Herbed Feta Dip

LOVED this! This is one of those rare things that's both healthy AND really tasty. I will be making this a lot. Makes a good dip for veggies, pita bread or even a yummy low-fat nutritious salad dressing. I will say that two cloves of raw garlic makes for a strong garlic flavor, which I happen to love. But if you're not a fan of strong garlic flavor, I would either use one clove or roast your garlic first. Thank you so much for this recipe!

Tomato Sausage Tart

Super tasty! I even made the homemade mayonnaise sauce, but I agree with the other reviewers- the tart is rich enough and the sauce makes it almost too rich. The only reason I gave the recipe 4 stars instead of 5 is because as many reviewers stated, the result was a little too runny. I drained off as much of the tomato liquid and seeds as I could, but it still came out runny and I had to drain the liquid from the tart after I removed the first few pieces. I will definitely make this again, but next time, I will either use more eggs (as one reviewer suggested) and/or add a little corn starch to thicken the cream. But my husband loved it too, so I'll definitely make it again. I think it would be really good even without any meat.

Zucchini Pancakes

I guess I'm one of the few who didn't really care for these. They were mushy on the inside and I didn't like the consistency. Even though I cooked them slightly longer than the recommended time and they were nice and golden outside, the inside seemed uncooked. Just not my cup of tea, I guess.

Cilantro-Lime Rice

I love this. It's fast and easy and I think it has a wonderful flavor. I've also tried it with a pat of butter and with a dash of sesame oil and both were really good. The sesame oil gives it an Asian flair. So it works well as a side dish for a variety of cuisines!

Crispy Zucchini or Pumpkin Blossoms

I grew up eating these too (my dad is Italian) and back then (the 70's) other people thought it was weird. I love them. I think the blossoms are better than the zucchinis!

Lemon Zucchini Bread

Super moist and yummy! Just the right amount of sugar- not overly sweet. I didn't have any lemons on hand so I added a tbsp of lemon juice- next time I might add 2 tbsps because I'd like it more lemony (but that's my own fault because I didn't have lemons to zest). I also substituted half of the oil with applesauce (so I used 1/4 cup oil + 1/4 cup applesauce instead of 1/2 cup oil) and I'm glad I did because you'd never know I halved the fat. It's super moist! I will use this recipe all the time!

Best Ever Blueberry Cobbler

Super fast and easy to make plus it was really tasty!!! I don't like overly sweetened desserts so this was perfect for me. Next time I might even use just 2 tbs of sugar over the blueberries- I think that might be plenty. Also instead of using an 8x8 pan, I used a casserole dish- approx. 4 x 9 and that worked out well. I did end up having to cook it for 40 minutes but that may have been because I used frozen blueberries. Will definitely make again!!!
