Vietnamese Tofu Salad

This will be a 5 star recipe if you do the following... Add broccoli, radishes, and a sweet red pepper, and about 1/2 cup more sweet chili sauce to the cold salad mix. I also added about 1/4 cup the sweet chili sauce to the Tofu mixture. I made coconut rice with red curry paste and served the Tofu mixture warm on top of the rice and then finished with the cold salad. Yum! And my husband thought this was restaurant worthy!

Mom's Buttermilk Pancakes

This was terrible. Don't waste your milk and eggs! WAY TO MUCH SALT! I'm sure it would be fine if there was a 1/4 of the salt recommended. We had to start all over again.

Wild Rice Harvest Casserole

This was a delicious recipe however I did make a few modifications. I wanted to use beef, so I substituted that for the chicken and made up a beef seasoning instead of the poultry seasoning. I used vegetable broth instead of the chicken broth. And one can tomato soup instead of 2 mushroom soups. We thought that there was too little rice in the original recipe, so we made it with 2 cups rice and I baked it for 1:30 uncovered at 350 degrees. It came out perfectly and was full of flavor.

Thai Pumpkin Soup

This soup is perfect the way it is. The only thing you should be aware of is the lemon grass strings. The fibers will be extremely annoying unless you A. Strain them before adding the pumpkin B. Put them in a metal loose tea bag so that they don't mix with the soup, but still seep out the flavor. I will be making this soup a lot and it works great with nutmeg pumpkins if you have those in your area.

Spicy Vegan Potato Curry

If you can't find garam masala, don't worry. It is a mix of spices and you probably have some already. You can google the contents and use whatever you have. I only had cinnamon and pepper so I used them and it still came out tasting great. My husband doesn't like peas so I used carrots and it was excellent. Thank you for this recipe, I will add it to my favorites!
