Barley Casserole

Really great! I only gave it 4 stars because I added in a "rope" of summer sausage, diced, which gave it a smokey flavor. Also, because of the long cook time of the barley, by the end I had added all of a 48-oz. container of chicken broth. Not an issue, just a change. This is a keeper! It disappeared by the end of the night, no leftovers! Thanks for sharing!

Five Bean Casserole

I LOVED this recipe!!! First off, although I have learned to like beans, they aren't my "go-to" option usually. But this recipe, with five kinds of beans, was AWESOME! The only thing added that wasn't original was a link of Hillshire Farms smoked sausage. I decreased the onion and probably had extra bacon in it. I loved it the first day I made it and loved it more on day 2! My kids weren't thrilled, but hubbie and I enjoyed it.

Lighter Fettuccini Alfredo

Really very good, especially for a lighter version. All three kids liked it, and nothing was left in the pot by the end of supper! Love the easiness of it, too! I didn't add the fresh garlic, and IMO the parmesan cheese needed to be decreased slightly - I thought it was a little too strong. I added a bit of extra milk to cut down the flavor. Again, though, very creamy, less guilt-inducing version of the original....I will definitely be making again!!

Creamy Italian Slow Cooker Chicken

This was excellent! I could have sat there and just eaten the sauce! Some of us ate it over white rice, some over bread. Used slightly less dry sherry, as I was afraid of overpowering it. Also made my own Italian salad dressing mix, as another reviewer had shared, and fussed with the amount included a little. Thank you for sharing this - will be making again!

Creamy Chicken Enchiladas Verde

REALLY good! Even the kids ate it (13, 11, and 8)! My slow cooker cooked the chicken perfectly for shredding; then I used regular salsa, didn't have garlic or green chilies. I added extra of the cheese and sour cream/salsa mix on top and voila! Happy family! Will make again.

Spanish Rice Bake

LOVED this!!! In fact, my husband thought it was the best casserole I had ever made. Also used salsa instead of chili sauce, no green pepper or cilantro, played a little with the spices. Fantastic - will be definitely making again!

Bonnie Blue-Barb Pie

Really good! I made this two ways. One, primarily the way it was written with just a touch less sugar and a crust using all-purpose flour, and then with the second pie, I made a mistake. I used white whole wheat flour for my crust and then on accident doubled both the blueberries and the rhubarb, but not the flour and sugar! A lucky mistake, though, as we ended up preferring the "accident" pie!...although the filling could have been slightly thicker, since my flour ratio was off. As the recipe was originally written, it was a little sweet for me and the fruit didn't shine through as much. Sprinkled both crusts with raw sugar before baking, which I love. Thanks for the recipe! I'll definitely be making this again.

Parmesan Chicken II

This was simply fantastic!! Quick, easy, CHEAP, and to the point. And I don't even like dark meat! I actually used chicken thighs that I had in the freezer instead of drumsticks, took off the skin, and they were great. The coating totally keeps the moistness locked in, and the coating itself is wonderful cooked. Thanks - great recipe, definitely a keeper, and phenomenal for busy families!

Chicken-Prosciutto Bundles

This was very good!! I've had a version of this before with another cheese, but the mozzarella was great! I used fresh mozz., not deli slices. Next time I would add on more cheese. Very easy and fast, but elegant. Thanks for the recipe!

Suki's Spinach and Feta Pasta

I've made this twice, and it has truly become one of my favorite recipes! I eat way too much of this when I make it! I use frozen tomatoes from my freezer, and don't use the full amount of feta cheese...I sprinkle it on top at the end, varying the amount according to each person in the family. I think you could definitely add more spinach to this. I also don't add any red pepper flakes, as I don't like spicy food. Fantastic recipe - definitely a keeper!!

Pumpkin Cake III

Really, really good!! Extremely moist, very nice flavor. I also, like others, tweaked the oil amount - I used one cup of sweetened applesauce and 1/4 cup of canola oil, and then decreased the sugar to about 1 3/4 cups. I will make this again - everyone, kids included, liked it!
