Clark's Quiche

This makes an excellent quiche! Made it for a little get together with girlfriends and we just kept eating and eating it. I didn't add bacon since I didn't have any, but I'm sure it would have added a great salty taste and crunchy texture. I also added nutmeg since nutmeg and spinach go so well together.

Chicken Makhani (Indian Butter Chicken)

Amazing, easy recipe to use. I used boneless chicken thighs instead since it's what I had on hand. The only thing different that I would do next time is I would make my own garam masala and I was thinking of adding some white raisins. I think the raisins would soak up the saltiness in the sauce and the sweet and salty raisin would make a great addition to the dish. Overall, what a great Indian dish!

Key Lime Pie IX

Wow...really simple to make and so delicious! The sweet and sour flavors are well balanced and the light merengue on top is the best!! I made mine with a homemade, flaky crust since I didn't have graham crackers and it's still delicious. Will be making again and again!

PHILLY Neapolitan Cheesecake

Really great cheesecake. The layers are really eye-appealing and they taste good, too. I didn't have Graham crackers, so I just used a similar cookie for the crust. I also didn't have frozen strawberries; I had frozen raspberries on hand. It still came out really tasty!!

Brown Sugar Meatloaf

AMAZING!!! The brown sugar and ketchup mixture is fantastic. People were trying to guess what all the secret ingredients were. Little did they know this recipe is super simple!! Only thing I did different was that I made the loaves and spread the mixture on top. It formed a nice crust and looked so appetizing. You must try this meatloaf!

Curried Coconut Chicken

Excellent curry. Only extra thing I added was a little red pepper flake for some bite, and the sauce ended up being so yummy!!! Great with chicken or tofu. You must make this curry!

Butter Flaky Pie Crust

Great crust and super easy to make!!! I used this recipe for all my pies this holiday season (2010) and everyone that had one of my pies said it was amazing. Nice and buttery...flaky..yum.

Iced Pumpkin Cookies

These cookies are a great pumpkin treat! They are light and cake-like. The only thing I did different was I added 1/2 tsp of Pumpkin Pie Spice to it, just to give it more of a pumpkin pie taste. When they first came out of the oven, they didn't taste very sweet so I didn't think this recipe was a good one, but if you just let them sit for a while, even over night, the flavor is SO MUCH better. I gave some to my neighbor and she said the same thing: they are even better the next day. I will definitely be making these again! Oh, and I dropped my cookies on the cookie sheet by the ice cream scoop-full and it made about 15 cookies. They were way bigger than a normal cookie, but it's the perfect size for your pumpkin craving!

Tiramisu Layer Cake

This is the most AMAZING dessert. You get the great Tiramisu taste b/c of the delicious filling and you also get your cake fix. I did make some changes. I made the cheese filling with 12 egg yolks and about 1 c or so of sugar. Whip that until thick, then whip in the mascarpone cheese. I used Kahlua and coffee to drizzle over the cake and I also put some Kahlua in the cheese filling. I also used yellow cake mix instead of the white. I generally prefer the yellow to white. Seriously, you have to make this cake. Next birthday that we celebrate (mine in August!), we will definitely be having this cake.
