Chili Mac Casserole

Oh my gosh! This turned out AWESOME! I did not have any Mexican cheese blend, so I used shredded mozzarella mixed with chili powder. The result was so yummy smelling, I couldn't resist trying a bit after it came out of the oven (I make casseroles ahead of time forhubby who works nights). I loved it and the chili powder gave it just the right kick - will definitely be making this one again!

Creamy Chicken Casserole

I was concerned at first since there are only 4 ingredients and at the last minute added some garlic powder and Adobo. Don't know what it would've tasted like without them, but the casserole turned out DELICIOUS! I also used french fried onions instead of the chow main noodles.

Reuben Casserole

This is one of the tastiest casseroles I have ever made! Follow the suggestions and layer the casserole backwards - it cooks so much better. I am always looking for casseroles to make as hubby works nights in the ER and has to bring a quick and easy dinner - he loves this one!

Slow Cooker Reuben Dip

I have made this twice now. The first time was on A Saturday night during a snowstorm and brought it to the Fire Dept whare hubby is a volunteer. I FORGOT to add the swiss cheese and got RAVE reviews! 4 days later, I took it to a potluck at work (I remembered the swiss cheese this time), and out of 9 people, 5 asked me for the recipe. This dip is awesome!

Slow Cooker Stuffing

Give this one a test run before the big Turkey Day meal. The first time I made it, it was too mushy (DO NOT use 4 1/2 cups broth), the second time, I used less broth but it didn't bind as well. The third time, on Thanksgiving, it came out perfect!

Turkey Wild Rice Soup

This soup was really good! Take reviewer's advice and halve the flour and half and half, unless you want it really thick. I also used extra wild rice. This one's a keeper for the Thanksgiving turkey leftovers!

Coquilles St. Jacques

This was an amazing recipe. Follow people's advice below and substitute heavy cream for most of the mayo (I used 1/4 cup mayo, 3/4 cup heavy cream). The result is absolutely delicious. And it was fairly easy to make as well. Hubby almost never makes the happy noises until I tweak it, but this one he LOVED right off the bat!
