Brown Sugar Meatloaf

I followed the recipe exactly and it came out absolutely delicious. Moist, and a nice flavor with the ginger in it. My husband called me from work to tell me how much he liked it. He works nights and takes leftovers for dinner so he loved it even a day old. :)Of course with the sugar and ketchup it was a hit with my 3 year old. I will be making this recipe again.

Homesteader Cornbread

This was the first time I made cornbread from scratch and it was a big hit with the group I made it for. Everyone was talking about the yummy cornbread. The only reason I took away a star is that it did turn out just a tiny bit dense (after whisking for 5mins as recommended) and it started to dry out rather quickly (the leftovers were about an hour old when I went for seconds and noticed it a bit dry). Other than this this was easy to make and fabulous!

Mushroom Pork Chops

Mmmmmm! This turned out moist and flavorful. The sauce would make an excellent gravy for mashed potatoes if you make some extra and add a little flour.

Quick and Easy Clam Chowder

Very good, and so easy! It was a little on the bland side- but this may be because I used low-sodium products. I also had to add cornstarch to thicken it up. Other than that it was yummy...rich and creamy.

Baked Spaghetti

Pretty good but on the dry side and bland. Could be better depending on the amount and type of sauce used. It was a little more work than I would like to put into something that tastes so similar to regular spaghetti. But definitely doable.

15-Minute Herbed Chicken

Not gourmet or anything, but easy, quick and tasty. My husband used to make this for me when we first got married. (He used the oven, but same concept) Now I'm doing all the cooking...what happened??

Christmas Walnut Toffee

This is delicious! I love toffee and chocolate together. My sister-in-law makes a very similar recipe, but she does not melt the chocolate chips beforehand. You just sprinkle them on top of the toffee before it cools and the chips will melt and spread out on their own. Then sprinkle the nuts or whatever toppings you like. Great recipe.

Easy Fruited Chicken Salad

We love this recipe, use it for camping and beach trips all the time. I make it ahead of time and it's a nice alternative to the standard travel lunch fare. (Especially when you have small children) I did change it to add some curry powder and a bit of sugar. (Sometimes I don't even add the apple pie spice since the curry has enough unique flavor) Our friends love it and when we camp together with them they ask us to make extra.
