Beet Greens and Green Beans with Tomato and Onion

Reviewed: Jan. 9, 2014
I made two changes one minor - I substituted balsamic vinegar in place of the cider and one fairly major. I used roasted beets instead of chopped tomato. I am sure I will like it with tomato. Thanks PBJGirl!

German Pancake with Buttermilk Sauce

Reviewed: Jan. 8, 2014
I didn't make the sauce so my review is for the pancake only. I cut the recipe in half for two of us. My only change was to reduce the sugar, so I used 1/2 cup sugar, 1/2 cup flour, 1/2 milk, 3 eggs and then I added 1/4 tsp of pure vanilla extract. I served it with a large fruit salad for dinner. Quick to prepare and very tasty. I will make it this way again for dinner and a full recipe for brunch. Thank you, Penny!

Minnesota Wild Rice Soup

Reviewed: Jan. 6, 2014
I went about this a bit differently, cutting back on the broth and eliminating the flour. I added some leftover petite peas to add color. Very nice on a cold night. Thanks, chel!

Pastina and eggs

Reviewed: Jan. 2, 2014
You don't have to be Italian to remember this treat from childhood. My Irish grandmother used to make this for us if we were sick except she used tiny pasta stars. I saw a package of the stars in the market and bought them. Today is very cold and snowy ans I am out of sorts so I made this for my dinner. Suddenly, all is right in my world. Thanks. Allie, I can't tell you how I enjoyed this.

Roasted Chestnuts

Reviewed: Jan. 1, 2014
These didn't work for us. I'm sure the recipe is fine but we weren't thrilled with the taste of chestnuts.

Banana Banana Bread

Reviewed: Dec. 27, 2013
How is it I waited so long to make this recipe? We love banana bread and I have my grandmother's recipe, which is good, but a bit heavy. This recipe has all the flavor but is a bit lighter. I did cut the sugar back to 1/2 cup as my bananas were extremely sweet. It was just right for our tastes. I made 2 pans 7"x 3" and baked them for 40 minutes. I have to think those who had problems with the baking time may have been hitting banana rather than batter when they tested for "done-ness." This recipe is getting added to my food gift file. Thanks!

Roasted Brussels Sprouts with Agave and Spicy Mustard

Reviewed: Dec. 19, 2013
I love roasted Brussels Sprouts but I wasn't sure how the mustard and agave would work with them. It works! I doubt I would buy agave to make this because honey seems to me to be a better choice, agave having no flavor. I used a coarse spicy mustard, which was what I had but I think a smoother texture would be better. This recipe will be used again in my kitchen. Thanks Zoodleman

Grandmother's Famous Cranberry Bread

Reviewed: Dec. 10, 2013
Amazingly I followed the recipe as written except I did not chop my cranberries. I would never have thought to combine raisins and cranberries but they work well together both for taste and appearance. I must assume all those who complained about the bread crumbling did not cut the butter into the flour sugar mixture sufficiently. Both the baking time and temperature worked for me, although I did put a piece of foil over the top at about the halfway point of baking so the top didn't over-brown. All in all, this is a lovely holiday treat that I will include with my other homemade gifts. Thank you Mim Harris!

Thyme Roasted Sweet Potatoes

Reviewed: Dec. 8, 2013
I have always loved savory dishes featuring sweet potatoes. Roasting them brings out the natural sweetness and flavor which is enhanced with the thyme and garlic. I could make a meal of just this fish. Thank you, hhsandy!

Ciabatta

Reviewed: Dec. 7, 2013
I added fresh chopped rosemary and chopped garlic to the top before baking. This came out as good as the insanely expensive loaves the organic bakery sells. My sponge had to wait about 36 hours and it only got better. Great recipe, thank you.

Thanksgiving Leftovers Casserole

Reviewed: Nov. 30, 2013
This is a great recipe. I made it twice. The first time I adapted it to make a festive looking meal for the vegetarian clients of our soup kitchen. I started with Stovetop Cornbread stuffing, prepared as directed then added sautéed celery, onions and grated carrot and pressed it into the baking pan as a crust. I added a layer of chopped Portabella mushrooms which I sautéed with onions and mixed with Italian cheese blend. The top was mashed potatoes, piped into rosettes. This was the first time I felt we presented a vegetarian meal equal to the regular meal. The second time I made it as per the recipe, but using leftover stuffing and a frozen vegetable mix with leftover turkey. The mayo made it moist and enhanced the flavors. The topping was a bit scant because there was only a small amount of left over mashed potatoes. I served it with homemade cranberry relish and no one whined about leftovers.

Surprise Muffins

Reviewed: Nov. 30, 2013
After reading the reviews I decided to forget the jelly and add candied fruit. The wheat germ gave the muffins a gritty texture that I didn't care for and I think there should have been some cinnamon or nutmeg added for flavor. It sounded like a good idea but just didn't do it for us. Thanks for the chance to try something different.

Molasses Spice Smoothie

Reviewed: Nov. 25, 2013
I have made this twice now and I like it better each time. First time I made it exactly as written, but for the ice. Second time I had no bananas so I subbed half an avocado, which also worked quite well, but gave it a muddier appearance. Taste wise there was no great difference. Thanks Linda!

Mom's Pumpkin Rolls

Reviewed: Nov. 25, 2013
I liked this recipe, but found the rolls to be a little too sweet for my taste. Next time I will reduce the sugar to 1/2 cup. Thank you, these will be great with our turkey dinner.

Greek Yogurt Parmesan Chicken

Reviewed: Nov. 22, 2013
I made a few alterations to accommodate what I had to work with. In place of the ranch dressing I used garlic powder, ground sage, ground rosemary and a pinch of thyme and I forgot to add the mustard, but honestly did not miss it. My biggest issue was trying to get the mixture to stay where I put it on the chicken even though I had blotted the surface with a paper towel. The final result was nice crisp, flavorful, moist chicken. Thank you!

Grilled Hanger Steak with a Roasted Shallot Port Demi Sauce and Grilled Garlic Green Beans

Reviewed: Nov. 20, 2013
The recipe for the meal is really good and the sauce is wonderful. I was very careful to cook my steak to only very rare and let it rest. It was still chewier than I prefer but the flavor was good. I think cooking even to medium rare might have been too tough to enjoy.

Sauteed Cabbage

I used green cabbage since that was what I had. I sliced the cabbage in fine ribbons and sliced the onion in similar fashion. I like the flavor boost from the peppers

Gingered Acorn Squash

Reviewed: Nov. 16, 2013
This turned out great! I really liked the ginger nutmeg OJ combination flavor. The squash I had wasn't very meaty so that was a disappointment, but the flavor was good. Thanks for sharing.

Easy Oven-Fried Chicken

Reviewed: Nov. 16, 2013
I didn't see the need for shortening, butter and oil so I settled on butter only, but followed the rest of the recipe as written and was happy with the moist, flavorful chicken. Not quite the same as fried, but a good substitute.
