Whole Wheat Pita Bread

I made half a recipe, just to try these and they were awesome! I baked half and did half in a skillet. The baked puffed up and were more doughie than the skillet version, but both were excellent and gone before they were fully cooled. I'll be making a full recie again this weekend. Thanks for posting! 5/17/09 Update I made these again, but I ran short of the whole wheat flour so I substituted 1 cup of Rye flour. This upped the flavor an extra notch and I will continue to add it from now on.

Peanut Soup

***** If I could I would rate this a perfect 10! I was looking for something different, but simple to serve to guests as an appetizer. I served this in individual souffle dishes and it was a big hit. The only change I made was to use half and half instead of heavy cream. Thanks for a great recipe!

Summer Berry Parfait with Yogurt and Granola

We've been enjoying this for years. I use fat free Greek yogurt, whatever berries are in season or frozen and I add slices of kiwi. Sometimes I just toast old fashioned oats if I have no granola. Dieter's dream, looks good, satisfies, and it is healthy. Thanks for posting.

Rye Beer Bread

This is wonderful bread. I used Guiness Stout and was a bit worried because it smelled so strong while sitting in the first step, but the taste is excellent. I followed the instructions except to add more caraway seed. The batter was too stiff to stir after the second cup of bread flour so I kneaded in the rest. It took exactly the amount stated and yielded two 8 x 4 loaves. I think next time I'll try a lighter beer and add dill weed. Thanks for a great recipe!

Mayonnaise Biscuits

Great recipe. I made them as written first and they were good. Then I tried them using whole wheat flour. I added 4 tsp of baking powder and 1/2 tsp of salt to each cup of flour. They were still nice and light. Thanks for the idea.

Amish White Bread

I followed the recipe but for 2 small changes, I used olive oil instead of vegetable, because that is what I had and I decreased the sugar to 1/4 cup. It baked up into nice soft white bread, but it also made the most delicious hot dog and hamburger rolls! This is the way I will use this recipe from now on!

Polish Mistakes

I had no idea what these are called. I've made them for years but omit the ground beef (mostly because I never thought of adding it) #1 son eats them for breakfast if I have frozen leftovers. He just pops them in the microwave until heated thru.

Hungarian Mushroom Soup

This is a very good soup. I used half and half instead of milk and fat free yogurt instead of sour cream because that is what I had. I also omitted the salt. Thanks for a great recipe.

Frozen Greek Yogurt

No-Guilt Zesty Ranch Dip

This is an excellent dip. I used regular mayo, low fat sour cream and fat free greek yogurt. I left out the bacon bits because I didn't have any, but I did all the rest the same as written. I kept sticking stalks of celery in it while it was chilling and it just kept getting better. I suspect the left overs will be even better. Thanks for sharing a really tasty recipe, Tat.

Fennel Soda Bread

This is a wonderful variation on soda bread. I wound up using 1 cup bread flour, 1 cup whole wheat and 1 cup AP because I needed to shop and it still came out just wonderful. I cut the sugar back to 1/2 cup and I think that is just enough. We prefer savory to sweet. I also baked it in a 8" square pan because I don't have a 10" cake pan and kept my fingers crossed that it would not over flow. Thank you for a terrific recipe.

Creamed Salmon on Toast

As written, this is the recipe I ate (and hated) throughout childhood because I didn't like salmon, hated canned peas and the white sauce was always the consistency of library paste. But then I decided to see if I couln't tweak it to something we'd like. So I sauteed a sweet onion and fresh mushrooms in evo, blanched some fresh peas, used canned red salmon instead of pink and seasoned the sauce with thyme and white pepper. I served it over whole wheat pasta and loved it! Since I had no liquid from the peas, I thinned the sauce with a bit of the pasta water. We will be having this agin for sure.

Herbed Greek Roasted Potatoes with Feta Cheese

These are good. I made half the recipe to feed 4 and should have made all 10 servings. I did increase the mint to 1 tablespoon because we do like mint and a teaspoon just seemed puny. This is a keeper! Thanks for sharing.

Zucchini Bites

This is a good basic recipe. I omitted the oil and just sauteed the onions carrots in the bacon drippings. It seemed a little bland when I tasted the batter, so I added some garlic powder and a little oregano to give it a little zing. This lend itself to all sorts of variations. Thanks for sharing.

Creamy Horseradish Garlic Spread

I served this with grilled Roumanian skirt steak this weekend and we all loved it. We have since enjoyed it with crudites and my daughter put it on her salad. The only thing I may do differently the next time I make it (and there will be a next time, it has already been requested for our 4th of July barbecue)is eliminate the minced garlic and increase the garlic powder a bit. I minced it very fine, but you still came across little bursts of garlic as you ate. Great recipe, thanks for sharing!
