Sicilian Sausage Soup

This soup is AWESOME!!!! I did saute some garlic with the onion. As others mentioned, I did not use the full can of crushed tomatoes. Really, really good.

Hot Baked Fruit

This is incredible! I took it to a luncheon for my girlfriends, and they all raved about it. I used sugar free pie filling, but it had just the right amount of sweetness.

Chicken Gravy Enchilada Casserole

I made this for 4 servings. I oven baked the chicken breasts ahead of time. Since the chicken was already cooked, I put all the ingredients in the frying pan and simmered it for 15 minutes. I also added 3/4 cup of raw rice while simmering. After arranging all ingredients in the baking dish, I covered it and baked it for 35 minutes, uncovered it and let it bake for another 15 minutes. Adding the rice really helped it from being too soupy.

Antipasto Pasta Salad

Wonderful! I made this tonight for dinner, and we ate it out on the patio. It was a hot summer night, I didn't want to eat anything hot. It was cool, refreshing, and DELICIOUS! My husband RAVED about it. I served with with Italian bread. The only change I made was I used Red Wine vinegar in stead of Balsamic.

Easy Minute Steaks

Perfect for needing something in a hurry. I coat the cube steaks in flour and season with salt (plain or garlic) and pepper, then fry in a little oil. I saute mushrooms in butter and add to the top of the soup mixture.

Hawaiian Chicken II

VERY tasty! I added chunky pieces of green pepper, while arranging the dish for the oven. Next time I will add the green pepper 5 or 10 minutes before taking out of the oven. Upon taking the dish out, I placed the chicken breasts on bed of white rice on a serving dish, added some pineapple chunks, and covered it all with the leftover sauce. Definately will add this to my rotation. My husband loved it!

Applesauce Brownies I

No, this is not a tradional brownie...it is more cake like, but this recipe is fabulous!!! Very moist. I added extra cocoa...1/4 cup, and a dash of vanilla extract, Baked it for 40 minutes, instead of the 30 from the recipe. The family loved it!

Moist Carrot Cake

This cake is FABULOUS!!! My son wanted a carrot cake for his birthday party, and I didn't have a recipe for one. So glad I found this! I loved all the ingredients (pineapple, coconut, nuts, etc). It so moist. I, too will cut down on the oil next time, as it took over an hour to bake in order to get the middle done. I added a teaspoon of vanilla, and almost a cup of raisins, as suggested by others. I frosted it with the cream cheese frosting. Everyone loved it. Allrecipes.com is the best place to find fantastic recipes!

Tomato Enchilada Bake

Very easy to prepare, and very tasty! Next time I make this recipe I may add some refried beans to the chicken/sour cream mixture. This is good to serve company as well as family.
