Mozzarella-Stuffed Pesto Turkey Meatballs

These are fantastic! My husband had no idea he was eating ground turkey. I use a bit less salt, panko bread crumbs, and cubed string cheese (instead of fresh mozzarella) Also, I make homemade marinara instead of using a jar.

Pork Tenderloin with Dijon Marsala Sauce

Oh my gosh - the SAUCE was so amazing!!! Next time I will make extra and bathe my entire dinner plate in the stuff. In other news, I made this with chicken breast instead of pork. It was delicious.

Fluffy Pancakes

FANTASTIC pancakes! They were so light and tender and fluffy - just like the recipe promised. I doubled the recipe and used mostly whole wheat flour, skim milk and half the butter called for. A serving of pancakes came out to 170 calories. Not bad!

Maple-Glazed Pork Chops

YUM! We loved this pork chops! Next time, I'll pan cook them fully and skip the oven baking, though. It seemed unnecessary to me. The brown sugar on top caramelized beautifully and went perfectly with the maple-cider vinegar glaze. I served the chops with roasted garlic green beans and pumpkin risotto. Great fall dinner!

Beef Barley Stew

Wow - this stew is FANTASTIC! I don't care for potatoes in stew. Odd... I know, but it made this stew recipe very appealing. I made a couple minor modifications - oregano instead of thyme, all beef stock instead of water + an extra cup of stock to make a more broth-y end product, and I thickened with cornstarch instead of flour). The finished stew was rich with a beautiful layered flavor. The red wine and balsamic vinegar give the broth a nice complexity of flavor. I'm looking forward to enjoying this stew reheated for lunch this week.

Slow Cooker Beef and Mushroom Stew

Very tasty... but definitely needed salt! I ended up adding about 1/2 teaspoon of salt at the end because the broth was quite bland.

Sesame Pasta Chicken Salad

This dish was O.K. I like the concept of an Asian-style pasta salad in general and definitely think the dish is worth a second attempt. For my first try, I made it as the recipe indicated. However, I think the dressing needs more zing - maybe some garlic and crushed red pepper. It also need *more* dressing. My salad came out really bland and dry. I would also add more vegetables into the mix next time - carrots, pea pods, red peppers, etc.
