Delicious Feta-Crusted Salmon

We usually eat our salmon naked, and love it just fine that way. After we tried this my boyfriend says to make it this way from now on, very good as written.

Baked Halibut Steaks

This is a good recipe full of veggies. I also doubled up on the veggies, Added a small amount of spinach for color because I had to use dried basl, not fresh, I also switched the onion to green onion and added mushrooms. It makes for a really pretty plate.

Addictive Sweet Potato Burritos

This is one of those recipes that looked so awesome I didn't even read others suggestions first. And it is awesome but had I read further I would have done a batch with black beans instead of kidney for a more contrasting flavor to the sweet potatoes and I also think I'l start throwing in some corn or something to breakup the texture through out. However, like I said , I just went ahead as is, no changes except used up some left over green onions also, and it was delicious. Victor said, " Definitely one of my favorite meals" Plus we made it together. I made mashed sweet potatoes, He made the bean mixture [under my supervision ;) ] And the we built them assembly line style!

Pineapple Beef Stir-Fry

I used tofu instead of beef. Fresh grated ginger instead of powdered. And a habanero pepper in with the red pepper. Next time I will make double the sauce, And I'll probably use oyster sauce instead of soy. Delicious.

Vegetable-Stuffed Portobello Mushrooms

These are pretty good. I let them cook a little longer so the ports could get super soft, and also cause the boyfriend's rice wasn't done yet. Choose the smallest eggplant you can find. Choose the deepest port caps for stuffing. Made no alterations, delicious as is!

Vegetarian Cottage Cheese Patties

I used a seperate dry ingredient recipe for the onion soup mix, cause I didn't have any and that was a bad idea. This recipe, however, iS delicious. I didn't fry first, but if you do- USE BREAD CRUMB.

Sausage Stuffed Mushrooms II

I made these for my boyfriends birthday. All his friends said they were just like something their moms made when they were little. They ate them all before they were even a comfortable temperture to try. I would like to try the suggestions of using the mushroom stems in the mix, or other veggies, but this already makes an uneven ratio of filling to caps. I'll make it a point to search for bigger mushroom or buy more small ones next time. Delicious!

Stuffed Peppers My Way

This is one of my favorite dishes to make for my non-veggie boyfriend. We have no side dishes with it even, it's so filling. I've never found Aborio rice so we just use a 'dirty rice' box mix. And the feta is the best part! Delicious!
