Avocado Peanut Butter Brownies (Vegan)

Since the first review I wrote has mysteriously disappeared, I will try again. As written this recipe is just this side of indelible. If the avocado is to replace butter then why add oil? As I originally stated, I melted my peanutbutter chocolate mixture slowly, in a double boiler and reduced the sugar to 1 cup. This will eliminate the graininess. 3/4 cup of sugar is probably enough. All in all, I am surprised this recipe is included in the My Plate collection.

Orange Shallot Marsala Pork Chops

Pork and orange flavors are lovely together. I used orange juice because I had no tangerines and I replaced the orange zest with Simple and Crisp orange slices. This went together so quickly and looks lovely and tastes even better. This would impress even the fussiest guest. Thank you, Cheereeo!

Bourbon Street Rib-Eye Steak

I marinated my steaks for about 10 hours. I will cut the brown sugar back to 1 tbs in the future because it was a bit too sweet for me, but the flavor of the bourbon came through subtly and overall we liked it. We used an electric grill so flare up wasn't a problem but I expect it might be over a flame.

Potato and Spinach Croquettes

I began with leftover garlic mashed potatoes and pan fried, but followed the rest of the recipe. We really enjoyed these with a sweet chili dipping sauce.

Curry Chicken Salad with Grapes

We all enjoyed this. In an effort to save calories, I omitted the butter, just toasted the almonds and curry powder in a dry pan until fragrant. I used garlic powder because I just do not care to bite into garlic in a salad and then I found someone had eaten the grapes I was hoarding to make this so I added a handful of raisins (dried grapes, right?). I also added some green onions that needed to be used. I chilled this for an hour as stated, but next time, when I actually have grapes, I will make the salad either in the morning or night before. This only gets better. Thanks for a great chicken salad.

Scotch Shortbread

Very nice shortbread. Rich and buttery. I do question the instruction to mix the ingredients by hand. The probability, in my opinion, is that would lead to overworking it and making it tough.

Chocolate-y Iced Mocha

This is a keeper! I am not a fan of sweet coffee drinks so I modified it slightly. I used my own cocoa mix which is from the can of cocoa, but with half the sugar they suggest and my own syrup from a recipe here on AR. I reduce the sugar in that also. The almond milk gives it a richness I love. Just what I need - more caffeine! Thanks Linda, I may make this by the gallon, LOL.

Kiwinanaberry Cream Smoothie

I have made this several times now and with my changes, of course I think it is worth 5 stars. Without them maybe 2 stars. As written it almost seemed acidic to me so I exchanged the tangelo for mango and eliminated the berries and sugar. Either almond milk or 1% are my preference and fat free Greek yogurt.

Margarita Marinade

I used a raspberry infused tequila, which makes a very tasty drink so I was disappointed with the marinade. There was nothing wrong with it and it smelled wonderful while cooking. The downside was that even after 24 hours in the marinade there was very little perceptible flavor boost and the honey made it almost guaranteed to char. I doubt I will make it again, but thank you for the chance to try something new.

Grilled Cod

I used a fresh caught cod steak, so I had to adjust the timing. I had no lemon pepper so I used fresh ground and my homemade creole seasoning. This turned out so buttery, moist and delicious. Now I remember why I love cod so much. Thanks for a great addition to our grilling rotation.

Moroccan Spicy Carrot Salad

Garlic Mashed Cauliflower

What a difference those two little tbs of cream cheese make! I have tried other recipes and been disappointed, but this really is good. I cheated a little. Instead of cooking the garlic and adding it, I used Garlic Herb low fat cream cheese. This will be repeated often. Thanks, Andie.

Vanilla Banamango Smoothie

I loved the zip the ginger added to the flavor. If I hadn't put them in myself I doubt I would have known there were carrots in there. I think you get a better fruit taste if a smoothie isn't too cold so I don't add ice, my banana, mango and juice were refrigerated. For me, this is just perfect. Thank you, Ecco Star.

Herb Baked Catfish

The only catfish available here is farm raised, which I don't care for, so I used sea perch. I followed the rest of the recipe. We enjoyed this and I imagine it would be even better with wild caught catfish. Thanks, Jordan!

Braised Corned Beef Brisket

I will not be ordering from the Kosher Deli any longer! My house smelled wonderful all afternoon and we were not disappointed when we sat down to eat. This was the first time I ever cooked corned beef without the cabbage and potatoes. My MIL cooked her briskest this way, but even she never did it with corned beef. Thanks, Julie, this is a keeper!

Creamed Cucumbers

While this worked surprisingly well, I feel like there is a flavor boost missing and I can't quite decide what it may be. I added finely sliced red onion, but it still needs something. This is a good base and I will keep fooling with it. Thanks, Pugmama.

Refrigerator Rolls I

I have never used self rising flour and yeast together before. I used butter in place of shortening. That was my only ingredient change. Rather than rolling out the dough and using a cutter, I simply divided the dough in twelve portions and allowed it to rise again in muffin tins. Mine baked for about 18 minutes at 350. I was surprised how dense, not heavy, but dense, they baked up.

Crab Strata

I can't imagine eating this or breakfast, but it makes a great brunch dish. I used sweet onion, finely diced in place of the green onions because that is what I had on hand. The dish looked a bit bland to me so I sprinkled a bit of sweet paprika over the top before baking. In the future I will add celery seed, cayenne, or possibly Old Bay because it is rather tame although rich. Thanks for a new way to use crabmeat. 5/19/13 Update: After refrigerating leftovers for 24 hrs after baking and finding them far more flavorful than yesterday I believe this should be assembled and refrigerated the day before it is to be used. I do wish I had done so.
