Mulligatawny Soup I

I love how flexible this recipe is with measurements and other ingredients. I make it mostly as is but omit the apple (hubby doesn't care for the texture) and I used the following instead: 2 carrots 3 stalks of celery 3 rounded teaspoons of hot curry paste 1/2-1 can of coconut cream (instead of heavy cream) You could probably get away with coconut oil instead of butter as well.

Chocolate Cream Pudding

Fantastic, basic chocolate pudding. Very smooth and creamy. It was a little sweet for my liking, so next time I'll reduce the sugar quantity. My arm was a little sore from all the constant whisking but it was definitely worth the effort. No lumps, no burning, perfect texture.

Homemade Flour Tortillas

My child says these are the best tortillas ever. Even better than the fresh ones in the restaurant. I tried using part whole wheat flour but the texture and flavour was off. Making it with all white was better (not healthier but yummier) and I too used vegetable shortening and hot water. I just cook them on my electric griddle and they come out perfectly. This recipe is a keeper!

Easy Shake and Bake Chicken

Tried this last night and the chicken turned out tasty and juicy. I think the butter quantity called for is definitely on the generous side though. I'll be cutting it by at least half next time and I'd like to try a little bit of garlic powder in with the chicken as well. I used chicken legs to make it but I'll try back attached legs/thighs next time too.

Easy Spicy Roasted Potatoes

I tried these last night and they were really yummy, albeit a bit salty for my liking. I think I'll try it next time with a little less oil and a tad less kosher salt too. I didn't have red potatoes, so I used yellow fleshed russets instead. Flavour was great. Hubby loved them as they were and even my horribly picky 7 year old ate two pieces because, "They are kinda good."

Banana Bran Muffins

These muffins are fantastic! I did sub applesauce for the oil (1:1), only used 1 1/4 tsp of baking soda, used 1 1/2c of whole wheat flour and 1/2c of white flour. I also omitted the allspice and walnuts. The muffins (12 regular size and 36 minis) were a hit! Both of my kids devoured them, as did my husband. It felt good knowing that they were, on the whole, gaily healthy too. I just need to find a way to sneak a few veggies in with the next batch :)

Banana Banana Bread

Perfectly moist with a wonderful banana flavor. Like others, I added some spices which added to the flavor and aroma. I also tossed in 1/2c or so of chocolate chips for the kids :)

Shortbread Supreme

This recipe was the perfect base for what I needed. I needed a recipe for my dairy allergic child to bring to school and decorate with his classmates. I substituted the butter for vegetable shortening and I used icing sugar/confectioners sugar instead of the white sugar for a finer look. The cookies were perfect, held together for decorating and still melted in your mouth. Not too sweet either. Thanks for posting, this is definitely going into my baking repetiore

Balsamic Vinaigrette

I really enjoyed this recipe. I like the tangy vinegar flavour so I kept the ratio of 1:1 with oil the same but I didn't have ground mustard so I used 1 tsp of dijon instead. I also added 2 Tbsp of honey like other reviewers. It was just enough sweetness to balance everything off.

Simple Whole Wheat Bread

So yummy and perfect. This was my very first attempt at bread making and while I over kneaded the dough instead of just punching it down, it turned out very well if not a tad heavy. Nice and sweet.

Bacon-Wrapped Asparagus

Simple and effective. My hubby who does not like asparagus will only eat it this way. I drizzle olive oil over the spears and then lightly sprinkle kosher salt on it before grilling.

Best Cream Of Broccoli Soup

Awesome soup! This was my first attempt at a cream soup and this recipe was nice and easy to follow for a beginner. I followed what another poster mentioned and used the entire broccoli instead of just the florets (why not?!) as well as using a Vidalia onion instead and I let it simmer for 20 mins. I also just mashed it using a potato masher instead of pureeing it and I prefer this texture. I added a little cream at the end as we prefer rich soups. Very yummy. I will definitely be making this one again! Thanks.

Hasty Chocolate Pudding

I'm certainly not a pudding connoisseur by any means but I do enjoy chocolate pudding. This is quick, simple and tastes great. For something I can whip up in under 10 mins, I think it's great! Thanks. I have also made this as a dairy-free version for my dairy allergic child and it was equally as yummy. I just substituted vanilla almond milk for the milk and vanilla.
