Bill Clinton's Lemon Chess Pie

I've made this twice in the past week. My husband and I both prefer it to lemon meringue pie. I've made pies professionally for quite a few years. This recipe makes a 10 inch pie. There is too much filling for a 9 inch pie. I used 1/2 heavy cream the first time and it was almost too rich and interfered with the tart/sweet lemon flavor. The second time I used 1/2 milk and 1/2 half and half. That is the combination we prefer. I only had 2 lemons, which made about 2 tablespoons of zest and it was plenty. You need to use butter, no substitutes. This pie is meant to be rich and sweet, combined with the unique texture from the cornmeal. Wonderful. Will be my go to lemon pie from now on. I did have to increase the baking time for a bit, but just kept an eye on it. This pie benefits from sitting for a few hours and we like it best cold.

Cream Cheese Christmas Cookies

Just made these and I think they are wonderful! I did add a little extra vanilla and pressed some sliced almonds to the top. I also rolled them in green sugar and they look very pretty. Next time, I think I may use almond extract. They do tast like cheesecake! The contrast of the crunchy sugar around the outside and the soft and tender cookie adds a lot to the cookie. I will definetly be making these again.

Easy Garlic Green Beans

Very good! I have been roasting fresh green beans in my convection oven. We love them, but they can be very expensive in the winter. This is the perfect alternative! I let them get VERY brown, added a little olive oil and the taste was very similar, but way easier! I will be making these again. Can't wait to try these with some lemon salt or pepper!

Quick Yeast Rolls

This recipe is FANTASTIC! These were wonderful even though I tried everywhich way to screw these up! First, I put the dough to rise in the oven at "Hold" (170 degrees). I always turn it off after a minute, but this gives me a warm spot to raise dough. Forgot to turn the oven off! Finally realised my mistake and pulled the bowl out after 4-5 minutes. Second, forgot the egg! I added it when I "punched" the dough down, before filling the muffin tins, along with about 1/4 cup of cornmeal. Mixed it in with the aid of my Kitchen Aid mixer. Baked according to the recipe and they tasted like sooo much more! Next time I make these I will pay closer attention to what I am doing, and not talk on the phone with friends! I don't think they can taste any better...they were that good. (I also will either add more cornmeal or eliminate the 1/4 cup. We couldn't even tell it was included.)
