Buffalo Style Chicken Pizza

Reviewed: Mar. 21, 2009
It was excellent. I do agree the recipe should be modified slightly. I used enough blue cheese to cover the pizza lightly. I only used 2 chicken breasts. I also added onions, next time I make the pizza I will plan on adding pineapple as well. This is definetly one of the best pizzas I have ever eaten. I am no pro at making pizza either. I used the pillsbury pizza crust. I also added butter and parmasan cheese to the crust.

I don't usually like potato salad, and this is awesome! I wouldn't change a thing.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Dec. 23, 2009
This recipie is ok. I added about a cup more mozzarella, 1/2 cup of parmesean, 4 more oz of cream cheese 5 more oz of alfredo sauce. The dip was a little over powering with spinach flavor before. Afterwards, it was more creamy.

Kettle Corn

Reviewed: Nov. 9, 2010
I used the 3 second rule and burned the sugar the first time. The second time the sugar turned brown and the inside of the kernels were black. If the kernels weren't burnt it would have tasted similar to caramel corn. I'll stick to the farmer's market popcorn.

Buckeye Balls II

Reviewed: Dec. 30, 2010
I used almond bark as the chocolate and did not use the shortening. I had no complaints as I used these for Christmas gifts. This made plenty of buckeyes, I ended up giving half to a friend to use as gifts. It was very good. Easy to make. I'm sure I will use again in the future. The almond bark hardened quickly. It was not as soft as using something like regular chocolate chips, but was more conveninet.

People seem to think this is so hard to make. It's so easy! I used this as gifts this year.

Hummus III

Reviewed: Dec. 31, 2010
Delicious. First time making hummus. I put it in a blender. I used 1 can chickpeas drained, 1 oz lemon juice, 2 tsp garlic, 1 tsp olive oil,3 tbs tahini. I saved some juice from the can to make it smoother and then added a little red pepper spice and a little bit of cumin. IT IS SO DANG GOOD! I will be making this often! I'm sure many people will want this recipe after knowing I can make this. Plus it is so freakin easy to make. Super easy recipe for a pot luck or just at home.

Mini Cheesecakes III

Reviewed: Jan. 20, 2011
This was pretty good. It satisfied my craving for cheesecake. Very simple to make. I will make this again for sure. But it's not the absolute best cheesecake I've ever eaten. Although it is better than store bought.

Six Can Chicken Tortilla Soup

Reviewed: Apr. 4, 2011
I add garlic, cumin, cilantro spices to taste. I also like to top with cheese and sour cream. I eat it with tortilla chips. The boyfriend likes a little kick, the tomatoes with the green chilis hot version is just enough. It freezes well. I don't care for canned chicken so I will cook chicken breast or chicken tenders. I suppose you could even buy a rotisserie chicken and shred it if you felt so inclined.

Make-Ahead Baked Egg Sandwiches

Reviewed: Apr. 27, 2011
I toast an english muffin, fry an egg, add miricle whip and american cheese. It's really good for a breakfast on the go, or any time really. Easy to make. I have made extra before and kept them in the fridge, they reheat well.

Garlic Mashed Red Potatoes

Reviewed: May 29, 2011
This was really good. I think my potatoes were a little bigger than medium, so I had to double the recipe. I have no problem with having left overs.

Baby Back Ribs

Reviewed: May 29, 2011
I used the rub as some people suggested. It was a little too peppery for my taste. I did not add the sauce until after it was mostly cooked, and I threw it on the grill for a few minutes. I think if I added the sauce sooner my ribs would have been even more tender.

Best Lemonade Ever

Reviewed: Sep. 22, 2012
I have a sweet tooth, but this was a little more sugar than I would prefer in a drink. It was very good. It would probably mix well with an adult beverage. I made this just for myself and it only lasted me 3- days or so. I also have a juicer, so it did not take me long at all to make. I think I may take a suggestion and try strawberries in it next time. YUM!!
