Ultimate Potato Soup

For those who want this recipe to end up thicker, I recommend making a roux out of the butter and flour before adding the (cold) chicken broth to the pot. This will result in a thicker soup. When I made this, I cooked the potatoes (about 8 medium) in a pot with their skins until they were soft. While those were cooking, I cut up the onion, celery, and about a half a bag of baby carrots, which I then sautéed in the 6 TBSP of butter. Once the onions were starting to look clear, I added the flour and created a roux, which thickened up my soup when I added the water and chicken bouillon cubes (this recipe does not need actual chicken broth to be successful). As the broth mixture got warmer and started to thicken, I added a cup and a half of chopped ham into the soup, along with the drained potatoes and the half and half. After cooking it for a while, I also added a cup of Velveeta cheese, cubed to give the soup more flavor. This turned out wonderfully, just like the soup I grew up eating at my mom's house. I will definitely make this again-it was so good!

Peanut Butter Haystacks

I made these today with chocolate chips instead of butterscotch. I made them in just 7 minutes, which is awesome! They didn't set up as well as I was hoping they would though-even after an hour in the freezer, they were still sticky to the touch. I think it's the real peanut butter. I read some different recipes for this online and found some that just use peanut butter chips along with the chocolate chips and I think that might work out a bit better. These were still quite tasty though, both my husband and I enjoyed the flavor and texture. We might make these again, but probably with modifications so they are less gooey.

Easy Pizza Sauce III

So yummy! I didn't have any tomato paste, but it turned out well without it. I added the suggested spices as well, garlic, basil, and sugar. I loved it and will definitely be making this again!

Stuffing for Slow Cooker

So good! Go really easy on the broth--there was a lot of butter floating around in the veggies when I added it into the dry bread crumbs and it needed a cup of broth at most. I cooked it on high for 2 1/2 hours, stirring every hour, before I turned it down on low and it turned out great. I loved how it freed up the turkey cavity for vegetables and created a ton of space in my oven.

Perfect Turkey

I got rave reviews for this turkey! I didn't use any of the spices other than the kosher salt bath and it was still amazing and moist. I couldn't taste the wine, but it was still great and I loved how the veggies in the cavity turned out. I would make this one again for sure!

Easy Candy Yams

These are so good! The caramel made the sweet potatoes so rich! I mashed the sweet potatoes with the sugar, a little milk, and 2 TBSP of butter. Then, I swirled caramel into them and baked them, stirring once about 20 minutes in to mix in the caramel with the potatoes better. Then, I broiled it with the marshmallows on top. I accidentally burnt the marshmallows during the chaos of multitasking during Thanksgiving, but it gave it a "campfirey" taste that I enjoyed. Next time, I'm sure I'll get them golden brown … This was amazing! I can't wait to make it again!

The Real Chicago Deep Dish Pizza Dough

My husband couldn't stop talking about how good this pizza crust was! I made this recipe as written, but didn't have kosher salt, so I used regular. I let the dough sit for about 4 1/2 hours before punching it down and it turned out just fine. Since I doubled it, I was able to make two full size pizzas (1 circular and 1 square cookie sheet). I buttered the pans and sprinkled cornmeal on them before I pressed the dough in and pre-baked it for 10 minutes without toppings, then 20 more with toppings. So good and filling :) This will be my new go-to pizza crust.

Best Chocolate Chip Cookies

While a recipe that says it's the best usually isn't, these turned out to be very amazing! True to their word, they were crispy on the outside and chewy on the inside. I made no changes to the recipe, but did make much larger cookies. I yielded 32 large cookies. I used an air bake cookie sheet and got excellent results--14 minutes to bake at 335 degrees F. I will always use this recipe from now on! Edit: Smaller cookies take about 11 minutes at 335 degrees F.

Banana Cake II

This is so good! I did a few small tweaks to make it lighter and it didn't taste at all like it was a 'diet' recipe to me. I used 3/4 cup of applesauce to replace the butter, egg whites in place of the eggs, and did the milk trick that everyone is talking about in the reviews (put 1 1/2 TBSP of vinegar into the 3/4 cup, then fill the rest with milk to sour it). I also used closer to 2 cups of mashed bananas (about four large, ripe bananas). This cake was very moist and tender and a big hit with my husband. This teacher gives it an A+!!!

Pretty good. I made it with sharp cheddar, rather than Velveeta to create a richer taste. I would have used celery, but ours had gone bad. Husband loved it. I will make this again.

Pork Tenderloin with Apples

Italian Breaded Pork Chops

I enjoyed this recipe, although I think it makes way more breading than what I needed. I used boneless, thick-cut chops and had way too much breading left over. I didn't fry the chops in oil, but instead just gave the pans a light spray to make it healthier. I also did a flour, salt, and pepper dredge, before I coated the chops twice with egg and breading. I didn't bother with the garlic either and they turned out great--very tender and moist, with a crispy coating! I will make these again sometime soon!

Simple Beef Flavored Gravy

What a delicious, simple gravy! I usually just make gravy from a packet, but I forgot one when I was last at the store, so I thought I'd try this and it was great! I made a roux from the butter and flour, then added in the boullion cubes and water (no onions as my husband cannot have them). Using real butter made it taste so rich and delicious--mmmm. I'll be making this in place of the packet gravy from now on!

Cornbread Pancakes

These are pretty good--I followed the recipe other than the buttermilk, which I had none of so I used regular milk with vinegar. I don't know why some of the reviewers said the batter was too thick because I thought it was too thin. The pancakes I got were very flat, but did have a nice cornbread flavor.

Easy Tuna Patties

Pretty good--these reminded me of the salmon patties my mother made for me when I was young. I had a little trouble with the first batch falling apart, but on my second batch I made the patties fatter (they kind of looked like baseballs in my skillet) and they seemed to hold together much better. I think next time I might add a little more of the onion and perhaps some other spice to make it a bit more zesty, but the hubs and I did enjoy these very much. Thanks for the recipe! I'll make them again sometime soon!
