strawberries.

Stuffed Peppers

Very good, quick and easy recipe. My peppers were still pretty firm after baking for an hour (I didn't cover them) so I kicked the oven temp. up to 400 and gave them another 15 minutes. Very tasty...in fact, I had one for dinner last night, 1 for lunch today and again for dinner this evening...maybe I should freeze the rest!

Garlic Cheddar Chicken

Excellent! I made this for my sister and her family who needed a good dinner after driving 5 hours to get here. It was a big hit. Everybody liked it. The only substitution I made was using grated parmesan instead of fresh shredded parmesan, and it was still wonderful! The chicken breast was tender and moist and had great flavor. If you're looking for a new spin on the same ol' chicken breast this is quick and delicious! I'll definately be making this again!
