Ratatouille

Reviewed: Sep. 20, 2014
This is an excellent dish that is simply, easy and delicious. I have made this numerous times and it's a hit among even the "meat is the main part of dinner" folks. I second another reviewer to pair with couscous.

Baked Scallops

Reviewed: Sep. 20, 2014
Delicious!!!! I used Florida scallops and they were fabulous. Because in my mind, when I think of scallops I also think of pasta so I paired the two but there wasn't enough sauce. Next time I will definitely class up this dish with a fancy vegetable such as asparagus or brussel sprouts and garlic mashed potatoes.

Fresh Pear Pie

Reviewed: Sep. 20, 2014
Excellent - I made two because I had so many pears (from a family members tree) and it was a hit. I've made apple pies and I've learned my lesson - slice the pears very thin. Definitely serve warm! And I followed Lisa L's suggestion to use the crumble topping: 1/2 cup each butter and brown sugar mixed together with 1 cup flour. Thank you!

Strawberry Cheesecake Bites

Reviewed: Jul. 16, 2014
These were excellent! I had extra cream cheese icing and used it on slices of bananas then covered them in the left over melted chocolate (used Ghirardelli 60% cacao bittersweet chocolate chips - yummy!). I omitted the oil just because it's an extra step and an unnecessary ingredient (it's for a nice shine on the chocolate). I did not use graham crackers because I didn't have any on hand, but I'm sure that would make it delicious as well! Just because someone suggested it, and I had them on hand from another recipe, I put mint leaves on top to add to the glamour of this dessert and a nice pop of color. Thanks for the delicious, quick and elegant recipe!

Holiday Chicken Salad

Reviewed: May 6, 2014
Thank you for the great recipe! Made this several times as is and the chicken salad is awesome! My husband can't get enough of it. This most recent time making I wanted to make this healthier, so substituted 1/2 the mayo for plain greek yogurt and results were great. Next time I might try all plain greek yogurt and a tablespoon of mayo. I like to add grapes (halved).

Pie Crust IV

Reviewed: Dec. 8, 2013
When my grandmother complimented me on this pie crust (made with Apple Pie by Grandma Ople recipe) during Thanksgiving I knew that following this recipe exactly was key. Her pies in back in the days were too die for. I will use this recipe over and over again. Thank you! *I recommend watching the video tutorial for newbies - helped me a lot.

Waffles I

Reviewed: Oct. 7, 2013
I've made this recipe 3 times now and feel I didn't get it just right until the 3rd try. First time following Tevans211 suggestions to make it healthier (minus the splenda b/c didn't have) - and if you're not a cinnamon lover then I recommend omitting. Tevans211 suggestions for a healthier was exactly that...heathier and tasted as such; which is great just didn't do justice for me. I really wanted to fulfill my taste buds of eating waffles when I was a kid. Round 2 I tried to be healthy by using apple sauce but by round 3 I followed the recipe exactly (I did't follow any reviews alterations) and it was just what I was looking for. I put peanut butter and the syrup and it was perfect! Thanks Tevans211 for suggesting to put leftovers in the freezer - delicious!

Tangy Sliced Pork Sandwiches

Reviewed: Jun. 2, 2013
I chose this recipe as a last minute meal and boy am I glad I did! I was working with about six slices of roasted pork leftover and really had a hankering for a cuban but was missing quite a few key ingredients so I opted to try this recipe. I cut the recipe in half because only had enough for 2 sandwiches worth. That was the perfect amount if you don't want extra liquid. I followed another's recommendation and cut up 1 small onion then sauteed it in the butter and followed the remaining recipe as instructed. I did half the cayenne pepper because I like a very small kick. This tasted fabulous on bread and if I wasn't on a cuban fix I would have paired with rice and made more marinate. This recipe is a definite keeper and I'm wishing I had more leftover roast pork! Thank you Marbalet!

Pizza Dough III

Reviewed: May 20, 2013
This is excellent and so quick to make. I thought I would be making the day I prepared but plans changed and I threw it in the fridge and baked it the next day. I paired this with the allrecipes Exquisite Pizza Sauce recipe (which was fabulous). As a side note, I made a second dough, because I was worried the first dough wouldn't be good (didn't put in air tight container when put in fridge), and saved it byputting in the freezer. If I remember I will put an update on that when I try the frozen batch.

Exquisite Pizza Sauce

Reviewed: May 19, 2013
Delicious! I omitted the anchovy paste but included everything else. I don't like anything spicy and in reading the reviews felt comfortable trusting fellow reviews' comments that the honey will help cancel the red pepper flakes and cayenne pepper, and it did. Sauce was a nice sweet flavor. I would say the this receipe yielded enough for 3 home-made pies (as other's recommended I didn't used a lot).

Cream Cheese Frosting II

Reviewed: Mar. 31, 2013
This was delicious! I followed the recipe exactly. The only thing I changed was cutting the recipe to 1/4 because I didn't need that much. This amount fit perfectly into a 1 cup pyrex storage round.

Zucchini Yogurt Multigrain Muffins

Reviewed: Mar. 31, 2013
These were excellent. It was a bit labor intensive to make but worth it for a different type of muffin/cupcake. On that note, these reminded me more of cupcakes so I made the Cream Cheese Frosting II recipe by Janni (cut the recipe to 1/4, which was perfect amount, and put in a bowl on side for people to choose). I didn't have the applesauce so I omitted it altogether. I used vanilla yogurt because that's what I had on hand. As other suggested I wanted to sweat the zucchinni to take out the excess liquid but was afraid (don't know much about this process) use salt for sweating with this being a baked item, so I squeezed out the zucchinni liquid with used my hands and papertowel and that did the trick. I had a regular size muffin pan and the 18 mins was a bit too much time (still very edible and delicious, will do less time in future). I also had a mini muffin pan that I used and baked for 9 min. The minis came out perfect. Thanks for the great recipe. Will make again.

Mango Corn Salsa

Reviewed: Mar. 30, 2013
I was looking for a quick salsa to make for march madness get together and chose this salsa because it closely matched items I had at home. With that said, I did have to make a good amount of modifications: I didn't have sarenno peppers, so I didn't use. I didn't have green pepper and substituted with mini red, yellow and orange peppers. I didn't have cilantro and so omited as well - I feel this is an option you can omit depending on your taste preferences. This recipe was quick and easy to put together and it was well liked by friends and family. Thank you.

Fluffy Pancakes

Reviewed: Mar. 17, 2013
Great recipe! So much better than the box and I'm getting closer and closer to never going out for breakfast again. I followed the recipe exactly and found that it fed 3 adults perfectly (2 pancakes remained). I've thrown in pecans, walnuts, chocolate chips and blueberries; all are a great addition to the already delicious pancakes.

Kielbasa and Cabbage

Reviewed: Feb. 2, 2013
Wow, was this good! I had been wanting to incorporate cabbage into my meals and found this recipe. I cooked this 30 minutes early before my guests arrived and I lowered heat to simmer which worked out just fine and possibly helped let all the ingredients mix. I had a baked potato left over (plain) from the other night, cut into chucks and threw in the last 10 minutes. This was delicious and my guests all went for seconds! Thank you!
