Excellent recipe! I have made this twice. The first time I followed the recipe almost exactly, the only changes being that I used some panco bread crumbs along with regular breadcrumbs and I didn't have fresh parsley so I used parsley flakes. The 2nd time, I only used 2 tablespoons Dijon and my husband ranked this as one of the best things I've ever made! I reduced the mustard to 2 tablespoons (as a personal preference as mustard has never been a favorite of mine). Quick, easy, delicious and healthy -- all of the things I look for in a weekday meal! Don't shy away from this one!
